4 medium russet potatoes, scrubbed and cut lengthwise into quarters
water, Boiling, to cover
1 teaspoon salt
1 teaspoon garlic salt
1 teaspoon pepper, freshly ground
1 teaspoon cumin, ground
1 teaspoon paprika
1/2 teaspoon cayenne pepper
4 teaspoons olive oil

Steps:

  • Par-boil potatoes in boiling water and salt in medium saucepan for 5 minutes. Drain. Return saucepan to still hot burner and shake back and forth to dry potatoes slightly.
  • Combine garlic salt, pepper, cumin, paprika and cayenne pepper.
  • Preheat lightly sprayed electric grill to high. Put potatoes into large bowl. Drizzle with olive oil. Toss well to coat evenly. Sprinkle seasoning mixture over potatoes while tossing, until well distributed. Place potatoes on grill. Cook for about 20 minutes, turning frequently, until potatoes are tender and crispy brown. Serves 4.

While we still use the charcoal grill, the extra space allotted to us on the gas grill has made us really branch out with different sides. I created this one knowing we could put the potatoes directly on the grill and not have to make a foil packet to make it fit!

¼ cup olive oil
1 large clove garlic, peeled and crushed
2 tablespoons chopped fresh rosemary, or more to taste
2 tablespoons chopped fresh thyme, or more to taste
4 Idaho potatoes, each cut into 8 wedges
1 teaspoon garlic salt
freshly ground black pepper to taste

Steps:

  • Combine olive oil, crushed garlic, chopped rosemary, and chopped thyme in a covered container; let stand for 2 hours or longer.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Put potatoes in a large saucepan and pour in enough salted water to cover; bring to a boil; cook over medium-high heat until mostly tender, 8 to 9 minutes. Drain potatoes and transfer to a bowl.
  • Remove garlic from the olive oil mixture and discard. Pour oil over potatoes, sprinkle with garlic salt and black pepper, and toss to coat.
  • Place potatoes skin-side down on the grill over direct heat; reserve remaining oil. Grill for 10 minutes; move potatoes to indirect heat until completely cooked, 5 to 10 minutes. Transfer to a serving bowl and drizzle remaining oil over potatoes.

4 large Russet potatoes, cut into wedges and par-cooked
Canola oil, for brushing
Kosher salt and freshly ground black pepper
1/4 cup mayonnaise
2 tablespoons Dijon mustard
2 tablespoons sherry vinegar
Juice from 2 grilled lemons
1/4 cup extra-virgin olive oil, plus more for garnish
2 tablespoons smoked paprika
Handful flat-leaf parsley leaves, for garnish

Steps:

  • Preheat a charcoal or gas grill to high heat.
  • Brush the potato wedges with oil, sprinkle with salt and pepper and grill until nicely charred and cooked through, 2 to 3 minutes per side.
  • While the potatoes are grilling, whisk together the mayonnaise, mustard, sherry vinegar and grilled lemon juice. Whisk in the olive oil. Season with salt and a generous amount of pepper.
  • Pull the potatoes from the grill to a platter and dust with smoked paprika. Drizzle the sauce over the warm potatoes and scatter the parsley over the top.;

What if you don't have enough time or space for a campfire but are drooling for smoky, gooey, sweet s'mores? Your grill can do the trick in no time. All you need is a flat fold-over grill basket, or even a slim kebob grill basket will work. A few minutes on the grill and you will have a big batch of s'mores to feed a crowd. The graham crackers get a little extra toasty as they are grilled along with the chocolate and marshmallows-something unique to this recipe. Even better, you can assemble the s'mores ahead of time and then grill them when ready to serve, for the ultimate prep-ahead dessert.

8 graham cracker rectangles, broken in half along the perforations (for 16 squares)
One 4.4-ounce milk chocolate bar, broken into 8 pieces
8 large marshmallows, cut in half widthwise

Steps:

  • Prepare a grill for medium indirect heat. For gas grills (with 3 or more burners), turn all the burners to medium heat; after about 15 minutes, turn off one of the middle burners and turn the remaining burners down to medium-low (you want the temperature to be 350 degrees F). For charcoal grills, bank one chimney starter-full of lit and ash-over briquettes to one side of the grill. (Be sure to consult the grill manufacturer's guide for best results.)
  • Open a 12.5-inch-by-8.5-inch flat fold-over grill basket (or two 19.4-by-1.5-inch kabob baskets) and place 8 of the graham cracker squares flat on the surface (dividing them between the kabob baskets if using). Top each graham cracker with 1 of the milk chocolate pieces. Place 2 marshmallow halves side by side on top of the chocolate with the cut-sides facing up (this will help the top graham cracker stay in place.) Place 1 of the remaining 8 graham cracker squares on top of each of the assembled stacks.
  • Carefully close and clasp the grill basket(s) according to the manufacturer's directions, taking care not to crack any of the graham crackers. Place the grill basket onto the indirect section of the grill, cover the grill and cook until the chocolate just begins to melt and the graham crackers and marshmallows are beginning to toast, 1 to 2 minutes. Flip the grill basket(s) and continue to grill with the lid open until the other graham crackers just begin to toast and the marshmallows are melting and toasted, about 1 minute more.
  • Unclasp the grill basket and transfer the s'mores to a serving platter.

1/4 cup olive oil
2 cloves garlic, minced

1/4 teaspoon black pepper
1/8 teaspoon ground red pepper (1/8 to 1/4)
2 cups mesquite wood chips

Steps:

  • Prepare barbecue grill for direct cooking.
  • Preheat oven to 425°F degrees.
  • Cut potatoes in half lengthwise; then cut each half lengthwise into 4 wedges.
  • Place potatoes in large bowl.
  • Add oil and garlic; toss to coat well.
  • Combine salt, paprika, thyme, oregano, black pepper and ground red pepper in small bowl.
  • Sprinkle over potatoes; toss to coat well.
  • Place potato wedges in single layer in shallow roasting pan.
  • (Reserve remaining oil mixture.) Bake 20 minutes.
  • Meanwhile, cover mesquite chips with cold water; soak 20 minutes.
  • Drain mesquite chips; sprinkle over coals.
  • Place potato wedges on their sides on grid.
  • Grill potato wedges, on covered grill, over medium coals 15 to 20 minutes or until potatoes are browned and fork-tender, brushing with reserved oil mixture halfway through grilling time and turning once with tongs.

2 large russet potatoes, baked
4 tablespoons butter, melted
salt and pepper
1 cup shredded cheddar cheese
6 slices bacon, cooked and crumbled
1 cup sour cream
2 tablespoons prepared horseradish
3 tablespoons sliced green onions
1/2 cup chopped tomato
chopped chives, for garnish

Steps:

  • Cut potatoes in half.
  • Preheat grill to medium heat.
  • Scoop out the pulp, leaving a 1/4-inch thick shell for the toppings. Cut the potatoes into quarter wedges, brush all over with butter and season with salt and pepper.
  • Place on grill and cook until crisp, about 10 minutes. During the last few minutes of grilling, remove potatoes and place on a cookie sheet. Top the potatoes with cheese and bacon and place back on top of grill.
  • While potatoes are grilling, combine the sour cream and horseradish in a small bowl and mix well.
