Recipe video above. Usually, the main reason to make homemade curry paste is because you just can't get the same intense, fresh flavour in a jar. And while that holds true for green curry paste, the other very big advantage is that you can control the spiciness without compromising flavour or the signature green colour.

4 green cayenne pepper chilis (, deseeded and chopped (Note 1))
6 Thai green chilis (, chopped (Note 1))
2 red shallots / eschallots (, chopped)
2 lemongrass stems (, trimmed and finely chopped (about 2.5 - 3 tbsp) (Note 2))
2 tbsp galangal (, grated (Note 3))
5 cloves garlic (, chopped)
2.5 tsp dried shrimp paste ((Belacan) (Note 4))
2 tsp lime zest (, grated)
1 tsp ground coriander
1 tsp ground cumin
1/4 tsp white pepper
1/4 tsp turmeric
2 tbsp chopped coriander/cilantro root and stem ((Note 5))
1/4 cup coriander / cilantro leaves (, loosely packed)
2 - 3 tbsp water (, as needed)

Steps:

  • Combine all ingredients except water in a powerful blender or food processor. I use my Vitamix because it makes the paste smoother.
  • Blend to a fine paste, scraping down the sides as you go. Add the water as required to help it blend (you may not need any as the herbs and chilis have moisture).
  • Use to make Thai Green Curry!
  • Best to use immediately. Otherwise, refrigerate for up to 2 days, or freeze for 1 month.

1 lemongrass stalk, tough outer leaves discarded, finely chopped
1 lime, juiced
1 tsp ground coriander
4-6 green chillies , deseeded if you prefer less heat, chopped
4 garlic cloves , chopped
thumb-sized piece of galangal , peeled and chopped
3 small shallots , peeled and chopped
3 lime leaves, finely shredded
½ small bunch of coriander , finely chopped
1 tsp shrimp paste
3 tbsp vegetable oil

Steps:

  • Tip all the ingredients into a small food processor and blend until smooth. Add another tablespoon of oil, if needed, to combine. Freeze any leftover paste for another time, or make a double or triple batch to freeze in portions.

1 stalk​ lemongrass (bottom 4 inches roughly chopped or 3 tablespoons prepared frozen or bottled lemongrass; available at Asian stores)
2 to 3 jalapeños (roughly chopped; seeds removed for less heat if desired)
1 shallot (roughly chopped, or 1/4 cup chopped red onion)
4 to 5 garlic cloves
1 1/2-inch size piece of galangal (or ginger, peeled and sliced)
1/2 cup packed fresh cilantro
1/2 cup packed fresh basil
1/2 teaspoon ground cumin
1/2 teaspoon ground white pepper
1/2 teaspoon ground coriander
3 tablespoon​ fish sauce
1 teaspoon ​​​ shrimp paste
2 tablespoon lime juice
1 teaspoon brown sugar
3 to 4 tablespoon coconut milk (enough to blend ingredients together)

Steps:

  • Gather the ingredients.
  • Place all ingredients in a food processor, chopper, or high-speed blender. Add just enough coconut milk to allow the ingredients to blend together, adding a little more if needed. Process well to form a smooth and fragrant Thai green curry paste.
  • Taste the curry for salt and spice. If it's too salty, add a squeeze of fresh lime or lemon juice. Add more chile peppers for more heat, and blend again if needed.

This is another from Keo's Thai Cuisine. Green curry paste is the hottest of the Thai curries. The shrimp paste is optional, so it can be served to those allergic to shellfish or kosher. If you use the salt and not the fish sauce, it becomes vegetarian. Do try to find the Thai gingers, called Kha and kra-chai, the greater and lesser gingers, as the usual stuff will not give you the same results. These and the kaffir lime leaves can be found frozen in your Asian market. And if you choose to de-seed the chilies for a milder paste, be sure to wear gloves to handle them. DH did not the first time he made this and the next day, had no feeling in his hands. He figured out what had happened when he touched his eye.

15 -20 fresh small thai green chili peppers
4 stalks fresh lemongrass, coarsely chopped
3 shallots, thinly sliced
1 garlic clove
1 tablespoon coarsely chopped ginger (Thai ginger, kha, greater ginger)
1 tablespoon coarsely chopped ginger (kra-chai, lesser ginger)
5 kaffir lime leaves, chopped
1/2 teaspoon chopped kaffir lime rind (can use regular or key lime rind)
1/2 teaspoon ground coriander
1/2 teaspoon ground caraway seed
1/2-1 tablespoon fish sauce or 1 teaspoon salt
1 tablespoon sugar (we use brown)
1/4 teaspoon shrimp paste (optional)
2 tablespoons oil

Steps:

  • Combine all the ingredients in a food processor and process until smooth. If a mortar and pestle is used, then add oil after all the other ingredients are ground. Refrigerate in a glass container. Paste keeps well for several months.
  • We have also found the paste freezes well, and keep for several years, in vacuum sealed bags. Put the paste into the bag, let it chill a little in the fridge and then seal the bag. When we need it, we pop the bag briefly in the microwave or let it sit on the counter for a few minutes, open the bag, chop out the amount we need and reseal the bag.

2 tablespoons minced lemongrass, bulb or 1 tablespoon lemon, zest of

2 cloves garlic, minced
1 teaspoon fresh shredded gingerroot
lime zest (A few slivers)
1 teaspoon coriander seed
1/2 teaspoon caraway seed
10 peppercorns
1 teaspoon salt

Steps:

  • In a small skillet, roast all the ingredients over medium-high heat until smoking, about 3 minutes.
  • Transfer to a blender or food processor, and process to a thick paste, adding some water if necessary.
  • This paste stays fresh for about a month in a covered container in your refrigerator.

2 lemongrass stalks, tough outer layers removed
8 ounces serrano chiles (12-15), seeds removed
1 large shallot, chopped
4 garlic cloves, peeled
1 (3-inch) piece ginger, peeled, thinly sliced
1 (2-inch) piece turmeric, peeled, chopped, or 1 teaspoon dried turmeric
1 makrut lime leaf, very finely chopped (optional)
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon kosher salt
1 teaspoon sugar

Steps:

  • Finely grate bottom third of lemongrass into a blender or food processor; discard remaining lemongrass (or save for making stock). Add chiles, shallot, garlic, ginger, turmeric, makrut lime leaf (if using), coriander, cumin, salt, and sugar; blend or process until smooth.
  • Do Ahead
  • Curry paste can be made 3 months ahead. Portion into small plastic bags or airtight containers and freeze.

10 -12 hot green chili peppers (small and hot)
1/2 onion, chopped
1 tablespoon garlic, chopped
1/2 inch ginger
2 stalks lemongrass (only the lower part and not the grass like leaves)
2 -3 lemon leaves (if you get kaffir lime leaves I am sure it is better but I make do)
1/2 teaspoon fresh lemon rind
4 tablespoons coriander leaves
3 tablespoons fresh spinach leaves (optional)
2 tablespoons fresh fenugreek leaves (optional)
1 tablespoon mint leaf (optional)
1/2 teaspoon salt
1 tablespoon vinegar
15 black peppercorns
1 tablespoon coriander seed
1 tablespoon cumin seed

Steps:

  • In a tava (wok) roast the coriander and cumin seeds on low heat for about 2 mins till just fragrant.
  • Do not allow to brown.
  • Cool and grind with the rest of the ingredients in a blender.
  • Store refrigerated for a week.
