Add the Marsala wine and bring to a boil, scraping to remove any browned bits from the bottom of the pan. when the wine has reduced by half add the chicken stock and cook for 3 minute or until sauce has thickened.

EMERIL'S ESSENCE CREOLE SEASONING (MAKE YOUR OWN)
I decided to post this seasoning mix as I'll refer to it many times and how much to use in different dishes. It's pretty much a staple and I do thank Emeril for putting this out there so those of us who can't buy local can make our own Thank you Emeril Lagasse! Bon Appetite!

Steps:
- 1. Recipe from New New Orleans Cooking, by Emeril Lagasse and Jessie Tirsch, published by William and Morrow, 1993. Read more at: http://www.foodnetwork.com/recipes/emeril-lagasse/emerils-essence-creole-seasoning-recipe2.html?oc=linkback
- 2. Get all of your individual spices measured out in a bowl for mixing. As this recipe as written it's a tad hot, use less cayenne to vary the heat. I'd suggest using about 1/2 of suggested or even just one teaspoon. Cayenne is an integral part of Cajun/Creole cooking and doesn't just add heat. Cayenne has a flavor all it's own, that does add a level that no other spice has. So at least use some.
- 3. Combine all ingredients thoroughly. Store in an airtight container for future use. You can use old spice containers, Ziploc bags, Tupperware and Glad make small plastic screw on lids etc.
- 4. Of course you can purchase it either at your local grocery store, if they don't have it you can always buy online. I use Cajun Grocer for all of my seafood and Louisiana products. Great prices, fast shipping and there isn't anything they don't carry. Some items may be seasonal. http://www.cajungrocer.com/

EMERIL'S FRIED CHICKEN CREOLE STYLE WITH GRAVY
The secret behind this delicious Emeril Lagasse fried chicken recipe is the homemade "essence" which is what Emeril calls his unique Creole seasoning mix. This Creole flavoring gives the chicken an amazing flavor and you can use this herb and spice mixture in other recipes. The chicken is coated in flour and egg and seasoned with the Creole mixture. It is then pan fried to perfection.

Steps:
- First make the Creole seasoning.
- Mix all the Creole seasoning ingredients together and store the mixture in an airtight container.
- You will get about â..." cup and you won't need it all for this fried chicken recipe.
- Cut the chicken into 8 pieces. Use the salt and cayenne pepper to season the chicken pieces.
- Whisk 2 tablespoons of the milk with the eggs and add a pinch of Creole seasoning. Add another pinch of the seasoning to 3 cups of the flour.
- Dredge the chicken in the flour, then in the egg, ensuring the chicken pieces are completely covered. Let any excess drip off. Dip the chicken pieces again in the flour.
- Boil the potatoes in salted water until they are tender, then mash in the butter and some cream or milk too if you prefer a creamier texture. Keep the mashed potatoes warm.
- Heat the oil in a skillet. Place half the chicken pieces skin side down in the hot oil and fry for 6 minutes.
- Flip the chicken pieces over and cook for 6 more minutes or until the chicken is cooked right through and golden brown.
- Drain the chicken on a paper lined plate and sprinkle more Creole seasoning over it.
- Fry the other half of the chicken pieces. Pour all the oil except ½ cup out of the skillet.
- Whisk in the rest of the flour and let the mixture cook for a few minutes, scraping the stuck-on bits of chicken off the skillet.
- Whisk in the rest of the milk and bring the liquid to a boil.
- Turn it down to a simmer and season with salt and black pepper.
- Cook this gravy for 6 minutes.
- You can add some water if it goes too thick.
- Serve the mashed potatoes and fried chicken with the gravy over the top.

EMERIL'S I LOVE GAAAAAHLIC GARLIC BREAD SPREAD
Emeril made this garlic bread on an episode about preparing foods kids like to eat. I made this and it definitely went over well with my family. I served this with Emeril's lasagna for a nice Italian meal with "kick." On the episode, he used his Creole Essence, but you can use any Cajun or Creole seasoning you prefer. You can make at least 2 loaves of garlic bread with the spread, depending upon how much you like to spread per loaf.

Steps:

- Line a large baking sheet with aluminum foil.
- Split the French bread in half lengthwise. Lay the bread, crust side down, on the lined baking sheet.
- Place the butter in a medium bowl.
- Add the remaining ingredients, and stir together until blended.
- Spread the some of the butter mixture evenly onto the bread, reserve the rest for more garlic bread (keeps at least 1 week in fridge, bring to room temp before using and stir well).
- Garnish with some paprika and chopped parsley if desired for a bit more color.
- Bake until golden brown and bubbly, about 15 to 18 minutes, checking early so it doesn't burn.
- Remove from the oven.
- Carefully slice diagonally into 7 slices per half and serve immediately.
