Steps:
- Drain peaches, pouring syrup into a skillet. Place skillet over high heat. Cook until syrup is caramelized (thick and light golden brown), about 10 minutes, stirring gently toward end of cooking so caramel does not burn around edges.
- Add peaches to caramel. Stir in cream. Bring to a boil, stirring occasionally. Boil 1 to 2 minutes. Transfer to bowl, and allow to cool.
- Stir in Cognac and lemon juice. If mixture is too thick, add 1 to 2 tablespoons water. Cover, and refrigerate until serving.
- To serve, toast brioche slices, and place one on each of four dessert plates. Arrange 2 peach halves on top of each slice, and top with a spoonful or two of sauce. Sprinkle with pistachios, and serve.

CARAMELIZED PEACHES OR NECTARINES
My neighbors peach tree is overflowing in my backyard and dripping with large peaches. I'm on a hunt to get recipes to use them before my dogs eat them all! This can be served over ice-cream over pancakes or crepes and is from Epicurious. (If using Peaches, you must skin them first)

Steps:
- Set a strainer over a bowl and cut the nectarines into the strainer, so their juice collects in the bowl.
- Heat the butter in a non-stick skillet over medium heat.
- When it is hot but not smoking, add the nectarines and sauté them until they sizzle and their juices reduce and begin to thicken, 2 to 3 minutes.
- Sprinkle the sugar over them and sauté until the juices further thicken and the sugar caramelizes slightly, about 1 minute. You may want to increase the heat under the pan to medium-high.
- Add the lemon juice and sauté until the juices thicken, then add any nectarine juice that collected in the bowl, and shake the pan so that all is well blended.
- Let the nectarines cook, shaking the pan occasionally, until the juices are very thick, which will take a minute or so. The total cooking time will be about 6 minutes.
- Transfer the nectarines to 4 warmed dessert plates, or to a warmed serving dish, let sit for about 4 minutes so they are not blistering hot when served.

CARAMELIZED SKILLET PEACHES
It's time to take skillet-fried peaches and turn these caramelized peaches served with ice cream into a new unmatched experience. They also make the perfect partnership with coffee and whipped cream. But, of course, they are good on their own too.

Steps:
- Wash and dry peaches. Cut them in half, remove the pit, and slice peach halves into 1/2-inch/about 1.5 cm thick wedges. Melt butter in a large skillet over medium-high heat. Add peach slices in a single layer, honey, and rosemary. Cook to caramelize, occasionally stirring, for about 7 to 9 minutes.
- Let buttery peaches cool down before eating so as not to burn your mouth. Then, serve warm peaches in a frying pan or on a plate, with their caramel sauce, aside with vanilla ice cream.

CARAMELIZED PEACH TATIN
This is just a tad different from any listed here. It came from "Food and Wine", Jonathan Benno. Store-bought puff pastry and an uncomplicated caramel make this "sublime and surprisingly fast" dessert. It is mindful of homey cobblers but with refinement of classic French apple tarte Tatin. Recipe calls for :freestone" peaches, Zaar will not accept.

- Preheat the oven to 350°F. Add the bacon to a 12” cast-iron skillet over low heat. Render the bacon for about 15 minutes or so until completely crisp, stirring often. Meanwhile, bring the pork chops to room temperature. Add the flour and salt to a shallow bowl. Crack the eggs into another bowl and beat well.
- Use a slotted spoon to transfer the bacon to a plate. Add 1 tablespoon of butter to the skillet and let melt. Dredge each pork chop in the flour. Shake off any excess and dredge through the eggs. Let any excess egg drip off and dredge through the flour again. Add the pork to the hot butter over medium heat. Cook the pork for about 2-3 minutes per side, or until golden brown. Transfer the pork chops to a sheet pan.
- Bake the pork for about 6-8 minutes, or until just fully cooked through. Meanwhile, add 3 more tablespoons of butter to the skillet, along with the shallot. Saute until softened. Add the corn kernels and cook for a few more minutes until caramelized. Add the peaches and chives. Cook for another minute or so.

- Heat a 10- to 12-inch ovenproof skillet over medium heat; add 1 tablespoon of the butter. Add the sliced peaches, and sprinkle with brown sugar. Cook 3 minutes; stir peaches, and cook another 2 to 3 minutes or until caramelized and soft. Remove from the heat; add 1 tablespoon of the vanilla. Toss well. Spoon out about 2 tablespoons of the sauce for serving (you do not have to do this, it just makes for nice presentation.)
- In a large mixing bowl or bowl of a stand mixer, add the oatmeal, white whole wheat flour, brown sugar, baking soda, salt, melted coconut oil, eggs and 2 teaspoons vanilla. Beat until combined and the dough holds together (the dough will seem oily, this is good). Mix in the almonds and about 1 cup of the white chocolate.
