RED WINE BURGERS
These Red Wine Burgers are a decadent treat for your summer BBQ. Seasoned with a red wine-shallot reduction, topped with melted cheese and served simply with a thick slice of tomato and lettuce. Yum!

Steps:
- Boil wine and shallots in medium saucepan until reduced by half, 20-30 minutes. Add 1 tablespoon butter and brown sugar; whisk until butter melts and sugar dissolves. Remove from heat. Mix remaining 2 tablespoons butter. Set aside.
- Prepare grill for medium-high heat. Mix beef, Worcestershire, salt, pepper and 1/4 cup wine-shallot mixture in bowl. Form meat into four burger patties. Grill burgers until brown on bottom, about 3 minutes. Turn burgers and brush with additional wine-shallot mixture. Continue grilling burgers until cooked to desired doneness, turning and brushing occasionally with wine-shallot mixture, about 4 minutes longer for medium-rare. Top with a slice of cheese and remove from grill.
- Grill the buns, cut sides down, until lightly browned. Top bottom buns with burgers, then tomato slices and lettuce. Cover with top buns and serve immediately.

- Combine first 4 ingredients and divide meat into 4 equal amounts. When forming each patty, nestle a pile of blue cheese crumbles into the center of the meat, and gently form patty around cheese.
- Brush or drizzle burgers with extra-virgin olive oil and grill on indoor electric grill preheated to high for 7 to 8 minutes on each side. On an outdoor grill, cook 6 minutes on each side 6 inches from hot coals or over medium high gas flame with the grill lid closed. For preparation with no additional oil, broil 4 inches from broiler 7 minutes on each side.
- Serve burgers on split rolls with lettuce, tomato, and blue cheese dressing.
BLUE CHEESE BURGERS

- Carefully mix the meats, bread crumbs, steak sauce, eggs, salt, and pepper with the tines of a fork, but do not mash them. Lightly form hamburger patties and press lightly into shape.
- Prepare a charcoal or a stove-top grill.
- Cook the hamburgers for 4 minutes on 1 side, then turn and cook 3 minutes on the other side for medium-rare. Remove to a plate and cover with aluminum foil. Allow the hamburgers to rest for 5 minutes. Meanwhile, grill the buns, cut side down, for 1 minute, until toasted. Place a hamburger and a slice of blue cheese in each bun, plus arugula and tomato, if desired, and serve hot.

- Season the beef with the cayenne, garlic powder and oregano in a medium bowl. Form the beef mixture into 4 patties. Divide each patty, through the center, into 2, and flatten. Place the blue cheese on 1 patty and top with the other patty. Pinch the edges to seal. Grill burgers in a cast-iron pan or on a grill over medium-high heat to desired degree of doneness. Serve on the hamburger buns.

- Heat the oil in a medium saute pan on medium-low heat. Add the onion and cook until soft, stirring occasionally, about 10 minutes. Add the wine, vinegar, honey, raisins and thyme and simmer, stirring occasionally, until the liquid has evaporated, five to seven minutes. Season with salt and pepper. Remove from the heat and let cool to room temperature. The jam can be made two days in advance and stored in an airtight container in the refrigerator. Bring to room temperature before serving. In a small bowl, blend the roquefort with the butter. Scrape the butter onto plastic wrap and roll into a 4-inch cylinder. Refrigerate until firm, about 1 hour. Slice the butter into 4 disks. Gently shape the ground sirloin into 4 thick patties. Using a spoon or melon-baller scoop out a small amount from the center of each burger. Then with your thumb, make a clean, smooth depression in the center of each patty and fill with a disk of Roquefort butter. Return the scooped out meat to the indentation. Then press and fold the meat over to encase the butter completely. Gently pat the burger into a plump rounded patty. Season the burgers with salt and pepper and grill over a medium-hot fire until browned and cooked through, about 6 minutes per side. Brush the cut sides of the rolls with the olive oil and grill until lightly browned, about 10 seconds. Set the burgers on the rolls, top each with the 1/4 of the wine-braised onion jam and arugula. You may also crumble a bit more blue cheese on top if you are so inclined. Serve hot and juicy!

- Shape beef into 8 thin patties. Combine the cream cheese, blue cheese and bacon bits; spoon onto the center of 4 patties. Top with remaining patties and press edges firmly to seal. Steps:
- In a large bowl, mix all ingredients except blue cheese. Make sure salt and pepper are distributed evenly throughout the mixture.
- Divide beef mixture into 4 sections (these will eventually become 4 burgers).
- Take approximately 2/3rds of a single section, form into a burger shape, and use your thumb to form a deep imprint in the middle.
- Fill imprint with 1/4 of the blue cheese.
- Take the remaining 1/3rd of the beef mixture from that section and cover the blue-cheese filled imprint in the burger, flattening around the edges to ensure that the ground beef stays together and the blue cheese does not leak out.
- Repeat and then grill burgers to desired doneness.
- Place grilled burger on bun and top with more crumbled blue cheese if desired.
- Watch out when you bite into the burger - the blue cheese will be hot!
