A quick and simple roast fish dish that's packed with flavour and moisture - perfect for batch cooking

140g Greek yogurt
2 tbsp Dijon mustard
zest 1 lemon
1 tbsp chopped dill
1 tbsp small caper , lightly chopped
8 portions or 1 side of fresh salmon , scaled (see tips below if using whole)
lemon wedges, to serve

Steps:

  • Mix the yogurt with the mustard, lemon zest, dill and capers and season with pepper. Now use to coat the salmon really well.
  • If serving now, either grill the salmon on foil for 6-8 mins (there is no need to turn), or barbecue for 3-4 mins on each side, preferably in fish grill to make turning easier. Serve with new potatoes and lemon wedges, alongside green veg and salad leaves.

1 yellow onion, diced
1 tablespoon pureed garlic
1 yellow pepper, diced
1/2 cup white wine
2 cups bechamel, recipe follows
1 cup cream
8 ounces smoked salmon
4 tablespoon capers, plus 2 tablespoons, for garnish
Salt and pepper
1 1/2 limes, juiced
1 tablespoon fresh chopped dill
6 ounces cooked pasta
3 tablespoons butter
3 tablespoons flour
1 quart half-and-half, warmed
1 onion, halved
2 cloves
1 bay leaf

Steps:

  • Saute the onions, garlic, and yellow peppers. Deglaze the pan with white wine. Add the bechamel and cream, along with the smoked salmon and 4 tablespoons capers. Slowly bring to a boil. Season, add the lime juice and fresh dill, and serve over 6 ounces cooked pasta of choice. Garnish with 2 tablespoons deep fried capers.
  • Melt the butter. Add all the flour at once and cook until the texture is sandy. Slowly add the half-and-half, mixing well. Add the onion, cloves, and bay leaf. Simmer for approximately 45 minutes, until the floury taste is cooked out and the sauce evenly and thickly coats the back of a spoon.

Saute the onions, garlic, and yellow peppers. Deglaze the pan with white wine, add the bechamel, cream, smoked salmon, and 4 tablespoons capers. Slowly bring to a boil.
Season to taste.
Add the lime juice and fresh dill just before serving over pasta. Garnish with deep fried capers.

  • Melt the butter add all the flour at one time and cook until a sandy texture is achieved. Slowly add the half-and-half, mixing well, and bringing to a boil after each addition. Add the onion with the bay leaf and clove, and simmer for 45 minutes.
  • Strain before using.

1 kg thawed salmon fillet, with skin on 1 side (may substitute with steelhead trout)
1 -1 1/2 tablespoon pickled capers (can be found in grocery store located in same aisle as pickles)
1 tablespoon chopped dill weed (use fresh or frozen but not dried)
1/4 cup thinly sliced onion
1 tablespoon lemon juice or 1/2 fresh lemon, peeled and sliced
salt and pepper

Steps:

  • Pre-heat oven to 350 degrees fahrenheit.
  • Remove any visible bones and cut off the head and tail (if it hasn't already been done for you) If using a poacher place the tray in the poacher, add 1/4 cup water and place your salmon in the tray skin side down.
  • If you do not have a fish poacher (how many of us do?) you can use any oven safe pan large enough to hold your fish.
  • Just crumple and crinkle a medium sized sheet of tin foil and place your fish on the foil skin side down.
  • Add enough water to just come to the edge of the foil without spilling onto the fish (approx 1/3 cup).
  • On top of the fish sprinkle all ingredients.
  • Cover with lid or tin foil.
  • Cook for 12-20 min's.
  • For RARE fish, cook just until white liquid emerges from fish (this is the cooked fish oil).
  • It will be pinky white on the outside and peachy pink inside.
  • For more well done fish, cook until fish is a pinky white color all the way through.
  • Place on a platter to serve.
  • Leave onions, capers and dill on the fish.
  • Slice lemons on the side for those who like fresh lemon juice.
  • This salmon is great served with rice and steamed veggies or a salad.

8 Basic Buckwheat Crepes

Steps:

  • Score flesh side of salmon fillet at 1 1/2-inch intervals 1/2 inch deep in crisscross pattern; sprinkle with salt and pepper. Heat large nonstick skillet over medium-high heat. Add salmon, skin side down. Cook until skin is lightly browned, 3 minutes. Turn salmon over and partially cook until just warm, 2 to 3 minutes. Transfer to plate. Cut salmon, including skin, into 1/2-inch pieces; cool.
  • Heat same skillet over medium-high heat. Add 1 tablespoon butter, green onions and 2/3 of smoked salmon. Sauté 2 minutes; add reserved salmon. Toss until heated through. Remove from heat; add lemon juice, capers, and chopped dill. Season with salt and pepper.
  • Melt 1 teaspoon butter in medium skillet over medium heat. Working with 1 crepe at a time, add to skillet and heat through. Spoon 1/8 of salmon mixture onto bottom third of each crepe. Roll up and place on plate. Garnish with reserved smoked salmon and dill sprigs. Repeat with remaining butter, crepes, and salmon.

2 tablespoons fresh curly-leaf parsley (minced)
1/2 teaspoon dried tarragon
1 tablespoon fresh lemon juice
2 tablespoons capers
16 ounces salmon fillets

Steps:

  • Mix the mayonnaise, parsley, tarragon, lemon juice and capers and chill.
  • Preheat oven to broil. Place the salmon fillets on a parchment-lined cookie sheet.
  • Place under broiler and cook for about 5 minutes.
  • Top with two tablespoons of mayonnaise and return to broiler for another 5 minutes until the salmon is just cooked through.
