CHUNKY CHOCOLATE FRUIT-AND-NUT BARK
Do you remember Chunky bars, those little squares of chocolate wrapped in foil with a ton of fruit and nuts? These are the homemade version, and they make a great gift for the holidays. - Set a heatproof bowl over a saucepan of simmering water, making sure the bowl doesn't touch the water. Roughly chop chocolate and place in the bowl to melt, stirring frequently, keeping the heat very low. Chop toasted nuts; using scissors, cut dried fruit into small pieces. Finely chop candied ginger and/or orange peel. Place fruit and nuts into a large mixing bowl.
- Once chocolate is melted and smooth, take it off the heat and stir fruit and nuts into the chocolate. Gently stir to combine so the fruit and nuts are all combined with the chocolate. Line a pan with parchment paper that's been sprayed with a little oil. Sprinkle cocoa powder over parchment and then add the chocolate mixture. Spread it out in an even layer. Dust with more cocoa powder and place another piece of parchment paper on top. Let it cool down and set in the refrigerator, 1 hour.
- When chocolate is set, run a knife around the edge to remove from the pan. Break or cut into pieces to make chunky chocolates.
NUT BUTTER GRANOLA BARS
Bound together with honey and nut butter, these just-sweet-enough bars are sturdy enough to throw in a beach bag and substantial enough to power you through til sunset.

- Preheat oven to 350°F. Toast nuts pumpkin seeds on a rimmed baking sheet until golden brown or slightly darkened in color, 10-12 minutes. Transfer to a food processor and let sit until cool enough to handle.
- Reduce oven temperature to 300°F. Lightly oil 13x9" pan and line with parchment paper, leaving overhang on both long sides. Lightly oil parchment.
- Add 1 cup oats to nut mixture in food processor and pulse until nuts are a sandy consistency and no whole oats remain. Transfer to a large bowl.
- Pulse any dried fruit larger than a raisin in food processor (no need to wipe out) until about the size of chocolate chips. Transfer to bowl with nut mixture. Add remaining 1 cup oats and stir to combine, breaking up any fruit that is stuck together. Add remaining 3 Tbsp. oil and stir to coat. Add peanut butter, but don't stir it in; set aside.
- Bring honey, salt, and vanilla to a boil in a medium saucepan over medium heat (it will bubble up). Reduce heat to medium-low and simmer, stirring occasionally, until it is foaming vigorously and smells like caramel, about 3 minutes.
- Immediately pour honey mixture over peanut butter in reserved bowl (it will melt the peanut butter). Stir to combine, making sure to aggressively break up any clumps.
- Using a fork or small whisk, lightly beat egg white in a small bowl to thin out. Add to oat mixture and mix until egg white is no longer visible.
- Scrape oat mixture into prepared pan and press firmly into an even layer. (Be sure to really compact the mixture into the pan-it helps to use the bottom of a heavy glass or metal measuring cup.)
- Bake granola bars until deep golden brown and no longer sticky or wet, 30-35 minutes. Let cool 5 minutes, then lightly score into 16 long rectangles (1 cut lengthwise and 7 cuts crosswise will make bars that are about 6½x1"). Let cool completely in pan, then use parchment to hoist bars out onto a cutting board. Using a sharp chef's knife, cut along marks to separate bars.
- Do Ahead: Bars can be made 1 week ahead. Store airtight at room temperature.

- Heat the oven to 275ºF. Line a small baking pan with parchment paper. Soak the chia seeds in 2 tablespoons of cold water.
- Place the next 6 ingredients – cranberries through almond flour – in the bowl of a food processor and pulse until everything is finely chopped but not powdered. Keep checking until you’re happy with the texture.
- Pour the mixture into a big bowl and stir in the cinnamon, sesame seeds, pine nuts, soaked chia seeds with their liquid/gel, and raw honey. Mix until everything is well combined and sticks together like dough when you squeeze it. It’s best to use your hands for this. If the mixture is too dry, add a bit of water.
- When the mixture is uniform, push it down into the lined baking pan with your fingers, to a depth of about 1/2 inch or so. If it’s sticky, wetting your fingers will help. Bake for 55-60 minutes or until the whole surface looks dried out and starts to turn golden.

- Preheat oven to 325°. Spread nuts on a rimmed baking sheet and bake until light golden, 10 to 12 minutes.
- Warm honey in a microwave until the consistency of thin syrup. In a food processor, pulse honey, dates, cinnamon, and oats until oats are coarsely chopped.
- Scrape oat mixture into a medium bowl. Break up any clumps of dates and, if needed, chop any large date chunks. Stir in nuts, cranberries, and apples. Squeeze mixture into a ball. Line baking sheet with foil and oil foil. Using damp hands, firmly pat mixture onto foil into a compact 6- by 12-in. rectangle.
- Freeze until rectangle is firm enough to cut, about 20 minutes. Lift rectangle from foil to a work surface and cut into 16 bars. Wrap bars individually. They get moister and chewier after standing at least a day.

- Soak dates in hot water for minimum 20 minutes, until softened. Peel off the skin and remove the pits. Add dates, almond butter, salt, and 2 tablespoons of water to food processor. Pulse until smooth, adding additional water 1 teaspoon at a time as needed. Mixture should be firm but smooth.
- Combine the rest of the dry ingredients in a mixing bowl. With clean hands, work the date-and-almond-butter mixture with the nuts, dried fruit of your choice, and shredded coconut until completely blended.
- Line a pan (a loaf pan works great for these bars) with parchment paper and firmly pack the mixture into the pan. For crunchier bars, bake at 325°F for 20 to 25 minutes.
- For the raw bar option, simply place in the fridge and allow to set for a minimum of an hour before cutting. Keep refrigerated and enjoy within a week.
