4 10-12 inch flour tortillas ((XL burrito size))
4 tablespoons vegetable oil ((or any flavorless oil))

Steps:

  • Preheat the oven to 350 degrees F. Set 4 oven-safe cereal bowls on a large rimmed baking sheet. Then set a large 12-14 inch skillet on the stovetop over medium heat.
  • Pour 1 tablespoon oil into the skillet. Once hot, place the tortilla in the skillet. Use tongs to swirl the tortilla to coat it in oil, flip it over, and swirl it again. It needs to be coated in oil, on both sides, right away.
  • Pan-fry the tortilla for 30-45 seconds per side, allowing it to puff up with large bubbles. (The bigger the bubbles the better!) Flip and repeat. Make sure the tortilla isn't turning dark. It should be golden-brown.
  • Use tongs to move the tortilla to one of the cereal bowls. Tuck it down into the bottom of the bowl, to create a bowl shape with the tortilla. Take care not to deflate the bubbles.
  • Repeat with the remaining three tortillas. Once all the tortillas are flash-fried and shaped into bowls, bake for 9-10 minutes until very crispy. Cool and fill.

1 lb ground chuck or 1 lb ground turkey
2 garlic cloves, minced
4 ounces green chilies, finely chopped and drained
1 lb whole canned tomatoes, undrained
2 teaspoons chili powder
1 teaspoon salt
1/8 teaspoon pepper
1 -2 head lettuce (iceberg, Boston, leaf, or Romaine)
4 ounces cheddar cheese
1 tomatoes (medium)
1 bunch scallion (with green tops)
7 ounces tortilla chips or 7 ounces corn chips
black olives, sliced
sour cream
scallion, sliced
2 hot red peppers

Steps:

  • In a medium-sized skillet, place ground chuck and minced garlic.
  • Heat over medium-high heat, stirring frequently with a wooden spoon and breaking up large chunks of meat, until meat is browned.
  • Transfer meat and garlic to a colander and drain off and discard fat.
  • Return skillet to heat.
  • Add chopped green chilies, undrained whole peeled tomatoes, chili powder, salt, and pepper to meat and garlic in skillet.
  • Mix well with a wooden spoon and cook over low heat uncovered for about 30 minutes or until most of moisture has evaporated from the meat mixture.
  • While meat mixture is cooking, break apart and wash and dry lettuce, using a lettuce spinner. Tear into bite-sized pieces. You should have about 2 quarts or 8 cups of lettuce greens. Set aside. Refrigerate if not using right away.
  • Shred cheddar cheese and set aside.
  • Cut out and discard core of tomato. Chop tomato coarsely.
  • Wash scallions and trim off and discard root ends.
  • Chop or slice enough scallions to yield about 1 cup.
  • Remove meat mixture from heat and cover to keep warm and set aside.
  • Just before serving, place lettuce in a large chilled bowl and arrange tortilla chips around outer edge.
  • Top lettuce with meat mixture and sprinkle cheese, scallions, chopped tomato, and sliced olives around meat mixture.
  • Top with a dollop of sour cream garnished with scallions and hot red peppers.
  • Toss just before serving.

1 (10 inch) flour tortillas
1 piece aluminum foil (12-inch)
warm water
1/4 teaspoon olive oil

Steps:

  • If using 10-inch tortillas, set 2 empty food cans 3 to 4 inches apart on a 14x17-inch foil lined baking sheet.
  • If using 12 or 13-inch tortillas, set 1 food can on baking sheet.
  • Drape a foil square over the top of each can.
  • Fill a pizza pan (one that's at least 3/4-inch deep) or another appropriately rimmed container with about 1/2 inch of warm water; add 1/4 teaspoon of olive oil.
  • Quickly immerse a tortilla in the water, then lift out and let drain.
  • Drape the damp tortilla over the foil on the empty food can (if you place it slightly off-center the shell with have a dramatic higher flair to one edge).
  • If you have room on the pan for another tortilla, add another 1/4 teaspoon oil to the water, dip a tortilla, and drape it over the other can.
  • Bake the taco salad shells in a preheated 450 degree F oven until they're lightly brown and firm enough to hold their shape, which will take about 4 to 5 minutes.
  • Using pot holders, carefully lift the shells off the cans and place them cup-side-up on the pan; the edges on larger tortillas might need support when the shells are inverted so loosely crumple some foil into 4-inch balls and push them against areas that sag.
  • Return the shells to the oven and bake until they're crisp, about 2 to 3 additional minutes.
  • Let cool on rack.
  • Repeat all steps until you have enough shell bowls for your meal.
  • Enjoy!

Turkey salad with pineapple, almonds and radish roses. Yum.... Very special and a taste treat. This recipe makes a lot so it's perfect for a summer gathering. And much of the work can be done ahead -- another plus! Posted for those with McCall's cooking school nostalgia! By the way, this way of cooking turkey breast, as described in step 1, makes delicious moist meat to use in a variety of recipes.

6 lbs turkey breast
2 (10 3/4 ounce) cans condensed chicken broth, undiluted
2 cups water
2 onions
8 whole cloves
1 stalk celery & leaves, cut up
4 medium carrots, pared
2 teaspoons salt
10 whole black peppercorns
1 bay leaf
1 bunch radish
2 cups mayonnaise
1/2 cup light cream
6 stalks celery
2 (20 ounce) cans pineapple chunks in juice, drained
crisp lettuce or watercress
1/2 cup blanched whole almond
1/4 cup salad oil or 1/4 cup olive oil
1/2 cup lemon juice
1 tablespoon onion juice
2 1/2 tablespoons chopped fresh tarragon (or 2-1/2 teaspoons dried)
3/4 cup chopped scallion
1/4 cup chopped parsley
1 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Wipe turkey with damp paper towels.
  • In an 8-quart kettle, combine broth, water, onions (each stuck with 4 whole cloves), celery, carrots, salt, peppercorns and bay leaf. Bring to a boil and add turkey breast. Bring back to boiling; reduce heat and simmer gently, covered, for about 2-1/2 hours or until turkey is tender. Remove from heat. Let stand, frequently spooning broth over turkey for 1-1/2 hours, or until cool enough to handle. Or you may refrigerate overnight, covered. Lift out turkey. Reserve broth for another use.
  • Remove the skin from the turkey breast. With a sharp knife, remove the breast meat in slices 1/2-inch thick. To make the dressing, in a large bowl combine oil, lemon juice, onion juice, tarragon, scallions, parsley, salt and pepper; stir to blend. Slice celery thinly on the diagonal to measure 4 cups; chill.
  • Cut sliced turkey into 1/2 to 3/4-inch pieces -- you should have about 8 cups. Add to dressing in large bowl. Toss lightly to coat well. Refrigerate, covered, until serving time, at least 1 hour or longer.
  • Make radish roses and refrigerate in ice water to open "petals" -- at least an hour.
  • Toss turkey salad with mayonnaise and light cream; chill. Add drained pineapple and mix well.
  • To serve: Spoon salad on a chilled platter lined with lettuce leaves. Garnish with watercress, radish roses and toasted almonds. (To toast almonds, in shallow pan bake at 350 degrees for 10 minutes or until golden.).

1 cup unsifted unsweetened cocoa
2 cups boiling water
2 3/4 cups sifted all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
1/2 teaspoon baking powder
1 cup butter, softened
2 1/2 cups sugar
4 eggs
1 1/2 teaspoons vanilla
6 ounces semisweet chocolate pieces
1/2 cup light cream
1 cup butter
2 1/2 cups unsifted confectioners' sugar
1 cup heavy cream, chilled
1/4 cup unsifted confectioners' sugar
1 teaspoon vanilla extract

Steps:

  • In medium bowl, combine cocoa with boiling water, mixing with wire whisk until smooth.
  • Cool completely.
  • Sift flour with soda, salt and baking powder.
  • Preheat oven to 350°F.
  • Grease well and lightly flour three 9 by 1 1/2 inch layer-cake pans.
  • In large bowl of electric mixer, at high speed, beat butter, sugar, eggs, and vanilla, scraping bowl occasionally until light-about 5 minutes.
  • At low speed, beat in flour mixture (in fourths), alternately with cocoa mixture (in thirds), beginning and ending with flour mixture. Do not overbeat.
  • Divide evenly into pans;smooth top. Bake 25 to 30 minutes, or until surface springs back when gently pressed with fingertip.
  • Cool in pans 10 minutes.
  • Carefully loosen sides with spatula; 4. Remove from pans; cool on racks.
  • Frosting: In medium saucepan, combine chocolate pieces,cream, butter;stir over medium heat until smooth.
  • Remove from heat.
  • With whisk, blend in 2 1/2 cups confectioners' sugar.
  • In bowl set over ice(I use ice cubes) beat until it holds shape.
  • 18. Filling: whip cream with sugar and vanilla;refrigerate.
  • To assemble cake: On plate place a layer, top side down;spread with half of cream.
  • Place second layer, top side down;spread with rest of cream.
  • Place third layer, top side up. To frost: With spatula, frost sides first,covering whipped cream;use rest of frosting on top, swirling decoratively.
  • Refrigerate at least 1 hour before serving.
  • To cut, use a thin-edged sharp knife;slice with a sawing motion.
  • And forget the swirls.
  • I think it looks gourmet just to spread the frosting.
  • It dries really dark and looks cool.
  • Somethimes I just drag a sharp knife across the top in lines and sometimes I leave it as it is. From McCall's Cooking School.

1 cup matchlike carrot sticks
1/2 cup plus 2 Tbsp. TACO BELL® Thick & Chunky Salsa, divided
2 Tbsp. KRAFT Light Mayo
4 cups tightly packed torn salad greens
1 large tomato, chopped
1/2 cup KRAFT Mexican Style 2% Milk Finely Shredded Four Cheese
1/4 cup chopped fresh cilantro

Steps:

  • Heat oven to 425°F.
  • Crumple 4 large sheets of foil to make 4 (3-inch) balls; place on baking sheet. Place 1 tortilla over each ball; spray with cooking spray. Sprinkle evenly with 1/2 tsp. chili powder. Bake 6 to 8 min. or until tortillas are golden brown. (Tortillas will drape over balls as they bake.)
  • Meanwhile, brown meat with carrots and remaining chili powder in large nonstick skillet on medium-high heat, stirring occasionally. Add 1/2 cup salsa; cook and stir 2 min. or until heated through.
  • Mix mayo and remaining salsa in large bowl. Add salad greens and tomatoes; mix lightly. Spoon into tortilla shells; top with meat mixture, cheese and cilantro.

This tasty salad is made with baked tortilla bowls and Lawry's Taco Seasoning. I think there is a copycat version on this site somewhere for that. You could make that one, if you wish, instead of the store-bought. This was a fun dinner to make and very easy. Serve sour cream and salsa on the side. You can add more vegies or add peppers, if you wish.

4 (10 inch) flour tortillas, room temperature
nonstick cooking spray
kosher salt
1 (1 ounce) envelope taco seasoning (Lawry's)
1 lb ground beef
4 cups lettuce leaves
1 large tomatoes, chopped
1/2 cup sliced green onion, divided
1/2 cup sliced ripe olives, divided
1 cup shredded cheddar cheese (about 4 oz )
sour cream (optional)
salsa (optional)

Steps:

  • Spray one side of each tortilla with no-stick cooking spray. Lightly sprinkle with salt. Place oiled side of tortilla over ovenproof 7x3-inch mixing bowl. Place 6 oz. custard cup upside-down in center of tortilla; gently press custard cup and tortilla into bowl.
  • Bake in a preheated 375 F oven until edges are golden brown (12-15 minutes). Remove to wire rack. Remove custard cup. Invert shell; cool completely. Repeat with remaining tortillas.
  • In 12-inch skillet, brown ground beef over medium-high heat. Stir in Taco Spices & Seasonings and continue preparing according to package directions. (Note: I like to add a couple of Tbsp of salsa to the seasoned meat as I think it's too dry.).
  • TO SERVE:
  • Place 1 1/2 cups lettuce in each shell. Top each with 3/4 cup warm meat mixture; sprinkle with cheese, tomatoes, green onions and olives.
