Number Of Ingredients 10

3 large ribs celery, peeled top to bottom with a vegetable peeler, removing all fibrous strings
1/2 small red onion, thinly sliced
4 ounces (1 bag or 2 bunches) watercress, stems trimmed
1/4 cup fresh lemon juice
1 teaspoon Dijon mustard
1 teaspoon nonpareil capers (not salt-packed; do not drain)
1/2 cup extra-virgin olive oil
1/2 cup Parmigiano-Reggiano cheese shavings
2 ounces (about 20 slices) thinly sliced cacciatorini or Felino, Genoa, or hard salami, julienned
Sea salt and freshly ground black pepper

Steps:

  • Using a mandoline, shave the celery paper thin.
  • Bring a medium pot of salted water to a boil. Fill a medium bowl with ice water. Blanch the celery for 30 seconds. Drain the celery in a colander and immediately transfer it to the ice water. As soon as the celery is cool, drain and transfer to paper towels to remove any excess water. Dry the bowl. Add the celery, onion, and watercress, and toss well.
  • In a small bowl, combine the lemon juice, mustard, and capers. Using a fork or whisk, stir until the mixture is homogenized. Slowly drizzle in the oil, constantly whisking until it thickens.
  • Pour the vinaigrette over the celery and watercress, and toss well. Add the cheese and salami, season to taste with salt and pepper, and toss again. Divide the salad among 4 cold salad plates, and serve immediately.

SICILIAN-STYLE CITRUS SALAD

Sicilian-Style Citrus Salad image

Winter is the season when many kinds of citrus fruits suddenly appear. For this savory fruit salad, a mixture of navel, blood and Cara Cara oranges and a small grapefruit make a colorful display. It's fine to use just one kind of orange, blood oranges being the classic example. Thinly sliced fennel, celery and red onion add a tasty bit of crunch. The salad is dressed assertively with oil and vinegar, and scattered with olives and flaky sea salt.

Time 30m

Yield 6 servings

Number Of Ingredients 13

3 to 4 tablespoons olive oil
2 tablespoons sherry vinegar or red wine vinegar
Salt and pepper
2 navel oranges
4 blood oranges
2 Cara Cara oranges
1 small grapefruit
1 small red onion, very thinly sliced
1 small fennel bulb, very thinly sliced, enough to make 1 cup
2 or 3 tender inside celery stalks, thinly sliced at an angle
Handful of olives, black oil cured type or green Castelvetrano type, pitted
Winter salad leaves, such as radicchio or escarole, optional
Large pinch of flaky sea salt

Steps:

  • Make the vinaigrette: Whisk together olive oil and vinegar in a small bowl. Season with salt and pepper and set aside. It should be tart but not over-vinegary. Taste and add a little more olive oil if necessary.
  • To peel the citrus fruit, use a small serrated knife. First, cut off a thin slice of peel from the top and bottom of the orange, so it can sit flat and securely on the cutting board. Use a sawing motion to take off the peel, cutting from top to bottom, following the curve of the fruit. Remove only the peel and white pith, not the flesh of the orange. It should now be perfectly spherical and naked. Peel remaining oranges and grapefruit in this fashion.
  • Carefully slice peeled citrus crosswise. Arrange slices on a large serving platter in a random pattern, letting them overlap a bit here and there. Scatter onion, fennel and celery over top. Dot the surface with olives. Surround with salad leaves, if using.
  • Whisk vinaigrette, and spoon evenly over the salad. Sprinkle lightly with flaky salt and serve.

GRAPEFRUIT AND CELERY ROOT SALAD WITH WATERCRESS

Grapefruit and Celery Root Salad with Watercress image

Pretty pink grapefruits add zing and color to salads. Supreming citrus fruits (see the pictures on page 97) gives you seed- and rind-free sections that are ready to eat with no fuss, and the process releases a considerable amount of juice, which you'll use as the base of the dressing. Once you have peeled the celery root, soak it in water with a little bit of lemon juice to keep it from turning brown.

Yield serves 2 to 4

Number Of Ingredients 9

1 ripe grapefruit, supremed (see page 97)
1 scallion, white part only, minced
3 tablespoons olive oil
1 tablespoon honey
1 tablespoon Dijon mustard
Salt and freshly ground black pepper
1/2 medium-sized celery root, peeled
1 bunch watercress, coarsely chopped
Small chunk of Grana Padano or Pecorino Romano cheese

Steps:

  • Squeeze the juice from the grapefruit membrane into the large bowl. Add the scallion, olive oil, honey, and mustard and whisk together. Season with salt and set aside.
  • Cut the celery root into matchsticks and add it to the dressing. Toss to coat thoroughly, and let marinate for 1 hour.
  • To serve, put the watercress in a large bowl. Drain the marinated celery root, reserving the dressing, and add it to the watercress. Add a few tablespoons of the dressing and toss. Season with salt and pepper. Divide the salad among the plates, topping each one with the grapefruit sections. Using a vegetable peeler, shave several thin pieces of Grana Padano over each salad.
