1 cup all-purpose flour
2 tablespoons onion powder
2 tablespoons garlic powder
1 teaspoon cayenne
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
4 pork chops, 3/4-inch thick, bone-in
1/4 cup olive oil
1 cup chicken broth
1/2 cup buttermilk
Chopped fresh flat-leaf parsley, for garnish

Steps:

  • Put the flour in a shallow platter and add the onion powder, garlic powder, cayenne, salt, and pepper; mix with a fork to distribute evenly. Pat the pork chops dry with paper towels to remove any moisture and then dredge them in the seasoned flour; shaking off the excess.
  • Heat a large saute pan or cast iron skillet over medium heat and coat with the oil. When the oil is nice and hot, lay the pork chops in the pan in a single layer and fry for 3 minutes on each side until golden brown. Remove the pork chops from the pan and add a little sprinkle of seasoned flour to the pan drippings. Mix the flour into the fat to dissolve and then pour in the chicken broth in. Let the liquid cook down for 5 minutes to reduce and thicken slightly. Stir in the buttermilk to make a creamy gravy and return the pork chops to the pan, covering them with the sauce. Simmer for 5 minutes until the pork is cooked through. Season with salt and pepper and garnish with chopped parsley before serving.

1 cup long grain white rice
4 pork chops, bone in
Salt
One 10-ounce can beef broth, plus more if needed
4 onion slices, separated into rings
1/4 teaspoon pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • In a medium skillet, melt the butter over medium-low heat. Add the rice and saute until it is light brown, about 5 minutes.
  • Spread the rice in a 9- by 13- by 2-inch casserole. Sprinkle the pork chops with salt and arrange them on top of the rice. Pour the broth and 2/3 cup water over the chops. Spread the onion rings over the chops and sprinkle them with the pepper. Cover the dish with aluminum foil and bake until the pork chops are tender, about 45 minutes.
  • Change the oven to broil, add a bit more broth if the rice is dry and return the dish to the oven for a couple of minutes until the pork is browned.

This is DH's recipe. It is simple comfort food and is very versatile. You can use chicken quarters in place of chops or chicken broth in place of water. Feel free to experiment with different herbs. We never make this the same way twice. A side note: I would recommend using a bone in, fattier cut of pork and not loin chops in this recipe.

  • Stir together soup, water, rice and 1/4 teaspoons pepper in a 3 quart casserole.
  • Add onions.

2 lbs pork chops
1 1/2 tsp salt
1 tsp freshly cracked black pepper
3/4 cup all purpose flour
2/3 cup vegetable oil (I used corn)
1 large onion (chopped)
4 cups chicken broth
1 cup half & half
1 tbsp minced garlic
1 tbsp celery flakes

Steps:

  • Season the pork chops with 1/4 tsp freshly cracked black pepper, 1/2 tsp of salt.
  • Toss the all purpose flour into a large freezer bag, then toss in the pork chops.
  • Shake the bag until the pork chops are well coated.
  • Remove the chops from the bag, and shake off the excess flour.
  • DO NOT THROW AWAY THE EXCESS FLOUR.
  • Pour the vegetable oil into a skillet, and warm it up over medium heat.
  • Once the oil is hot, start adding in the pork chops.
  • Fry each side of the chops for about 30 seconds, then remove from the oil, and set to the side.
  • Once all the chops are down, toss in the onions, and fry until they are translucent.
  • Sprinkle in the flour, and stir until the onions are coated with flour.
  • Cook until the flour turns golden brown.
  • Pour in the chicken broth, and stir to prevent lumps.
  • Next, pour in the half & half, and stir.
  • Add in the minced garlic, celery flakes, and remaining salt & pepper.
  • Stir, until everything is well incorporated, and turn the heat off.
  • Slow cooker instructions
  • Place the pork chops into the slow cooker.
  • Pour the gravy all over the pork chops.
  • Place the lid on the slow cooker, and cook on high for 3 hours.
  • Oven instructions
  • Place the pork chops into a 9 x 15 bake dish.
  • Pour the gravy all over the pork chops.
  • Cover the dish with a lid or aluminum foil.
  • Bake on 350 F for 1 hour and 25 minutes.

1 large onion, sliced
1 green bell pepper, sliced
1 red bell pepper, sliced

6 large red potatoes
6 tablespoons salted butter
Pinch kosher salt

Steps:

  • Heat 2 tablespoons butter plus 2 tablespoons oil in each of 2 skillets over medium heat.
  • Put the onion and pepper slices in one skillet and cook until browned and caramelized, about 10 minutes.
  • Meanwhile, whisk together the seasoned salt, lemon pepper, cumin, cayenne pepper, salt, black pepper and 1/2 cup of the flour in a pie plate. Dredge the pork chops in the flour mixture.
  • Fry the chops in batches in the other skillet until well browned, 2 to 3 minutes per side. Remove the chops from the skillet and set aside.
  • To this skillet, add the remaining 3 tablespoons butter and 3 tablespoons flour. Stir and cook until the roux gets some color on it, about 2 minutes. Whisk in the stock a bit at a time, working out all the lumps, then add the cream. Add the onions and peppers, coating them in the sauce.
  • Serve with plenty of sauce and the caramelized onions/peppers and accompany with the Smashed Red Potatoes.
  • Put the potatoes in a glass or microwavable bowl and microwave according to the manufacturer's instructions, 5 to 10 minutes. Carefully remove the bowl and smash the potatoes with a fork. Add the butter, salt and pepper, then smash again. Cover with a towel until ready to serve.

4 thick-cut boneless pork chops ((about 2 lbs. total))
1 tablespoon butter
1 tablespoon vegetable oil
¾ cup water
½ cup diced celery
2 tablespoons dry onion soup mix ((half of a 1-oz packet))
¼ teaspoon garlic powder
4 ounce can mushrooms, drained
¼ cup all-purpose flour
1 tablespoon dried parsley
2/3 cup whole milk or half-and-half
Cooked rice, for serving
Optional garnish: chopped fresh parsley

Steps:

  • Pat pork chops dry with a paper towel. Season liberally with salt and pepper on all sides.
  • Heat butter and oil in a large skillet over medium heat. Brown pork chops on both sides (about 2-3 minutes per side). Remove pork chops from the skillet; drain fat off the pan, but leave browned bits in the bottom (you don't need to wipe it clean).
  • Add water, celery, onion soup mix, and garlic powder; stir to combine, scraping up the browned bits from the bottom of the pan to add flavor to the sauce. Return pork chops to the skillet; cover, and cook over low heat for about 15-20 minutes (or until the pork chops reach an internal temperature of 145 degrees F). Remove chops from the skillet and set aside on a plate.

1 pound (500g) bone-in pork chops,* (about 3/4-1 inch thick.)
1/2 tablespoon onion powder
1/2 tablespoon garlic powder
1/2 teaspoon cayenne
1 teaspoon seasoning salt
1/2 teaspoon fresh cracked black pepper
2 teaspoons olive oil
1/2 cup all-purpose flour
2 tablespoons olive oil
1 tablespoon unsalted butter
1 tablespoon unsalted butter
1 large onion, (thinly sliced)
pinch of salt
4 cloves garlic, (minced)
1 teaspoon fresh chopped thyme
1/2 cup chicken broth, (divided)
3/4 cup buttermilk or heavy cream

Steps:

  • Pat the pork chops dry with paper towels to remove any moisture. Season pork chops with garlic powder, onion powder, cayenne, seasoning salt, pepper and olive oil.
  • Dredge each chop in the flour; shake off the excess and KEEP THE REMAINING FLOUR.
  • Heat 2 tablespoons olive oil and 2 tablespoons of butter in a skillet or pan over medium heat. When hot, fry the pork chops in a single layer on each side until golden browned, about 3-4 minutes per side.
  • Remove pork chops from the pan and keep warm.
  • In the same pan, heat 1 tablespoon of butter over medium heat.
  • Add in sliced onions and add a pinch of salt. Cook while stirring occasionally, until soft and caramelized, about 10 minutes. (Add in 1 tablespoon of the chicken broth if the pan becomes too dry.)
  • Add the garlic and thyme; cook until fragrant, about 30 seconds.
  • Add 2 tablespoons of the remaining flour to the pan. Mix the flour into the onions and cook to dissolve, about 2 minutes.
  • Pour in the chicken broth, scraping up the browned bits from the bottom of the pan. Let the liquid reduce and thicken slightly, about 2 minutes.
  • Whisk in the buttermilk (or cream) and simmer for 1-2 minutes until thick and creamy.
  • Return the pork chops to the pan. Coat them in the sauce and let simmer until the pork is completely cooked through, about 5 minutes (or until the pork is cooked to your desired doneness). 4 cups thinly sliced onions
1/2 teaspoon salt

4 bay leaves
3 1/2 cups chicken stock
3/4 cup plus 2 tablespoons water
1 pound smoked sausage or andouille, cut crosswise into 1-inch slices
1 pound russet potatoes, peeled and cut into 1-inch cubes
Steamed white rice or rice pilaf, for serving
8 thinly cut (about 1/2-inch thick) pork chops (about 3 pounds total)
2 teaspoons Essence, recipe follows
1/2 cup olive oil
2 1/2 tablespoons paprika

1 tablespoon onion powder

  • Season both sides of the chops with the Essence.
  • Heat the olive oil in a large, heavy pot or Dutch oven over high heat. Add the pork chops, 3 or 4 at a time, and lightly brown, about 2 minutes per side. Remove the pork chops and transfer to a platter. Set aside.
  • Reduce the heat to medium. Add the flour and stir constantly until the roux is the color of peanut butter, about 4 minutes. Add the onions, salt, and black pepper. Cook, stirring, until the onions are slightly soft, about 5 minutes. Add the garlic, bay leaves, chicken stock, and water and bring to a boil. Return the pork chops to the pot. Reduce the heat to medium-low, cover, and simmer for 45 minutes. Add the smoked sausage and the potatoes. This meal is definitely worth the wait... When it's complete the pork chops are so tender and perfectly seasoned...Ohhh and the gravy tastes so good on a bed of rice. I came up with this on my own as an easy put together meal with ingredients that you have right in your home...Baking this in a glass dish allows you to see the juices bubbling as it cooks and the gravy thickens.

4 -5 center-cut pork chops
1 (10 1/2 ounce) can Campbell's Cream of Mushroom Soup
1 tablespoon flour
water

Steps:

  • Preheat oven to 375.
  • Washed your pork chops, pound them with a good meat tenderizer mallet, not to flatten.
  • Add a little meat tenderizer seasoning as well as your own choice of seasonings to taste to both sides of meat. For mine I use Garlic Powder, Lemon Pepper, Soul Seasoning, Mrs. Dash (No Salt) Original and Table Blend, Onion Powder and Pepper.
  • Place seasoned pork chops in a glass 13x9 pan.
  • Add enough water to the pan not to cover the meat.
  • Tightly cover with foil.
  • Bake in oven until meat is tender (you can easily pierce with a fork).
  • Check about in 1 1/2 hours, if not tender recover tightly and cook checking every 30 minutes.
  • Once tender remove about 1/2 the liquid.
  • Pour can of cream of mushroom into a bowl.
  • Take the flour and add a little cold water to make a rue.
  • Stir rue into cream of mushroom soup- this will thicken the soup as it cooks.
  • Pour mixture on top of pork chops mixing in with the remaining liquid.
  • Recover and cook additional 30 minutes for gravy to bubble around chops.
  • Gravy will thicken more once removed from oven and allowed to rest.
  • Serve with rice and veggies.

  • Preheat the oven to 375°F.
  • Heat the vegetable oil in an ovenproof skillet with a lid over medium-high heat. Season the pork chops with the salt and pepper. Cook, turning once, until brown on both sides, 6 to 8 minutes total.
