2 tablespoons butter
4 shallots, peeled and sliced
4 mushrooms, thinly sliced
3/4 teaspoon sea salt
1/2 teaspoon freshly ground black pepper
1 1/4 cups dry white wine
1 1/4 cups clam juice or fish stock
1 cup heavy cream
Tabasco pepper sauce
Squeeze of fresh lemon
Olive oil for brushing
1 (2pound) fillet of salmon
1/2 cup brunoise of cucumber (small dice)
1/2 cup brunoise of yellow summer squash (small dice)
1/2 cup brunoise of tomato (small dice)
1 small bunch chives, thinly sliced at a diagonal
1 cup chervil leaves

Steps:

  • Prepare White Wine Sauce: Melt the butter in a saucepan and add the shallots, mushrooms, salt and pepper and cook until soft, 3 to 4 minutes. Increase heat to high, add the wine and reduce by half. Add the clam juice and again reduce by half. Strain sauce into a clean saucepan and add the cream. Bring to a boil and reduce slightly until sauce begins to thicken. Adjust seasoning with salt, pepper, Tabasco pepper sauce and lemon if needed.
  • Preheat the broiler as hot as possible.
  • Brush 4 large dinner plates lightly with olive oil. Slice the salmon in very thin escalopes and cover each plate completely with the fish.
  • Bring 1 1/2 cups of the White Wine Sauce to a boil and add the cucumber, squash, tomato, and chives. Return to a boil and spoon hot sauce over each plate, covering the salmon completely. Place the plates directly under the broiler and cook 2 to 4 minutes or until sauce begins to bubble and fish is just barely cooked. Serve immediately with chervil sprinkled generously over each dish.

150 g salmon (escalope)
10 g canned chanterelles
100 ml fish stock
50 ml Noilly Prat (vermouth)
25 g broad beans (blanched)
25 g peas (blanched)
50 g butter
25 g shallots, chopped
lemon juice
25 g sea salt

Steps:

  • Add 25g of Butter to a small sauti pan.
  • Add Chanterelles and shallots, cover with a lid and sweat for a few minutes.
  • Make a space for the salmon in the pan, add wine and fish stock.
  • Poach for 4-5 minutes, take out fish and keep warm.
  • Reduce cooking liquid by two thirds, take out mushrooms.
  • Cut butter into small cubes and whisk in to make sauce. Add lemon juice abd peas.
  • Return mushrooms, add broad beans and peas, check seasoning.
  • Place salmon on plate with sauce to the side I found this recipe on a site among others.

Received in email from gourmet_recipes_from_around_the_world. The poster notes this is a popular Irish recipe to make use of the fall Chantrelles that abound there. Thank you Irish Irene78!

1 1/2 lbs chanterelle mushrooms
1 1/2 cups white wine vinegar
3/4 cup dry white wine
2 tablespoons salt
2 tablespoons coriander seeds
2 sprigs rosemary
3 garlic cloves, peeled

Steps:

  • Clean and trim chanterelles. Place in a pan with vinegar, wine, salt, coriander seeds, rosemary, and garlic.
  • Simmer for 5 minutes. Drain liquid. Place chanterelles, herbs, and spices in a sterilized jar.
  • Add olive oil to cover and marinate, refrigerated, for at least 2, but no more than 4, weeks.

Whole Grilled Salmon with Chanterelles image

This recipe is going to instruct you to remove the backbone of the fish from inside the cavity-no small task but well worth it. You can also just tie two whole fillets of salmon together (skin side facing out) if you'd like.

Chanterelles:
4 tablespoons unsalted butter
2 tablespoons grapeseed or vegetable oil
1 pound chanterelle mushrooms or other wild mushrooms, halved if large
2 sprigs thyme
2 garlic cloves, smashed
Kosher salt, freshly ground pepper
Salmon and assembly:
1 (4-5-pound) whole salmon, preferably sockeye or coho, cleaned, scales removed
Kosher salt, freshly ground pepper
1 lemon, thinly sliced
4 sprigs dill
4 sprigs thyme
2 sprigs tarragon
3 tablespoons olive oil

Steps:

  • Chanterelles:
  • Heat a large skillet, preferably cast iron, over medium-high. Add butter and oil and swirl pan until butter is melted. Add mushrooms, thyme, and garlic and season with salt and pepper. Cook, tossing often, until mushrooms are golden brown and tender, 5-8 minutes; set aside.
  • Salmon and assembly:
  • Prepare a grill for medium-low heat. Using a sharp knife, make a slit along belly of salmon, running from rib cage to tail. Turn salmon on its back and cut along both sides of backbone without piercing through skin on other side. Carefully remove backbone without tearing skin, then remove pin bones with small needle-nose pliers or tweezers. Season inside of fish with salt and pepper and stuff lemon slices, dill, thyme, and tarragon inside cavity. Tie wet kitchen twine around fish in several places to secure. Place on a rimmed baking sheet; rub skin all over with oil.
  • Carefully place fish on grill grates and grill, uncovered, until flesh on bottom side is mostly opaque but still slightly translucent in the center, 12-18 minutes. Carefully turn fish and cook on the other side to the same doneness, 8-10 minutes. Transfer fish to a clean rimmed baking sheet and let rest at least 10 minutes.
  • Place skillet with chanterelles directly on edge of grill to reheat while you portion the fish. Remove strings and peel back skin from salmon; discard. Break flesh of top fillet into large pieces and transfer to a platter. Discard aromatics and remove skin from bottom fillet, break up, and transfer to platter. Season with more salt and pepper and spoon warm chanterelles over.

4 tablespoons clarified butter (see note at bottom)
4 pork medallions (1 inch thick)
4 shallots, finely chopped
1 cup mushroom, sliced
1 cup whipping cream
1 1/2 tablespoons cognac
1 1/2 tablespoons horseradish
4 tablespoons parsley
salt and pepper

Steps:

  • To clarify butter, heat until almost boiling.
  • Remove from heat and allow to cool slightly; skim top.
  • Heat clarified butter over med. heat.
  • Add pork and saute until done, which takes about 8 mins.on each side.
  • Remove medallions and add shallots.
  • Cook until done.
  • Add remaining ingredients and adjust seasoning.
  • Heat thoroughly and return pork to pan.
  • Heat and serve.

  • Cut the salmon fillet by slicing through the fillet, not down, to make two scallops. Carefully check for and remove all bones.
  • Place the salmon between wax paper and gently flatten the salmon with a mallet or rolling pin to make more uniform in thickness. Salt lightly.
  • Melt 2 tablespoons of butter in a sauté pan. Add the shallots and mushrooms. Saute about a minute or two to soften the onions and mushrooms. Do not brown.
