1 1/4 cups whole cranberry sauce
2 tablespoons orange juice
2 tablespoons balsamic vinaigrette
1 pinch sugar
1 (5-ounce) bag spring salad mix (recommended: Fresh Express)
2 tomatoes, diced
1 cucumber, diced
1/2 (5-ounce) bag herbed croutons

Steps:

  • Heat the cranberry and orange juice in a small saucepan, over medium heat until it boils. Remove from heat and let cool.
  • Strain cranberry mixture into a large bowl using a fine mesh strainer. Whisk in vinaigrette and sugar until well combined.
  • Add salad mix and half the dressing into a large bowl and toss with tongs until lettuce is coated. Add tomatoes and cucumber slices and gently toss. Add more dressing if necessary. Transfer to serving platter and top with croutons.

1/3 cup sugar
1/3 cup water
1/2 cup cider vinegar

SALAD:
2 packages (5 ounces each) spring mix salad greens
1 medium tart apple, chopped
2/3 cup dried cranberries
2/3 cup glazed walnuts
2/3 cup crumbled blue cheese

Steps:

  • In a small saucepan, combine the cranberries, sugar and water. Cook over medium heat until berries pop, about 10 minutes., Cool slightly. Place the cranberry mixture, vinegar and mustard in a blender; cover and process until pureed. While processing, gradually add oil in a steady stream. Refrigerate until serving., Just before serving, in a large bowl, combine the salad greens, apple, cranberries and walnuts. Drizzle with 1 cup vinaigrette and toss to coat. Sprinkle with blue cheese. Serve with remaining vinaigrette.

1/2 cup walnuts
3 tablespoons extra-virgin olive oil
1 tablespoon red wine vinegar

1 head butter lettuce, large leaves torn
1 bunch watercress, trimmed and torn
2 tablespoons roughly chopped fresh parsley
2 tablespoons roughly chopped fresh tarragon

Steps:

  • Put the cranberries in a small saucepan; add the honey and 1/3 cup water. Cook over medium heat, stirring occasionally, until the cranberries pop and the liquid thickens, about 8 minutes. Remove from the heat and let cool completely.
  • Toast the walnuts in a small dry skillet over medium heat, about 5 minutes. Transfer to a cutting board and let cool slightly, then roughly chop. Stir the olive oil and vinegar into the cooled cranberries. (Add more honey, 1 teaspoon at a time, if the vinaigrette is too tart.) Season with salt and pepper.

1 1/2 tablespoons honey

3/4 cup unsweetened dried cranberries
1 1/2 lbs medium zucchini
1 1/2 lbs medium yellow squash

Steps:

  • In a medium bowl, combine the vinegar, cranberry juice, honey and salt and white pepper to taste.
  • Slowly add the oil and whisk until the oil is incorporated into the vinaigrette.
  • Chop the cranberries and add them to the vinaigrette.
  • Stir to combine. Set aside.
  • Cut each zucchini and yellow squash in half lengthwise. Drag the tip of a spoon lengthwise along the cut half to remove the seedy core.
  • Slice each half into 1/4-inch-thick half-moon slices. Steam the squash until the slices are just cooked through. The white flesh will start to look opaque and the slices will start to wilt. Be careful not to overcook. Transfer squash to a large bowl.
  • Add the dressing gradually to the squash--just enough to keep the salad moist--and toss to combine. (You probably will not need all the.

1 mixed greens, such as radicchio, chicory, endive, red leaf, and Boston lettuce

Steps:

  • Clean lettuces by swishing them through a large bowl or sink filled with cool water. After you swish the greens, they will rise to the surface; the sand and sediment will fall to the bottom of the bowl or sink. Once the sand and sediment are washed away, lift greens from water and transfer to a salad spinner; spin until dry.
  • Tear lettuces into bite-sized pieces. If you aren't going to use the greens immediately, wrap them in a clean kitchen towel, transfer to a plastic bag, and refrigerate.
  • Next, make the vinaigrette. Combine vinegar, mustard, salt, pepper, and sugar if using, in a small jar; shake to blend. Add oil, and shake again until emulsified.
