Here's what you need: large sweet potato or yam, olive oil, salt, pepper, dried thyme

1 large sweet potato or yam
4 tablespoons olive oil
½ teaspoon salt
½ teaspoon pepper
1 teaspoon dried thyme

Steps:

  • Preheat the oven to 400˚F (200˚C). Line a baking sheet with parchment paper.
  • Cut the sweet potato into ⅛-inch to ¼-inch (3- to 6-mm) slices. In a medium bowl, toss the sweet potato slices with olive oil until fully coated. Add the seasonings and toss to coat. Arrange the slices on a baking sheet without overlapping the potatoes.
  • Bake for 25 - 35 minutes, flipping halfway, until golden brown. Let the slices cool to room temperature.
  • Enjoy!

1.5kg (about 7) sweet potatoes
3 tbsp vegetable oil
2 tsp sweet smoked paprika
2 tbsp fine cornmeal or polenta

Steps:

  • Heat oven to 200C/180C fan/gas 6. Cut 1.5kg (about 7) sweet potatoes into chunky chips and put in a large bowl. Drizzle with 3 tbsp vegetable oil, then sprinkle with 2 tsp sweet smoked paprika, 2 tbsp fine cornmeal or polenta and plenty of seasoning.
  • Toss until well coated, then divide the chips between 2 large baking trays lined with baking parchment. Cook for 35 mins until golden and crunchy, tossing halfway through cooking.

2 tablespoons water
1/3 cup parmesan cheese, grated
3 tablespoons fresh parsley, minced
1/2 teaspoon garlic powder
cooking spray

Steps:

  • Slice potatoes crosswise into 1/8 inch slices, and set aside.
  • Combine the egg white and water, stirring well and set aside.
  • Combine cheese, parsley and garlic.
  • Dip potato slices into the egg mixture and dredge in cheese mixture to coat.
  • Arrange potatoes on baking sheets that have been sprayed with cooking oil.
  • Broil 4-5 inches from the heat about 4 minutes per side until crisp.

1 ½ teaspoons kosher salt

  • Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
  • Peel sweet potato with a vegetable peeler and discard skin. Continue using peeler to create thin strips of sweet potato; transfer to a large bowl. Drizzle strips with olive oil; toss to coat.
