1 pound ground beef
1/2 cup chopped onion
2 teaspoon mccormick® oregano leaves
1 teaspoon mccormick® ground cinnamon
1/2 teaspoon mccormick® garlic powder
1 can of reduced sodium beef broth
1 can of diced tomatoes, undrained
2 tablespoon tomato paste
1 1/2 cup uncooked penne pasta
1 1/2 cup frozen leaf spinach, thawed
3/4 cup crumbled feta cheese, divided

Steps:

  • Cook ground beef and onion in large skillet on medium-high heat until beef is no longer pink, stirring occasionally.
  • Drain fat.
  • Add oregano, cinnamon and garlic powder; mix well.
  • Stir in broth, tomatoes and tomato paste.
  • Bring to boil.
  • Stir in pasta.
  • Reduce heat to medium; cover and cook 10 minutes or until pasta is nearly tender.
  • Stir in spinach and 1/2 cup of the feta cheese.
  • Cover.
  • Cook 5 minutes longer or until pasta is tender.
  • Sprinkle with remaining 1/4 cup feta cheese.
  • Cover.
  • Let stand 5 minutes.

½ pound dried elbow macaroni
1 pound lean ground beef
2 cloves garlic, pressed or minced
2 medium carrots, quartered lengthwise and sliced
1 large zucchini, quartered lengthwise and sliced
1 ½ tablespoons dried oregano leaves
salt and pepper
1 (10.75 ounce) can condensed tomato soup, plus
1 (10.75 ounce) can water
1 ounce crumbled feta cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni for 8 to 10 minutes or until al dente; drain, and set aside.
  • Brown ground beef with garlic in a large skillet over medium heat. Strain off fat, if necessary. When meat is lightly browned, add carrots and cook until tender, about 5 minutes. Stir in zucchini and oregano, and continue cooking another 5 minutes. Season to taste with salt and pepper.
  • When vegetables are tender, stir in tomato soup, water, and prepared elbow macaroni, and cook for another 5 to 10 minutes. Serve with crumbled feta cheese on top, if desired.

You can turn this into an Italian style dish by omitting the cinnamon and using diced tomatoes with basil, garlic and oregano other than plain tomatoes and substitute mozzarella cheese for the feta.

12 ounces lean ground beef
1 medium onion, chopped
1 (14 1/2 ounce) can diced tomatoes, undrained
1 (5 1/2 ounce) can tomato juice
1/2 cup water
1/2 teaspoon beef bouillon granules
1/2 teaspoon ground cinnamon
1/8 teaspoon garlic powder
1 cup dried medium pasta shells or 1 cup elbow macaroni
1 cup frozen cut green beans
1/2 cup crumbled feta cheese (2 oz.)

Steps:

  • In a large skillet cook ground meat and onion until meat is brown and onion is tender. Drain off fat.
  • Stir in tomatoes, tomato juice, water, beef bouillon granules, cinnamon and garlic powder. Bring to boiling.
  • Stir uncooked pasta and green beans into meat mixture. Return to boiling; reduce heat.
  • Cover and simmer about 15 minutes or until pasta and green beans are tender. Sprinkle with cheese.

1 medium zucchini, sliced

3 lbs thin sliced beef (any kind)
1/2 cup oil
2 cups red wine
6 cloves minced garlic (, depending on taste- may add more or less)
1/2 cup vinegar
1 tablespoon sugar
4 cups water
flour (for dredging)
salt and pepper

Steps:

  • Heat oil in a skillet.
  • Dredge the beef in flour mixed with salt and pepper.
  • Brown the beef till just browned.
  • Meanwhile, combine the wine, garlic, vinegar, sugar, and water in a stockpot.
  • Add the browned beef including skillet scrapings.
  • Bring to a boil, then reduce heat and simmer for 1 1/2 hours, adding water and stirring when neccessary.
  • This recipe makes its own gravy, so goes well with rice, potatoes, or bread.

3 pounds boneless beef chuck roast, cut into 2-inch cubes
2 teaspoons freshly ground black pepper
1 tablespoon kosher salt
4 tablespoons olive oil, divided
1 pound small shallots
½ cup diced onion
4 cloves garlic, minced
1 pinch kosher salt
3 tablespoons tomato paste
¼ cup red wine vinegar
1 cup white wine
2 teaspoons white sugar
¼ teaspoon ground cinnamon
⅛ teaspoon ground allspice
1 pinch ground cloves
1 teaspoon dried oregano
2 large bay leaves
2 sprigs fresh rosemary
2 cups beef broth, or more as needed

Steps:

  • Place beef in a bowl and season generously with pepper and kosher salt. Cover and transfer to the refrigerator until ready to use; up to 1 day is fine.
  • Leaving the root ends in place, cut off the shallot tops. Remove and discard skins.
  • Heat 2 tablespoons oil in a heavy skillet over high heat. Add ½ of the beef and cook until nicely seared, 4 to 6 minutes per side. Remove to a plate and repeat to sear remaining beef.
  • Turn off the heat and add 1 tablespoon oil to the empty skillet. Add shallots and let the skillet cool for 2 to 3 minutes. Turn the heat back on to medium and toss shallots until browned, 2 to 4 minutes. Remove shallots to a plate.
  • Add the remaining 1 tablespoon oil to the skillet with onion, garlic, and a pinch of salt; cook and stir for about 1 minute. Stir in tomato paste and cook until toasted, about 2 minutes. Add red wine vinegar and white wine and bring to a boil while scraping the browned bits of food off the bottom of the pan with a wooden spoon. Increase heat to medium-high and add sugar, cinnamon, allspice, cloves, oregano, bay leaves, and rosemary sprigs. Stir to combine and cook until reduced by about half, 2 to 3 minutes.
  • Add browned beef and shallots to the skillet and toss carefully until coated. Pour in 2 cups beef broth and bring to a simmer.
  • Reduce heat to low or medium-low. Cover and cook at a gentle simmer for 1 hour, then uncover and cook for at least 1 more hour, stirring occasionally to move the beef and shallots around. Add more broth if needed during the cooking time and skim off some fat if preferred. The meat is done when a fork slides in easily, but the meat isn't falling apart on its own; it may take longer than 2 hours.
  • Taste and adjust seasonings before serving.
