LEBANESE GREEN SPLIT PEA SOUP

Lebanese Green Split Pea Soup image

Thick, creamy and luscious, this Lebanese green split pea soup is a unique vegetarian and vegan spin on split pea soup, made with traditional Middle Eastern seasonings. Top with za'atar (a blend of dried herbs, sesame, and sumac) for a really special flavor. (Recipe adapted from the Middle Eastern Vegetarian Cookbook by Salma Hage).

Provided by Shannon @ Yup, it's Vegan

Categories     Soup     stew

Time 1h

Number Of Ingredients 13

1 tbsp olive oil
1 and 1/4 cups green split peas
3 medium-sized gold potatoes (peeled)
1 yellow or white onion (diced)
6 cloves garlic (minced)
2 tsp ground cumin
1/2 tsp ground black pepper
1 tsp cayenne pepper ((reduce if sensitive to spice))
3 cups low-sodium vegetable broth
3 stalks celery (diced)
1/4 cup chopped flat-leaf parsley ((optional))
juice of 1 lemon
za'atar ((optional, for serving))

Steps:

  • Add the split peas to a large saucepan, cover with water, bring to a boil, and cook for 15 minutes. Drain and set aside, and rinse out the pot.
  • Meanwhile, add the peeled potatoes to another saucepan, cover with cold water, salt the water heavily, and then bring it to a boil and cook for 7 minutes. Drain and set aside. (I simply pour them into the same strainer I'm already using for my peas).
  • Heat the olive oil in your large saucepan. Add the onion and garlic and saute for 5 minutes, stirring frequently to prevent the garlic from burning. Add the cumin, pepper, and cayenne, and continue to cook, stirring frequently, until the onions are softened and slightly browned.
  • Add the potatoes, split peas, vegetable broth, and celery. Bring to a boil, then reduce to a steady simmer and add the parsley if using. Continue to simmer until the potatoes and split peas are fully cooked. Turn off the heat and use an immersion blender to puree the mixture until smooth. (Alternately, you can blend the soup in batches in a blender or food processor).
  • Return the soup to the heat and add the lemon juice, and salt to taste. If desired, add water to thin out the consistency. Serve hot, topped if desired with a drizzle of olive oil, and a generous sprinkling of za'atar.

CLASSIC SPLIT PEA SOUP

Classic Split Pea Soup image

This is a classic split pea soup for the stovetop or slow cooker and is made with ham, carrots, celery, onion, and dried herbs.

Provided by Diana Rattray

Categories     Entree     Lunch     Side Dish     Dinner     Soup

Time 3h10m

Yield 8

Number Of Ingredients 13

1 pound dry green split peas
2 quarts water (or low- or no-sodium vegetable or chicken broth)
1 meaty ham bone
1 cup onion, chopped
1 large dried bay leaf
1/4 teaspoon garlic powder
1/4 teaspoon dried marjoram, crushed
1/4 teaspoon dried thyme, crushed
Dash pepper
1 cup celery, chopped
1 cup carrot, chopped
1/2 teaspoon salt, or to taste
Garnish: bacon, crumbled, or finely chopped ham

Steps:

  • Gather the ingredients.
  • In a large saucepan or Dutch oven, cover dried peas with 2 quarts of water.
  • Bring the peas to a boil; boil gently for 2 minutes.
  • Set aside to soak for 1 hour.
  • Add ham bone to the peas, along with chopped onion, bay leaf, garlic powder, marjoram, thyme, and pepper, and bring the soup to a boil.
  • Cover, reduce heat, and simmer for 2 hours, stirring occasionally.
  • Remove meat from the ham bone. If desired, put a little finely chopped ham aside for garnish. Dice the meat and return to pea soup with chopped celery and carrot.
  • Simmer the pea soup gently for 45 minutes, stirring occasionally.
  • Taste and add salt, as needed. Remove the bay leaf.
  • If desired, top servings with reserved finely chopped ham or crumbled cooked bacon.
  • Gather the ingredients.
  • When using this method, you can omit the soaking time. Instead, rinse the split peas and reduce the liquid (water or broth) to 1 quart.
  • Combine the ingredients (except salt and garnish) in the slow cooker.
  • Cover and cook on low for 6 to 8 hours, or until the peas are tender. Or cook on high for about 4 to 5 hours. If cooking on high, it might be necessary to add more liquid.
  • Remove the meat from the ham bone and chop.
  • Return the chopped meat to the soup. Taste and season with salt, as needed.
  • Garnish servings with some reserved diced ham or cooked crumbled bacon.

SPLIT PEA SOUP

Split Pea Soup image

This customizable recipe for classic split pea soup allows you to make it vegetarian or not with equally delicious results. Meat eaters can get that classic smoky flavor by adding bacon or ham hock, while vegetarians can reach for the smoked paprika. Half the split peas are added part way through cooking, which adds texture to each cozy, hearty spoonful.

Provided by Ali Slagle

Categories     lunch, weekday, beans, soups and stews, vegetables, appetizer, main course, side dish

Time 2h20m

Yield 4 servings

Number Of Ingredients 11

6 slices bacon or 1 (1-pound) smoked ham hock, or 1 teaspoon smoked paprika
2 tablespoons extra-virgin olive oil, plus more as needed
1 medium onion, diced (about 1 1/2 cups)
2 medium leeks, white and pale green parts rinsed and thinly sliced (about 1 3/4 cups)
4 garlic cloves, minced
Kosher salt and black pepper
2 medium carrots, scrubbed and diced (about 1 1/2 cups)
1 pound dried split green peas
2 fresh thyme sprigs
8 to 12 cups chicken stock or water
Lemon wedges, for serving (optional)

Steps:

  • If using bacon: In a large pot or Dutch oven over medium heat, cook the bacon until crisp, 12 to 13 minutes. Transfer the bacon to a plate lined with a paper towel. Once cool, crumble and set aside for garnish. If using ham hock: In a large pot or Dutch oven over medium-high heat, heat the olive oil, then brown the ham hock until golden, about 6 minutes. If making the soup vegetarian: In a large pot or Dutch oven over medium heat, heat the olive oil.
  • Add the onion, leeks and garlic and season generously with salt and pepper. Cook over medium heat, stirring occasionally, until tender, about 5 to 8 minutes. (If the vegetables seem dry, add a little olive oil.) Stir in the carrots, paprika (if using), half the split peas, thyme and 8 cups stock or water. Bring to a boil, then reduce heat and simmer, partly covered, stirring occasionally, for about 45 minutes until peas are tender.
  • Mash the soup coarsely with a potato masher or give it a few quick blitzes with an immersion blender (watch out for the thyme sprigs). If you'd prefer a smoother soup, blitz until nearly smooth. Add the remaining 1/2 pound split peas and simmer about 1 hour, or until the peas are soft. If at any point the soup looks too thick, add more stock or water; if it looks too thin, remove the lid during the second simmer until it thickens. If using ham hocks, remove any meat from the bone, cut it into small cubes and stir into the soup. Season soup to taste with salt and pepper. Serve with crumbled bacon, if using, and lemon wedges.
