1 pound(s) Uncooked boneless skinless chicken breast(s)
4 medium Uncooked scallion(s) chopped
3 tbsp(s) Fresh lemon juice (juice of 1 lemon)
0.125 tsp(s) Curry powder pinch
3 tbsp(s) Diet Italian salad dressing (2 calories per tbs) fat-free
0.5 medium Avocado peeled and diced
3 small Fresh tomato(es) plum, diced
7 large Olive(s) jumbo pitted,chopped

Steps:

  • Preheat oven to 400ºF. Coat a baking dish with cooking spray.
  • Combine seasoning and flour. Lightly coat chicken with cooking spray, then coat each breast with flour mixture. Place chicken in prepared dish and bake until cooked through, about 20 minutes.
  • In a bowl, combine scallions, lemon juice, curry powder, dressing, avocado, tomatoes and olives.
  • Divide chicken breasts between four plates and top with avocado salsa.

1/3 cup low-fat buttermilk, plus
2 tablespoons low-fat buttermilk (1% milkfat)
18 ounces skinless chicken pieces
1 1/2 ounces corn flake crumbs
2 teaspoons sesame seeds

Steps:

  • Preheat oven to 350°F.
  • Pour buttermilk into shallow dish. Add chicken and turn to coat.
  • Process cornflake crumbs in blender or food processor.
  • On paper plate, combine cornflake crumbs and sesame seeds. Dredge chicken in crumb-seed mixture.
  • Arrange chicken on nonstick baking sheet and bake until chicken is brown and crispy, about 40 minutes.
  • 6 Points per serving.

250g baby new potatoes, thinly sliced
1 large courgette, diagonally sliced
1 red onion, cut into wedges
1 yellow pepper, seeded and cut into chunks
6 firm plum tomatoes, halved
12 black olives, pitted
2 skinless boneless chicken breast fillets, about 150g/5oz each
3 tbsp olive oil
1 rounded tbsp green pesto

Steps:

  • Preheat the oven to 200C/ Gas 6/fan oven 180C. Spread the potatoes, courgette, onion, pepper and tomatoes in a shallow roasting tin and scatter over the olives. Season with salt and coarsely ground black pepper.
  • Slash the flesh of each chicken breast 3-4 times using a sharp knife, then lay the chicken on top of the vegetables.
  • Mix the olive oil and pesto together until well blended and spoon evenly over the chicken. Cover the tin with foil and cook for 30 minutes.
  • Remove the foil from the tin. Return to the oven and cook for a further 10 minutes until the vegetables are juicy and look tempting to eat and the chicken is cooked through (the juices should run clear when pierced with a skewer).

1 teaspoon dried oregano
1 teaspoon olive oil
1 garlic clove, minced
1/2 teaspoon salt
1 (3 1/2 lb) roasting chickens
1 lemon, quartered
1 1/2 lbs large red potatoes, cut into wedges
8 kalamata olives, pitted
fresh thyme sprig, to garnish

Steps:

  • Preheat oven to 400*F.
  • Spray roasting rack with nonstick spray.
  • Spray nonstick baking sheet with nonstick spray.
  • Combine chopped thyme, oregano, oil, garlic, and salt in small bowl.
  • Gently loosen skin from breast of chicken.
  • Spread the herbs evenly under the skin.
  • Place lemon inside cavity.
  • Tuck wings begind chicken and tie legs together.
  • Place chicken, breast side up, on rack.
  • PLace potatoes and olives on baking sheet.
  • Roast chicken until thigh registers 180*F, about 1 hr and 10 minute.
  • During last 45 min, place potatoes and olives in oven.
  • Stir occasionally, until potatoes are tender and browned.
  • Let chicken stand 10 minute.
  • Discard lemon and skin, then carve.
  • Garnish with thyme sprigs.
