Steps:
- Melt the butter in a skillet and saute the onions, celery and mushrooms until soft (about 7 to 8 minutes).
- Mix the mayonnaise and cream.
- Mix everything together in a casserole and bake at 350°F, covered, for 30 minutes.
- Uncover and brown, if desired.

- Preheat the oven to 400 degrees F. Put the shallots (in their skins) on a small baking dish, roast until soft, about 30 minutes. When cool enough to handle, skin and coarsely chop the shallots. Set aside.
- Bring a medium-large saucepan of water to a boil over high heat. Add kosher salt, to taste. Add the green beans, and cook, uncovered, until crisp-tender and bright green, about 3 minutes. Drain the beans in a colander and rinse with cold water. Transfer the beans to a large bowl.
- In the same saucepan, heat the oil over medium heat. Add the mushrooms, season with 1 teaspoon salt, cook, stirring occasionally, until browned, about 7 minutes. Add the mushrooms to the beans.
- Melt the butter in a small saucepan over medium heat. Add the flour and cook, stirring with a wooden spoon, until golden, about 2 minutes. Slowly whisk in the broth, increase the heat to high, and bring to a boil. Add the shallots, 1 teaspoon of the thyme, and remaining 1/2 teaspoon of salt. Reduce the heat to maintain a simmer and cook until thickened, stirring occasionally, about 5 minutes. Pour the sauce over the vegetables and stir to combine evenly.
- Spray a 2-quart baking dish with vegetable cooking spray. Transfer the vegetable mixture to the pan. Add the remaining 2 teaspoons of thyme to bread crumbs and scatter over the vegetables. Bake uncovered until the sauce bubbles and the crumbs brown, about 20 minutes.

Steps:
- Drain the green beans well and pat dry with paper towels. Too much liquid on the beans will thin the sauce.
- Place the heavy cream and cream cheese in a pan over medium heat.
- Whisk until the cream cheese softens and the sauce is smooth.
- Add the dried onions and soy sauce.
- Continue to stir until the mixture thickens and coats the back of a spoon.
- Add the green beans and simmer, stirring often, about 5 minutes.
- Sauce will be very thick and cling to the green beans. If not continue to simmer and stir.
- Taste and add pepper as needed.
- Place the green beans in 2 individual cast iron casseroles OR a small, heat proof dish.
- Sprinkle with cheese.
- Broil, watching carefully, until the cheese bubbles and turns golden.

This is my absolute favorite version of green bean casserole. I've brought this to many potlucks and I am always asked for the recipe. My mushroom-phobic DH even loves this dish!

Steps:
- Preheat oven to 350°F Cut green beans to to desired serving size.
- Boil green beans until cooked to desired softness.
- In a skillet, melt butter & add onions, cook until tender.
- Add mushrooms & cook for 5 minutes, then add ham & cook until just browned.
- Add soup, milk, cayenne pepper, & green beans to the skillet & mix all together to coat well.
- Grease a 13" x 9" casserole dish & add mixture. Sprinkle cheddar cheese on top.
- Bake uncovered for 20 minutes. Remove from oven & add crispy onion topping, then bake for an additional 5 minutes or until onions are golden.

- In a large pot steam or par boil the sliced green beans for 3-4 minutes. Place in an ice water bath to stop the cooking process, drain, and set aside.
- In a frying pan, cook the bacon until lightly crispy. Remove and place on a paper towel to remove the grease and set aside for later. Heat the remaining oil to medium-high heat and add in the sliced onions or shallots that will be used for the topping. Cook until crispy and remove and set aside.
- In the same pan, cook the sliced mushrooms, remaining diced onion, and garlic in the bacon fat (about 5-6 minutes). Add the fresh thyme, rosemary, and season with salt and pepper. Stir in the coconut aminos/ soy sauce and Worcestershire sauce.
- Next, sprinkle in the xanthan gum and mix it in with mushroom mixture and stir until dissolved. Finally, pour in the stock and heavy cream. Mix with a spatula or whisk until the mixture begins to thicken. It should coat the back of a spoon when it has reached the right thickness. Be patient and avoid adding more xanthan gum (this will make the mixture slimy and not appetizing). Next, stir in the cheese slowly until it is mixed in (this will add some thickness to the sauce as well).
