Steps:
- Heat oven to 350°F.
- Brown meat in large skillet on medium-high heat. Meanwhile, combine egg, ricotta, parsley, 1-1/4 cups mozzarella and 1/4 cup Parmesan.
- Drain meat; return to skillet. Stir in pasta sauce. Add 1 cup water to empty sauce jar; cover with lid and shake well. Add to meat mixture; stir until blended.
- Spread 1 cup meat sauce onto bottom of 13x9-inch baking dish sprayed with cooking spray; top with layers of 3 lasagna noodles, 1/3 of the ricotta mixture and 1 cup of the remaining meat sauce. Repeat layers twice. Top with remaining noodles, meat sauce and cheeses. Cover with foil sprayed with cooking spray.
- Bake 1 hour or until heated through, removing foil after 45 min. Let stand 15 min. before cutting to serve.

- In a Dutch oven, cook onion in olive oil over medium heat until tender, 4-5 minutes. Add garlic; cook 1 minute. Stir in tomato paste and cook, stirring constantly, until fragrant, 3-4 minutes. Add crushed tomatoes, water, fresh basil, 2 teaspoons sugar and salt. Bring to a boil; reduce heat. Simmer 1 hour, stirring occasionally., Meanwhile, cook bulk sausage in a skillet over medium heat until no longer pink, breaking into crumbles, 8-10 minutes; drain. Add to sauce; simmer until mixture is thickened, about 1 hour longer., While sauce simmers, preheat oven to 350°. Place sausage links on a rimmed baking sheet; roast until cooked through, 35-40 minutes. Remove and let cool slightly; slice into 1/4-in.-thick pieces., In a small bowl, mix ricotta cheese, 1 cup mozzarella cheese, egg, dried basil and remaining sugar., In a greased 13x9-in. baking dish, spread 2 cups sauce. Arrange 4 noodles over sauce; spread with a third of the ricotta mixture. Add 7 provolone slices, a third of the sliced sausage and 1-1/2 cups mozzarella cheese. Repeat layers 2 more times, using only 1 cup sauce per layer. Spread with 2 cups sauce (reserve remaining sauce for serving on the side), remaining 2-1/2 cups mozzarella cheese and the Parmesan cheese (dish will be full)., Place dish on a rimmed baking sheet and bake, uncovered, until bubbly and deep golden brown, 60-65 minutes. This is my family's favorite lasagna. It is a recipe I got from a local mennonite cookbook and it is SUPERB! It has a homemade tomato sauce that is easy to whip up while the noodles are cooking. Try it... I hope you love it as much as we do!

Steps:
- Brown ground beef and onion in large skillet, then drain.
- Place beef and onion back into skillet.
- Add tomato juice, brown sugar, vinegar, salt, oregano, marjoram, and garlic powder; cover and simmer for 20 minutes.
- Meanwhile, cook lasagna noodles with 1 Tbsp oil according to the package directions.
- Dissolve cornstarch in water and add to sauce, stirring until thickened.
- In a greased 9x13 inch baking dish, layer noodles, meat sauce, cottage and mozzarella or swiss cheese, and parsley flakes.
- Sprinkle parmesan cheese over the top.
- Bake at 350 degrees for 35-40 minutes.

- Heat the olive oil in a large wide saucepan; add the ground beef, onion and garlic.
- Sauté, stirring, over medium meat until the meat is browned.
- Add the tomatoes, tomato paste and sauce, basil and oregano.
- Cook, stirring occasionally, over medium-low heat until sauce is cooked down and thickened, 1-1/2 to 2 hours.
- There should be about 4 cups of sauce.
- Season with salt and pepper.
- Cook the lasagna noodles in plenty of boiling salted water until al dente, about 12 minutes; drain.
- Place noodles in a bowl of cool water until ready to use.
- Beat the cottage cheese, Parmesan and egg together; set aside.
- Heat oven to 350°F.
- Add about 1/2 cup of sauce to bottom of a 9x13-inch baking dish.
- Lift the noodles from the water individually and blot dry on paper towels.
- Arrange a slightly overlapping layer of 5 noodles on the bottom of the dish.
- Cover the noodles with half the ricotta mix; add about 1/3 of the sauce and 1/3 of the mozzarella.
- Arrange a second layer of 5 noodles.
- Add the remaining ricotta, half of the remaining sauce and half of the remaining mozzarella.
- Top with the remaining 5 noodles, the remaining sauce and the last of the mozzarella.
- Bake until the cheese is melted and the mixture is bubbly, about 50 minutes.
- Let stand at least 15 minutes before serving.

OUR FAVORITE LASAGNA
This recipe comes from the Good Housekeeping Illustrated Cookbook and it is the best lasagna recipe we have tried. I don't have any trouble finding the page in my cookbook because it has a few stains and looks worn compared to the other pages. The recipe doubles very easily, I use a 9x13x2-inch glass cake pan and it is always filled to the top. Definitely have to have some good crusty bread to sop up the bit of sauce that is left in the pan!

- In a dutch oven over high heat cook ground beef and onions until beef is browned and juices have evaporated. Add the tomatoes, tomato paste, sugar, salt, oregano leaves, thyme leaves, red pepper flakes, garlic salt, and bay leaf, heat mixture until boiling. Reduce heat and simmer, stirring occasionally, for 30 minutes.
- Discard the bay leaf and spoon off any grease that has accumulated on top of the sauce. Set aside.
- In another dutch oven boil water, add lasagna noodles, and cook until tender. Drain well in colander and set aside.
- Preheat oven to 375°F In a 13x9-inch baking dish add half of the lasagna noodles layering as you go.
- In a small bowl add ricotta cheese and eggs, beat well until combined. Spoon half of this mixture over the layered lasagna noodles and half of the meat sauce. Sprinkle half of the mozzarella cheese over this layer. Repeat layers and bake in oven for 45 minutes. Remove from oven and let stand 10 minutes before serving.

- Preheat oven to 350°F.
- In a large nonstick pan, heat vegetable oil over medium heat.
- Add zucchini, mushrooms, onions and garlic, and cook until tender.
- Add tomatoes, water, tomato paste and Italian seasoning.
- Bring to a boil, reduce heat to medium-low and simmer uncovered for 20 minutes until mixture has spaghetti sauce consistency, stirring occasionally.
- Season with pepper to taste and add sugar if too acidic.
- In large pot of boiling water, cook lasagna noodles as directed on package (usually 10 to 12 minutes) until tender but firm.
- Drain and rinse under cold water the drain again.
- Combine cottage cheese, mozzarella, egg and half of Parmesan.
- Cover bottom of 13 x 9 inch baking dish with a bit of the tomato sauce.
- Place 1 layer of cooked noodles in dish.
- Cover with half of cheese mixture.
- Repeat with remaining sauce, noodles and cheeses to make 3 layers of each ending with a final layer of tomato sauce.
- Sprinkle with remaining Parmesan cheese.
- Bake for 45 minutes or until hot and bubbly.
- Remove from oven and allow to stand for 5 to 10 minutes before serving.

FAVORITE LASAGNA
I have been making this lasagna for over 20 years. Everyone seems to love this recipe. It came from a 1973 McCalls cookbook.

Steps:
- Remove sausage from casings, chop the meat.
- In 5-qt Dutch oven, over medium heat, saute sausage, ground beef, onion and garlic.
- Break up beef with wooden spoon.
- Stir frequently, until well browned- 20 minutes.
- Add sugar, 1TBSP salt, basil, pepper, and half the parsley; mix well.
- Add tomatoes, tomato paste and 1/2 cup water, mashing tomatoes with wooden spoon.
- Bring to boiling; reduce heat; simmer, covered and stirring occasionally, until thick- 1-1/2hours.
- In large 8qt pot, bring 3qts water and 1TBSP salt to boiling.
- Add lasagna noodes, 2 or 3 at a time.
- Return to boiling; boil uncovered and stirring occasionally, 10 minutes, or just until tender.
- Drain in colander; rinse under cold water.
- Dry lasagna on paper towels.
- Preheat oven to 375 degrees.
- In medium bowl, combine ricotta, egg, remaining parsley, and salt; mix.
- In bottom of 13x9" baking dish, spoon 1-1/2 cups sauce.
- Layer with 6 lasagna noodes, lengthwise and overlapping, to cover.
- Spread with 1/2 of ricotta mixture; top with 1/3 of the mozzarella.
- Spoon 1-1/2 cups sauce over cheese; sprinkle with 1/4 cup Parmsesan cheese.
- Repeat layering, starting with 6 lasagna noodes and ending with 1-1/2 cups sauce sprinkled with Parmesen.
- Spread with remaining sauce, top with rest of mozzarella and Parmesan.
- Cover with foil.
- Bake 25 minutes; remove foil; bake, uncovered, 25 minutes longer or until bubbly.
- Cool 15 minutes before serving.

- Saute the onion and pepper in the butter for about 7 minutes with a pinch of sea salt to bring out their juices and sweeten. Add the garlic and cook for a minute. Add the browned ground beef and the spaghetti sauce and stir to combine. Simmer a few minutes and then set aside.

- Spread a little of the bechamel sauce in the bottom of a small baking dish. Put one layer of the par cooked lasagna noodles over the bechamel sauce. Spread meat sauce over the noodles and dollop some of the bechamel sauce over the meat sauce. Lay down another layer of noodles. Spread bechamel over the noodles and then scatter the sauteed mushrooms over top. Lay down another layer of noodles. Spread meat sauce over the top and dollop the bechamel over top. Layer the final noodles over the top and then sprinkle the cheese over the top.
