This strawberry vinaigrette is a delicious, summery-tasting salad dressing recipe made with fresh strawberries, oil, vinegar, and a little honey. It's made in just 5 minutes and its sweet tart flavor is irresistible!

1 cup halved strawberries
2 tablespoons avocado oil (or sub another neutral-favored oil)
1 tablespoon apple cider vinegar
1 tablespoon honey (optional )
A pinch sea salt and pepper

Steps:

  • Put the ingredients into your blender and blend on high until creamy.
  • Store in a sealed jar for up to 1 week.

This frisee salad is refreshing and sophisticated, pairing this frilly leafy green with orange, almonds and a zingy vinaigrette.

1 large or 2 to 3 small heads frisée* (may be marked as curly endive or endive lettuce)
1 orange, plus zest
1 shallot
1 ounce Manchego cheese (or shaved Parmesan cheese; omit for vegan)
2 tablespoons sliced almonds
1 handful fresh mint leaves, optional
2 tablespoons white wine vinegar
1 tablespoon Dijon mustard
1 tablespoon maple syrup or honey
¼ teaspoon kosher salt
6 tablespoons olive oil
Fresh ground black pepper

Steps:

  • Wash and dry the frisée, using a salad spinner or clean towel. Tear or chop the frisee into pieces.
  • Zest half the orange. Then segment the orange, following the instructions in How to Cut an Orange.
  • Thinly slice the shallot. Slice the Manchego cheese into pieces.
  • In a medium bowl, whisk the white wine vinegar, Dijon, maple syrup or honey, salt. Whisk in the oil 1 tablespoon at a time until a creamy dressing forms. Add a few grinds of fresh ground black pepper. Serve immediately or refrigerate up to 2 weeks (bring to room temperature prior to serving).
  • Serve the salad: place the greens on a large platter or separate plates. Top with orange slices, shallot, cheese, sliced almonds, orange zest, and mint leaves. Drizzle with about 3 to 4 tablespoons of the dressing, to taste.

  • Place jam in a medium bowl and whisk in vinegar then extra-virgin olive oil. Season the dressing with salt and pepper. Add the strawberries and greens to bowl and toss to coat evenly in dressing.

1/4 cup white-wine vinegar
2 tablespoons Dijon mustard
Coarse salt and ground pepper
1/2 cup olive oil
1 pound frisee, trimmed and roughly torn
1 bunch fresh chives, cut into 1-inch lengths

Steps:

  • In a blender (or screw-top jar), combine vinegar and mustard. Season with salt and pepper, and blend well to combine. Add oil, and blend until combined and thickened.
  • Place frisee and chives in a large serving bowl; toss with vinaigrette, and serve.

FRISEE SALAD WITH CHORIZO AND ROASTED GARLIC VINAIGRETTE

1/2 pound smoked Spanish chorizo sausage, cut into 1/4 inch sticks
6 cups frisee or curly endive, washed and dried
1 cup roasted garlic vinaigrette
4 small ripe tomatoes, seeded and diced
1/4 cup grated Spanish Manchego cheese
1 small red onion, sliced and separated into rings
12 garlic cloves, roasted and peeled
1/4 cup red wine vinegar
1 tablespoon honey
Juice of one fresh lime
1/2 cup olive oil
1 teaspoon coarse salt
1/2 teaspoon freshly ground black pepper

Steps:

  • In a medium skillet, cook the sausage over low heat for 10 minutes, shaking frequently. Remove from the pan, drain on paper towels and set aside. Place the frisee, tomatoes, cheese and cooked chorizo in a large bowl and drizzle with the vinaigrette. Toss well to coat and serve on chilled plates with rings of red onion on top.
  • Combine the garlic, vinegar, honey and lime juice in a blender and puree until smooth. With the motor running, slowly add the oil until emulsified. Season with salt and pepper.
  • To roast garlic: Preheat oven to 350 degrees. Drizzle a tiny bit of olive oil over unpeeled garlic cloves, and wrap in aluminum foil. Place on a cookie sheet and bake about 1 hour, or until soft throughout. Set aside to cool, then peel.

2 tablespoons white vinegar
Sea salt and freshly ground black pepper
4 eggs
8 slices thick-cut bacon, cut into 1/2-inch pieces
2 shallots, thinly sliced
5 tablespoons extra-virgin olive oil, plus more for drizzling
1 tablespoon Dijon mustard
2 tablespoons red wine vinegar
1/2 lemon, juiced
2 tablespoons chopped chives, plus more for garnish
1 large head frisee lettuce, torn into bite size pieces

Steps:

  • Fill a large skillet with water, bring it to a boil, and add the vinegar and a large pinch of salt. Reduce the heat until the water is just barely bubbling. Crack each egg into a small bowl and carefully slide the egg into the water. Cook until the eggs are set, about 3 1/2 to 4 minutes. Remove the eggs with a slotted spoon and dab the bottom with paper towels to dry them off; set aside and keep warm.
  • Put the bacon and shallots into a cold skillet with a tablespoon of olive oil and cook over medium heat until the bacon is browned and crisp; be careful not to let it burn. Remove with a slotted spoon, drain on paper towels, and set aside. Meanwhile, get a jar with a tight fitting lid. Add the mustard, remaining 4 tablespoons olive oil, red wine vinegar, and lemon juice. Shake well to combine the ingredients, add the chives, taste, and season with salt and pepper.
  • Put the frisee into a large bowl and toss it with the dressing the cooked bacon and shallots. To serve, place a large mound of salad onto a plate and top with a poached egg. Garnish with some chives and a drizzle of olive oil.

1/2 pound thick-cut bacon, cut into small strips
1/3 cup store-bought honey Dijon dressing
1 tablespoon lemon juice
2 heads frisee
Salt and fresh ground black pepper
4 eggs
1 apple (crisp variety such as Gala or Jonagold), thinly sliced
1/4 cup slivered almonds

Steps:

  • Preheat a skillet over medium-high heat. Fry the bacon until browned and crisp. Transfer to a paper towel-lined plate to drain. Reserve 2 tablespoon of bacon drippings for the salad dressing, keep the remaining drippings in the pan to cook the eggs.
  • In the bottom of a large salad bowl, whisk together the bacon drippings, honey Dijon dressing and lemon juice. Tear the heads of frisee into bite size pieces and place in the bowl. Season with salt and pepper and toss to coat the ingredients.
  • Heat the pan the bacon was cooked in and fry eggs to over easy consistency. Season each with a bit of salt and pepper. Divide the salad among 4 plates. Top each with some of the apple slices, almonds, bacon and a fried egg.

1 1/2 teaspoons honey
1/4 cup extra-virgin olive oil
4 large heads of frisée (about 1 1/2 pounds), torn into bite-sized pieces
1 pound medium carrots, preferably rainbow, shaved lengthwise with a vegetable peeler
2 cups flat-leaf parsley leaves with tender stems
1 1/2 cups green seedless grapes, quartered, divided
Flaky sea salt
Freshly ground black pepper

Steps:

  • Combine shallot, lemon zest, lemon juice, and 1/4 tsp. kosher salt in a medium bowl. Let stand 10 minutes.
  • Meanwhile, toast pistachios, 1 Tbsp. olive oil, and 1 tsp. za'atar in a small skillet over medium heat, stirring occasionally, until fragrant, about 3 minutes. Season with 1/4 tsp. kosher salt. Transfer to a small bowl; let cool and set aside.
  • Add honey and 1 tsp. za'atar to lemon mixture and whisk to combine, then whisk in 1/4 cup extra-virgin olive oil in a slow, steady stream.
  • Place frisée, carrots, parsley, 3/4 cup grapes, and half of the pistachios in a large bowl and drizzle with vinaigrette. Gently toss until frisée is evenly dressed; season with sea salt and pepper. Top with remaining pistachios and 3/4 cup grapes.
