APPLE PIE OATMEAL WITH BRULEED CRUST

Steps:
- For the apples and cranberries: Combine the water, sugar, cinnamon, cranberries, and salt in a small saucepan and bring to a boil over high heat. Cook until the sugar is completely dissolved, about 1 minute.
- Add the apples, reduce the heat to medium and cook, stirring occasionally, until the apples are soft but still retain some of their shape and the mixture has thickened, about 10 minutes. Set aside while you make the oatmeal.
- For the oatmeal: Preheat the broiler. Put the milk in a medium saucepan and bring to a boil over high heat. Stir in the oatmeal, orange zest, and salt and cook until the mixture thickens, about 2 minutes. Cover and let sit for 2 minutes. The oatmeal should be slightly loose, it will continue to thicken under the broiler.
- Divide half of the apple mixture between 2 10-ounce ramekins. Divide half of the oatmeal between the 2 ramekins and spoon on top of the apple mixture. Place the remaining apple mixture on top of the oatmeal then top the apple mixture with the remaining oatmeal. Smooth out the top of the oatmeal and sprinkle 1 tablespoon of the sugar evenly over the top of each.
- Place the ramekins on a baking sheet and place until the broiler. Broil until the sugar is golden brown and bubbly and completely melted, about 2 minutes. Remove from the oven and let rest a few minutes before serving.
OATMEAL PIE
This looks and tastes just like pecan pie, but it's made with oatmeal. My mom by marriage gave this recipe to me over 40 years ago. There's not a family get together without someone bringing one for our family dinners.

- Generously grease the bottom and sides of a 9-inch pie pan with vegan butter or coconut oil. Preheat oven to 375°F.
- Place oats, flour, cinnamon, sugar, and salt together in a food processor or blender. Pulse until the oats resemble a course flour consistency.
- Cut the cold vegan butter into cubes and add that to the food processor with the course oat flour mixture. Pulse in short bursts until the fat is distributed throughout.
- Add the water, one tablespoon at a time, and pulse until the dough is moist. You should be able to pinch it between your fingers and it holds its shape. If not, add another tablespoon of cold water and pulse again. I find 3 tablespoons works best.
- Press the dough into a pie pan, pressing it up against the sides of the pan. Place the pie pan in the fridge for about 10-15 minutes, to allow the crust to chill.
- After the pie has chilled. Preheat the oven to 375°F. Bake the crust for 10-15 minutes, until the edges are golden brown. Remove from the oven and cool completey. Then fill with your favorite pie filling.

OLD-FASHION OATMEAL PIE
This great pie recipe goes back over 100 years. The recipe came from my grandmother's grandmother who was living in Charleston, South Carolina during the 1860's. Family history has it, that during the Civil War, since pecans were in short supply in the South, oatmeal was substituted for the traditional pecan pie and the results were astonishing. Now served at every family gathering since that time.

- Preheat the oven to 350° F. Combine rolled oats, salt, and flour in the bowl of a food processor. Grind the mixture until the oats are broken into small pieces, about 20 seconds. Set aside.
- Cream 8 ounces butter and brown sugar in a stand mixer with a paddle attachment or with an electric beater until light and fluffy, about 4 minutes. Add the dry ingredients and mix on low until blended.
- Spread the mixture in an even layer over a parchment lined sheet tray, stopping 1 inch before the edges. Bake for 10 minutes, rotating halfway through.
- After 10 minutes, remove the pan from the oven. Break up the mixture using a spatula, stirring it up so the golden brown exterior and the lighter interior are mixed. Re-spread the mixture evenly over the sheet tray, and return to the oven for an additional 10 minutes, rotating halfway through, until the top is golden brown.
- Allow the pan to cool. Break up the crust into pieces and place them in the bowl of a food processor and process until homogeneous and mealy. Slowly pour 3 tablespoons of melted butter into the food processor through the top feeder tube as it's running. The mixture will feel slightly damp.
- Pour the mixture into a pie plate and press the crust into shape on the edges and bottom. Chill for 20 minutes before filling.

I just found this recipe in an old band bosters cookbook and placing it here for sharing and later use. The recipe mentions that it is a good substitute for graham cracker crust. It sounds good to me and might be a good alternative for cream pies or maybe even dutch apple or cherry.

- Blend in shortening with pastry cutter of two forks until mixture resembles coarse meal; shortening should be coated with the flour mixture.
- Make a well in the middle of this mixture; add water until moistened.
- Mix with a fork.

- Pull mixture together with your hands until it holds shape.
- Cover and chill 1 hour or overnight.

- MMMMM-------------------REMAINING INGREDIENTS------------------------ 6 lg Tart apples; peeled, up to 8 Cored and cut into -1/8-inch-thick slices (11 cups sliced) 1/2 c Maple or natural cane sugar 3/4 c Apple juice 2 ts Ground cinnamon 2 ts Vanilla extract 1 tb Cornstarch 10 SERVINGS OVO-LACTO To make oatmeal cookies from crust recipe, spray a baking sheet with cooking spray and drop tablespoonfuls of mixture 1 inch apart onto baking sheet. Bake at 350F for 15 minutes. To vary the pie, substitute pears for apples and adda touch of nutmeg. CRUST: Preheat oven to 350F. Spray 9-inch pie pan with cooking spray. In large bowl, mix flour, oats, A cup sugar, cinnamon and baking soda. In medium bowl, mix 1/4 cup of applesauce, egg white and vanilla. Add applesauce mixture to flour mixture and stir until well blended- it may be easier to use your hands. If mixture seems too dry to roll out, stir in up to A cup more applesauce. On lightly floured surface, using lightly floured rolling pin, roll our half of oat mixture to form 12-inch circle. Reserve remaining mixture for top of pie. If necessary, press dough into pan with your fingers. Bake until set, 10 to 13 minutes. Meanwhile, in saucepan, combine apples, sugar, 1/2 cup apple juice, cinnamon and vanilla. Cook over medium heat, stirring occasionally, until apples are tender, 5 to 10 minutes. In cup, mix cornstarch and remaining 1/4cup apple juice. Add to hot apple mixture and cook, stirring constantly, until thickened, about 4 minutes. Remove from heat. Spoon apple mixture into baked crust. On well-floured surface, using floured rolling pin, roll our remaining oat mixture to form 11-inch circle. Pierce with fork. Lightly fold in half, place over filling and unfold. Fold top edge under; crimp edge. Set pie on baking sheet to catch drips. Bake until crust is firm, 15 to 20 minutes. Serve warm or chilled.
