Tasty, spicy Caribbean chicken curry recipe with rice and peas makes a great easy curry recipe that will please the whole family

- To make this chicken curry, heat the oil in a medium size saucepan over a medium heat and add the onion, garlic, ginger and chilli. Cook for 3 - 4 mins.
- Add the chicken and cook for 5 mins, or until sealed and lightly browned.
- Add the curry paste and cook for 1 min, add 3/4 of the coconut milk and simmer over a moderate heat for 20 mins.
- Stir in the mango and coriander, and simmer for a further 5 mins.
- While the curry is cooking, prepare the rice and peas. Cook the rice as per pack instructions. Then, 5 mins before the end of cooking, add the coconut milk and red kidney beans.
- Drain and pile the rice onto individual plates, garnished with the spring onions and top with the Caribbean chicken curry.

CURRY CHICKEN WITH COCONUT PEAS AND RICE
Steps:
- For the chicken: Drizzle the chicken breasts with some olive oil in a large bowl. Mix the curry powder, onion powder and cayenne together in a small bowl. Rub the chicken breasts with the seasoning mixture. Add the minced garlic to the chicken, mixing so the garlic is distributed throughout the chicken. Marinate the chicken, spices and garlic together for 30 minutes.
- Heat a large Dutch oven over medium-high heat and add 1/4 cup olive oil. Sprinkle the chicken with kosher salt and sear it, in batches, until golden brown on each side. Remove the chicken to a plate. Add the sliced onions and diced potatoes and saute until the onions turn translucent, about 5 minutes. Then add the chicken back in along with the chicken stock. Bring to a boil and lower to a simmer. Cover and simmer until the chicken is cooked through, 45 minutes to an hour.
- For the rice: Melt the butter in a medium saucepan over medium-high heat. Then add the rice, coconut milk, granulated garlic, onion powder, thyme, bay leaves and 2 cups water. Cook, uncovered, until the rice begins to peek through and begins to absorb the moisture. Then, stir in the chickpeas. Reduce to a simmer, cover and cook until the rice is tender, about 15 minutes. Season with salt.
- Serve the chicken curry over the coconut peas and rice.

- Heat the oil in a very large non-stick frying pan and cook the onions for 5 mins or until soft. Meanwhile, coat the chicken thoroughly with the thyme, curry powder and allspice. Add to the pan and briefly brown the chicken, then tip in the tomatoes, chilli, garlic and bouillon. Pour over 450ml water, cover and simmer for 30 mins or until the chicken is tender.
- Meanwhile, tip the rice into a medium-sized pan with the onion, garlic, thyme and bouillon. Pour in 600ml water, cover and cook for 25 mins or until the liquid has been absorbed and the rice is tender. Check toward the end of the cooking time to ensure it isn't starting to catch on the pan. Stir in the beans and heat through. If you're following our Healthy Diet Plan, serve half the rice with half the chicken (saving the leftovers for a second meal later in the week). Otherwise you can serve four portions, scattered with a few extra thyme leaves, if you like.

UNCLE RICK'S CARIBBEAN CHICKEN CURRY (REVISED)
This curry is a spice-lover's dream...and a real crowd-pleaser. It's wonderful comfort food on a cold fall or winter's day.

Steps:
- Cut chicken thighs into large bite-sized pieces and set aside.
- Peel (or, wash and leave un-peeled) and dice potatoes into 1/2 inch chunks and set aside.
- Peel and finely chop onion and set aside.
- Add oil, onions, and ginger puree to a"cold", large, non-stick Dutch oven pan or large pot and set heat to medium.
- Stir-fry for about 8-10 minutes or until the onion is golden and even slightly browned.
- Add garlic and stir-fry for another 3 minutes being careful not to burn the garlic.
- Add 3 heaping Tbs. of the curry powder to the pot and stir in with the garlic, ginger, salt, and onions for 1 minute more.
- Add 3/4 cup of the chicken stock and bring to a low boil.
- Add the chicken and stir an additional few minutes to 'sear' the chicken.
- Place the diced potatoes on top of the chicken pieces and then add the remaining chicken stock to the pan 1 cup at a time as necessary until the potatoes are"covered" by the liquid.
- Add more curry powder if desired ( -- and I always desire) along with the garam masala and the cinnamon stick.
- Mix in gently.
- Make sure that the potatoes are still "covered" by the liquid.
- Bring heat down to medium low.
- Cook uncovered until the potatoes are fork tender (about 20 minutes).
- Do not overcook the chicken or potatoes!
- After 15 minutes (approx.), turn heat down to low and add the rest of any additional curry powder that you desire, the cayenne, more salt (you'll find that the potatoes have taken a lot of the salt away and the sauce may now be a bit bland).
- Remove cinnamon stick, mix well, and continue to cook on low for an additional 5-10 minutes.
- Turn off heat and taste.
- Adjust seasonings if needed.
- If the curry sauce is too thin at this point, simply remove some of the potatoes from the pot and mash them with a fork in a small bowl then return the mashed potatoes to the pot and stir in gently.
- The mashed potato will now act as a sauce thickener.
- Serve on a white plate atop basmati or long grain rice.
- Garnish the white plate with a dusting of paprika around its edge.
- Sprinkle toasted shaved almonds on top of the curry.

- NOTE: Homemade chicken stock honestly DOES make a difference!
- And... by the way --.
- This dish is even better the next day -- and the day after that.

- Wash the rice throughout. Put it in a saucepan and add water just above the rice level. Add salt to taste, 1 teaspoon black pepper, 1 tablespoon butter, ½ tin coconut milk and 1 tin black beans. Bring it to boil and reduce the heat to low. Let it simmer for 30-40 minutes.
- While the rice is cooking, in a large pan, heat the olive oil over medium heat and add the chicken. Add the honey and cook until it's brown in colour. Pour in enough water to cover it.
