TENNESSEE PEACH PUDDING
This out-of-this-world dessert is one of our favorite, easy peach recipes. I was raised in Oklahoma, and we used Elberta peaches right off our trees when we made this outstanding cobbler. -Virginia Crowell, Lyons, Oregon

- Preheat oven to 400°. Combine flour, sugar, baking powder, salt and, if desired, cinnamon. Stir in milk just until combined; fold in peaches. Spread into a greased 8-in. square baking dish., For topping, combine water, sugars, butter and nutmeg in a large saucepan. Bring to a boil, stirring until sugars are dissolved. Pour over peach mixture. Bake until filling is bubbly and a toothpick inserted in topping comes out clean, 40-50 minutes. Serve warm or cold with ice cream, if desired.

- Preheat oven to 350 degrees.
- Sift together the first 7 ingredients; sift again.
- Process chopped peaches in a food processor or blender until smooth (Yield should be 2 cups puree).
- Stir in buttermilk.
- Beat butter and sugar at high speed with a heavy-duty electric stand mixer until fluffy.
- Add eggs, 1 at a time, beating until blended after each addition.
- Add peach mixture and beat until well blended.
- Layer sliced peaches in a greased 13x9 inch pan.
- Fold flour mixture into butter mixture.
- Pour batter over sliced peaches in pan.
- Place pan in a large roasting pan, and add boiling water to roasting pan to a depth of 1 inch.
- Bake for 50 minutes or until set (pudding will still be moist).
- Serve warm or cold with ice cream.

- Heat oven to 180C/160C fan/gas 4. Grease a baking dish with a little butter, then lay the drained peach slices in the base. Sprinkle with 2 tbsp of the sugar and the ground ginger and set aside.
- Tip the flour, remaining sugar, baking powder, cinnamon and a pinch of salt into a food processor. Whizz until combined, then add the cubes of butter, pulse until the mixture resembles breadcrumbs, then add the egg and continue to blitz until it comes together to make a thick dough.
- Spoon the dough in dollops on top of the peaches, creating a good covering, but leave some gaps for the dough to spread into. Sprinkle with a little caster sugar then bake for 40 mins, until golden. Serve with scoops of vanilla ice cream.

PEACH AND BUTTERMILK BREAD PUDDING WITH GOLDEN RAISINS
Found in the LA Times Food & Drink section. Combines some of my favorite foods & SC peaches are just coming in....Use whole fat buttermilk (a much better product) & heavy cream to lash the individual servings with just before serving. Mmmm... makes summertime worthwhile.

- Arrange a rack in the middle of the oven and put a large baking sheet on the rack below it, to catch any drips later. Heat the oven to 350 degrees.
- In a large bowl, toss together the bread, buttermilk, heavy cream, milk, raisins and nutmeg and set aside to soak for 20 minutes.
- Meanwhile, in a medium bowl, toss together one-fourth cup of the granulated sugar, lemon juice, cinnamon and peaches, to coat; set aside.
- Grease a 9-by-13-inch casserole dish with butter; set aside.
- Whisk together the eggs, vanilla, salt and remaining 1 1/4 cups of the granulated sugar in a medium bowl, then add to bowl with the bread mixture. Add the macerated peaches and stir well to combine. Transfer to the prepared dish and spread out evenly.
- Sprinkle the turbinado sugar over the top and bake until cooked through and deep golden brown, covering with a sheet of foil if parts of the top get too dark, about 1 1/4 hours.
- Serve warm or at room temperature. Serve with a drizzle of cream, if desired.

- Place peaches in a food processor; process until smooth. Add sugars, lemon juice, vanilla and salt; process until blended., In a large bowl, mix buttermilk and cream. Stir in peach mixture. Refrigerate, covered, 1 hour or until cold., Fill cylinder of ice cream maker no more than two-thirds full. Freeze according to manufacturer's directions, refrigerating any remaining mixture to process later. Transfer ice cream to freezer containers, allowing headspace for expansion. Freeze 2-4 hours or until firm. Let ice cream stand at room temperature 10 minutes before serving.
