The trick to any sliced cucumber salad is to slice the cucumbers as thin as you can and to purge them by salting them before making the salad so the dressing doesn't get watered down by the cucumber juice.

- Sprinkle the cucumbers with a generous amount of salt and let sit in a colander in the sink for 15 minutes. Rinse and dry on a kitchen towel. Transfer to a salad bowl.
- Whisk together the vinegar, soy sauce, sugar, garlic, ginger, cayenne, and pepper. Whisk in the sesame oil and the sunflower or grapeseed oil. Toss with the cucumbers, scallions, and cilantro. Chill until ready to serve.

GINGER-DILL PICKLES

Steps:
- Bring ginger, garlic, vinegar, sugar, salt, coriander seeds, and 2 cups water to a boil in a medium pot over high heat, stirring occasionally. Reduce heat to medium-low and simmer 10 minutes.
- Place cucumbers and dill in a heatproof resealable container or jar (divide among several containers if necessary). Pour hot brining liquid over cucumbers and dill. Let cool to room temperature, then cover and chill at least 2 hours before serving.
GINGER AND CUCUMBER JUICE
Steps:
- In a blender or food processor, blend together the ginger, cucumber and 1/2 cup cold water. Strain and press the puree through a mesh sieve.
- Serve over ice and garnish with a lemon and cucumber wheel.
- Optional serving: Fill glasses with ice and one-half to two-thirds full with the blended juice. Top with lemonade and/or vodka.

- Peel half of the cucumbers, leaving the remaining cucumbers unpeeled. Using a sharp knife or a mandoline, very thinly slice the cucumbers crosswise. Set aside.
- In a medium bowl, whisk together vinegar, sugar, ginger, and salt until sugar has dissolved. Add cucumbers and toss to combine. Let marinate, refrigerated, for 3 hours. Using a slotted spoon, transfer cucumbers to a serving bowl.

- With English cucumbers slice thinly, preferably with a mandoline.
- With thick cucumbers, peel, halve lengthwise, and scoop out seeds before slicing.
- Mix vinegar, ginger, sugar and salt, and toss with cucumbers.
- Let stand for 30 to 60 minutes.
- (Refrigerate if marinating for more than an hour in warm weather.).
- Just before serving, drain excess liquid.
- Put 2 tablespoons oil in a skillet, preferably nonstick, over medium-high heat.

- Gently wash the cucumbers, and cut them into 1-inch lengths, discarding a thin slice from each end. Toss the cucumbers with 1/2 teaspoon salt in a bowl. Let the cucumbers stand for 1 to 2 hours.
- In a large nonreactive saucepan, bring to a boil the ginger, chile peppers, vinegar, water, sugar, and remaining 1/2 teaspoon salt, stirring to dissolve the sugar and salt. Remove the pot from the heat, and add the carrots. Let the mixture cool.
- Drain and rinse the cucumbers, and drain them again. Add the cucumbers, pepper, and onion to the saucepan. Mix well, then transfer the vegetables and liquid to a 2-quart jar. Cover the jar with a nonreactive cap, and refrigerate it.
- The pickles will be ready to eat after about 3 days. Refrigerated, they will keep for at least 2 months.

- Wash the cucumbers and celery. Pat dry. Peel the cucumbers, if you'd like.
- Slice the cucumbers lengthwise. Scoop out the seeds. Chop the cucumbers and celery.
- If you haven't already, grate the ginger until you have about 1 teaspoon. Juice the lemon.
- In a blender or food processor, add all the ingredients except the water. Blend for about 60 seconds, slowly adding the water. Blend until there are no large chunks.
- Place the strainer on top of the bowl. Lay the cheesecloth on top, then pour the mixture onto the cheesecloth. Gather the edges and squeeze well.
- Pour into glasses and garnish with cucumber or lemon slices. Enjoy immediately or refrigerate in an air-tight jar. Consume within 24 hours.
