Switching up a few standard ingredients and letting the brownies cool completely before cutting will result in the chewiest texture.

Nonstick cooking spray
0.75 cup unsweetened cocoa powder
0.5 cup all-purpose flour, spooned and leveled
0.25 teaspoon kosher salt
0.25 cup (4 tablespoons) unsalted butter, cut into pieces
0.75 cup granulated sugar
0.5 cup packed light brown sugar
0.25 cup canola oil
1 teaspoon pure vanilla extract
2 large eggs
1 large egg yolk
1 cup semi-sweet chocolate chips or chopped chocolate

Steps:

  • Heat oven to 350°F. Coat an 8-inch square baking pan with nonstick spray. Line the pan with 2 criss-crossed pieces of parchment paper, leaving an overhang on all sides; coat the parchment with nonstick spray.
  • In a medium bowl, whisk together the cocoa powder, flour, and salt.
  • Melt the butter in a medium saucepan over medium-low heat (or in the microwave). Remove from heat and mix in the granulated sugar, brown sugar, oil, and vanilla. One at a time, mix in the eggs and egg yolk; add cocoa powder mixture and stir until just combined. Fold in the chocolate chips.
  • Spread the batter in the prepared pan and bake until a toothpick inserted in the edges of the brownies comes out clean, 30 to 34 minutes. Cool completely in the pan.
  • Holding both sides of the paper overhang, lift the brownies out of the pan, transfer to a cutting board, and cut into 16 squares. Store the brownies in an airtight container at room temperature for up to 5 days.

3/4 cup chopped walnuts or 3/4 cup chocolate chips
frosting, of you choice

Steps:

  • Set oven to 375 degrees (second-lowest rack).
  • Grease an 11x7 or a 13x9-inch baking pan (the brownies baked in a 13x9 pan will not be as high).
  • In a large bowl using an electric mixer beat all ingredients except walnuts or chocolate chips until smooth (the batter will be thick).
  • Add in walnuts of chocolate chips mix to combine.
  • Spread into the prepared baking dish (the batter will be very thick so have patience!).
  • Bake for about 25-30 minutes (do not overbake).
  • Cool completely before frosting.

Steps:

  • Preheat oven to 350 degrees. Line an 8-inch square baking pan with parchment paper, leaving a slight overhang on all sides. Melt butter and chocolate in a double boiler or a heatproof bowl set over a pot of simmering water, stirring until smooth. Remove from heat, and whisk in sugar. Whisk in eggs, one at a time, until combined. Whisk in cocoa and salt. Fold in flour and baking powder until combined.
  • Pour batter into pan. Bake until set and a toothpick inserted into the center comes out with moist crumbs, about 30 minutes. Let cool in pan on a wire rack about 15 minutes. Lift brownies from pan using parchment. Remove parchment, and transfer to a wire rack. Let cool completely. Cut into 9 squares.
