SPICY PORK AND CASHEW STIR-FRY WITH SNOW PEAS AND RED PEPPER
Steps:
- Stir together Sherry, cornstarch, and 1 tablespoon soy sauce, then stir in sesame oil. Add pork, stirring to coat well, and let stand 10 minutes.
- Stir together sugar and remaining 2 tablespoons soy sauce.
- Heat a wok or large nonstick skillet over high heat until a bead of water dropped on cooking surface evaporates immediately. Add 1 1/2 tablespoons peanut oil, swirling wok to coat evenly, then stir-fry 1 teaspoon ginger, 1 teaspoon garlic, and 1/4 teaspoon pepper flakes until fragrant, about 5 seconds. Add bell pepper and stir-fry 2 minutes. Add snow peas and cashews and stir-fry until snow peas are crisp-tender, 1 to 2 minutes. Transfer vegetables to a bowl.
- Heat remaining 1 1/2 tablespoons peanut oil in wok until just smoking, then stir-fry remaining ginger, garlic, and pepper flakes until fragrant, about 5 seconds. Add pork and stir-fry, separating strips, until browned and barely cooked through, 2 to 3 minutes. Add vegetables and sweetened soy sauce, then stir-fry until vegetables are just heated through, about 1 minute more.

A pleasant combination of honey, soy sauce and ginger glazes these tender pork chops and makes them seem special. Serve with buttered green beans and instant mashed potatoes as shown in the photo above right. Or complete the meal with peas and scalloped potatoes from a boxed mix.

- Place cubed pork and flour together in a resealable plastic bag. Seal and shake. Meanwhile, heat oil in a large skillet or wok. When hot, add coated pork and brown quickly; remove with a slotted spoon and set aside. Pour off remaining oil.

- Combine pork and marinade/sauce ingredients (soy sauce, cornstarch, sesame oil) in a large bowl or zip lock bag. If you are about to cook it, let it marinade at the very least 15-30 minutes. If you are making this ahead, cover and refrigerate for 30 minutes before cooking.
- In a large nonstick cooking pan or wok, heat cooking oil over medium-high heat. When the oil is hot, add garlic, and let it heat up for about half a minute.
- Then add the pork, and stir fry until mostly browned. Remove pork and garlic from pan.
- Add snow peas and mushrooms in to cooking pan. Stir fry everything together for about another 2-3 minutes.
- Add the pork and garlic from earlier back in to pan, and stir fry another 1-2 minutes or until pork is cooked thoroughly and the veggies have softened (but not soggy! It's yummier when there's still a little crunch to it).
- Remove from heat and serve!

- Toss pork with cornstarch and 1 teaspoon salt.
- Heat 2 tablespoons oil in a wok or 12-inch heavy skillet over medium-high heat until it shimmers. Stir-fry pork until pale golden and almost cooked through, about 4 minutes, then transfer to a plate. Add 1 tablespoon oil to wok and stir-fry snow peas with garlic until crisp-tender, about 1 minute. Transfer to plate.

- Pinch off the ends of the snow peas, pulling out any strings that may be attached. Wash and drain them.
- Clean mushrooms. Remove stems. Slice.
- Mix several shakes of ginger with the soy sauce and sesame oil.
- Heat oil in 10- to 12-inch skillet over high heat. One minute later, add peas and mushrooms. Stir and toss occasionally until peas are lightly browned and their green color is vivid, about 2 minutes. Remove from heat. Pour in the soy sauce mixture. - Mix the ginger, soya sauce and sherry in a medium bowl.
- Add the pork to the bowl and stir to completely coat the pork.
- Cover the bowl with plastic wrap and refrigerate for at least one hour to marinade the pork.
- Heat 2 teaspoons oil in a wok over high heat until hot, add half the pork and stir fry for several minutes until the pork is tender.
- Remove pork from wok and set aside.
- Repeat using another 2 teaspoons oil and remaining pork.
- Remove pork from wok and set aside.
- Heat the remaining oil in the wok and add the mushrooms, snow peas and red cabbage and stir fry for several minutes.
- Add the water, cover and cook until the vegetables are just tender.
- Add the pork to the wok and stir fry for several minutes or until heated through.
- Serve with steamed or fried rice.
