This wonderful soup will warm your insides, delight your taste buds, and fill your stomach on a cold winter's night. It is full of dark green kale, potatoes, and cannellini beans.

2 tablespoons olive oil
1 yellow onion, chopped
2 tablespoons chopped garlic
1 bunch kale, stems removed and leaves chopped
8 cups water
6 cubes vegetable bouillon (such as Knorr)
1 (15 ounce) can diced tomatoes
6 white potatoes, peeled and cubed
2 (15 ounce) cans cannellini beans (drained if desired)
1 tablespoon Italian seasoning
2 tablespoons dried parsley
salt and pepper to taste

Steps:

  • Heat the olive oil in a large soup pot; cook the onion and garlic until soft. Stir in the kale and cook until wilted, about 2 minutes. Stir in the water, vegetable bouillon, tomatoes, potatoes, beans, Italian seasoning, and parsley. Simmer soup on medium heat for 25 minutes, or until potatoes are cooked through. Season with salt and pepper to taste.

BROCCOLI AND KALE GREEN SOUP

This super healthy soup combines broccoli and kale with ginger, coriander and turmeric for a nutrient dense and low-fat lunch

Number Of Ingredients 12

500ml stock , made by mixing 1 tbsp bouillon powder and boiling water in a jug
1 tbsp sunflower oil
2 garlic cloves , sliced
thumb-sized piece ginger , sliced
½ tsp ground coriander
3cm/1in piece fresh turmeric root, peeled and grated, or 1/2 tsp ground turmeric
pinch of pink Himalayan salt
200g courgettes , roughly sliced
85g broccoli
100g kale , chopped
1 lime , zested and juiced
small pack parsley , roughly chopped, reserving a few whole leaves to serve

Steps:

  • Put the oil in a deep pan, add the garlic, ginger, coriander, turmeric and salt, fry on a medium heat for 2 mins, then add 3 tbsp water to give a bit more moisture to the spices.
  • Add the courgettes, making sure you mix well to coat the slices in all the spices, and continue cooking for 3 mins. Add 400ml stock and leave to simmer for 3 mins.
  • Add the broccoli, kale and lime juice with the rest of the stock. Leave to cook again for another 3-4 mins until all the vegetables are soft.
  • Take off the heat and add the chopped parsley. Pour everything into a blender and blend on high speed until smooth. It will be a beautiful green with bits of dark speckled through (which is the kale). Garnish with lime zest and parsley.

This recipe is published in Scandinavian Feasts by Beatrice Ojakangas. It was a traditional soup served in Sweden as a symbol of hope and life on Maundy Thursday, when the evil spirits were thought to be active. Note: try it with the eggs sunny side up instead of hard boiled for a change - it's YUM!

1 lb fresh kale (or spinach, sorrel, chard, or mixed greens)
6 green onions
2 cups water
2 tablespoons flour
2 cups chicken broth
1 teaspoon salt
1/8 teaspoon ground ginger
1 pinch white pepper
1/2 cup cream (can be light)
2 hard-boiled eggs, chopped
2 tablespoons fresh chives, chopped

Steps:

  • Combine the greens, onions and water in a large soup pot. Bring to boil and cook 10 minutes.
  • Strain the liquid and set aside. Transfer the vegetables to a food processor or blender. Process until the leaves are chopped, but not pureed, adding flour and some of the strained liquid, as needed, to keep the mixture fluid.
  • Return the mixture to the pot, along with the rest of the strained liquid. Add chicken broth. Heat to boiling and whisk in salt, ginger and pepper. Stir in the cream.
  • Garnish with chopped hard boiled egg and chives. Serve hot.

2 tablespoons olive oil
1 onion, chopped
3 cloves garlic, chopped
1 (16 ounce) package kielbasa (Polish) sausage, diced
3 potatoes, cut into cubes
1 tablespoon salt
1 tablespoon ground black pepper
2 (14.5 ounce) cans chicken broth
1 cup water
1 (15 ounce) can red kidney beans, drained and rinsed
3 carrots, chopped
1 bunch kale, cut into thin ribbons
1 cup small elbow macaroni
6 tablespoons grated Parmesan cheese, or to taste

Steps:

  • Heat olive oil in a stock pot over medium heat. Cook and stir onion and garlic in the hot oil until fragrant, about 1 minute. Add kielbasa; cook and stir until browned, about 5 minutes. Stir potatoes into kielbasa mixture, season with salt and pepper, and continue to cook and until the potatoes begin to brown, about 2 minutes.
  • Pour chicken broth and water into the stock pot; add kidney beans, carrots, and kale. Bring the mixture to a boil, reduce heat to medium-low, and cook at a simmer for 45 minutes.
  • Stir macaroni into the soup; continue cooking until the macaroni is tender yet firm to the bite, about 15 minutes. more. Top each bowl with 1 tablespoon Parmesan cheese to serve.
