CHEESY MUSHROOM STUFFING

- Preheat the oven to 350 degrees F. Melt 2 tablespoons butter in a large nonstick skillet over medium-high heat. Add the mushrooms and cook, stirring occasionally, until tender and lightly browned, about 6 minutes. Push the mushrooms to one side of the skillet and add the remaining 2 tablespoons butter, then add the scallion whites, shallot, thyme, 1 teaspoon salt and a few grinds of pepper. Cook, stirring, until the shallot is softened, about 3 minutes. Remove the skillet from the heat and carefully add the brandy. Return to the heat and cook until the pan is dry, about 30 seconds. Let cool slightly.
- Whisk the eggs, heavy cream, chicken broth, garlic, 1 teaspoon salt and a few grinds of pepper in a large bowl. Stir in the bread cubes, mushroom mixture, 1 cup each fontina and cheddar, the scallion greens and parsley. Let sit 30 minutes to allow the bread to soak up the egg mixture.
- Butter a 3-quart baking dish. Add the stuffing and top with the remaining 1/4 cup each fontina and cheddar. Bake until golden brown, about 1 hour. Let sit about 20 minutes before serving.
CHEESY CHICKEN & STUFFING CASSEROLE
The is so easy. Just throw it in a 1 3/4 casserole dish and bake for an hour. It's nice when you're in lazy mood, but still want a home-cooked meal. It's very tasty.

- Preheat oven to 350°.
- Heat butter in medium skillet over medium-high heat. Add chicken and cook 12 to 15 minute or until no longer pink. Remove chicken, let cool a bit, then cut in chunks.
- PrepareE stuffing in skillet according to package directions except let stand 2 minute.
- Layer stuffing, chicken and veggies in 1 3/4 - 2 quart casserole dish. Mix soup and milk. Pour over layers. Sprinkle with cheese.
- Cover and heat through (about an hour).
SIMPLE CHICKEN FLAVORED SKILLET STUFFING
Easy and very good! Please adjust all seasoning to taste. Add in some dried chili flakes for extra heat when frying the onions and garlic if desired. Feel free to add in some frozen peas or other cooked veggies.

- In a large skillet saute the onion, garlic (if using) and celery, in butter, until soft.
- Stir in the remaining ingredients, except the bread crumbs; simmer for 5 minutes.
- Add the bread crumbs; cover, turn off heat, and allow to sit for 8-10 mins (if the mixture seems dry, then add in a bit more chicken broth).
- Sprinkle with Parmesan cheese if desired.

CHEESY CHICKEN STUFFING BAKE
This was a combination of two of my mom's recipes that I ended up making one day when I wanted to use up some stuffing, it turned out pretty good so I thought I would share.

Steps:
- Preheat oven to 350 degrees F.
- cut chicken into bite sized pieces and saute and brown in hot skillet with a little bit of oil or butter.
- Meanwhile put prepared stuffing in bottom of casserole dish.
- When chicken is done, top stuffing with chicken.
- In same pan chicken was cooked in melt 3 tbsp of butter, add flour to make a roux. Add chicken broth and evaporated milk stirring constantly until thickened.
- Remove from heat and stir in cheese (you can add more cheese or take away depending on personal preference).
- Pour cheese mixture over chicken and stuffing. Heat in oven for 20 minutes.
- Enjoy!
- Note: you can use lower fat cheese and it works fine. You can also leave your chicken breasts whole and saute longer, but I like it more when its bite sized pieces.

- Preheat the oven to broil. Heat butter in a skillet on stovetop over medium heat in an oven proof skillet. Sprinkle the chicken breasts with salt, pepper, garlic powder and onion powder. Add the chicken to the skillet and cook 12-15 minutes until done. Remove the chicken to a dinner plate and set aside.
- Mix the box of stuffing with ½ cup - ¾ cup water - until just wet and starting to stick together. Add this to the hot skillet that you just removed the chicken from. Add the cheese. Mix until melted. Remove from the heat, place the chicken back on top of the stuffing and set aside for a moment
- Mix together the can of soup and the milk. Pour the soup back over the top of the chicken and then sprinkle the cheese over the top.
- Place the skillet under the broiler until cheese is melted over the top. Garnish with fresh parsley or chives.
