Steps:
- Toast the whole spices in a small pan until they are aromatic and have turned a shade or two darker. Don't be tempted to skip this stage, as it really enhances the flavours.
- Tip into a spice grinder (or use a pestle and mortar), then add the ready-ground spices and dried herbs if required, and crush to a fine powder. Store in a sealed jar for up to six months.

- Note: You could"roast" the whole spices a bit for a more intense flavor in a dry frying pan-- Watch closely to prevent spices from burning.

- Gather the ingredients.
- In a dry skillet or wok, toast the Sichuan peppercorns by shaking the pan over low to medium heat until the aroma of the peppercorns is released. This will take around 3 minutes.
- Grind the toasted peppercorns and the star anise in a blender, pepper mill, or spice grinder .
- Pass the blended seasonings through a fine-mesh strainer so you are left with an even consistency.
- Mix in the ground cloves, ground cinnamon, and ground fennel seeds.
- Place the mixture back into the blender, mill, or spice grinder and grind the spices until very fine.
- Store in an airtight container and keep in a dark, cool space until use.

- Toast the peppercorns in a hot pan until they are aromatic, about 1 minute. Put into an electric spice grinder along with the star anise, cloves and fennel seeds and process into a powder. Add the cinnamon and process for a few seconds to combine. Store in an airtight jar.

FIVE-SPICES PORK TENDERLOIN
This is one recipe I tried and was delicious. This is from the issue of March 2002 of Coup de Pouce.

Steps:
- In a small bowl, with a whisk, mix hoisin sauce, honey, ketchup, garlic and five-spice powder.
- Brush each tenderloin with about 1 tablespoon of the glaze (set aside remaining glaze).
- Put pork tenderloins on a grill in a broiler pan. Cook in a preheated oven at 375 F for 15 to 20 minutes or until the internal temperature reaches 160 F or pork tenderloins are cooked but lightly pink inside.
- Meanwhile, in a small saucepan, mix the reserved glaze and water. Cook at medium-low, stirring from time to time, for 10 minutes or until the sauce has lightly reduced.
- Remove the pork tenderloins from the oven and let rest 2 to 3 minutes.
- With a sharp knife, cut pork tenderloins in fine slices and distribute in 4 plates. Salt, pepper and spread with warm sauce. It's ready to serve.

FIVE SPICE
At once musky and sweet, with a pronounced kick, five spice is traditionally made from equal parts cinnamon, cloves, fennel seeds, star anise and peppercorns (usually Sichuan or white). This one, adapted from Kian Lam Kho, the author of "Phoenix Claws and Jade Trees: Essential Techniques of Authentic Chinese Cooking" (Clarkson Potter, 2015), includes Sichuan peppercorns to give the mix a characteristically numbing, tingly sensation on the tongue known as mala. Once the spices are toasted and mixed, the blend can be used both whole (simmered into stews, braises and soups) and ground (added to sauces, roasted meats and vegetables). Or, stir some salt into the ground blend and use it as a piquant table condiment: It's wonderful sprinkled on everything from barbecued meats to scrambled eggs.

- Whisk together the marinade ingredients, put the chicken into a dish, then pour over the marinade, mixing to coat. Cover, then chill for at least 20 mins, or up to a day if you have time.

FIVE-SPICE APPETIZER MEATBALLS

- In a large bowl combine egg white, bread crumbs, five-spice powder, and 1/2 teaspoon salt. Add beef; mix well.
- Shape into 48 1" meatballs.
- Place in a 15"x10"x1" baking pan.
- Bake in a 350 oven for 15 to 20 minutes or until no pink remains in center of meatballs.
- Drain.
- Meanwhile, in a large saucepan stir together orange juice, honey, cornstarch, soy sauce, and ginger.
- Cook and stir until thickened and bubbly.
- Cook and stir for 2 minutes more. Add sweet pepper and meatballs in saucepan ; cook and stir until heated through.
- Keep warm in a fondue pot or chafing dish.
- Serve with toothpicks.
