MANDARIN ORANGE CHICKEN DELIGHT
This is a light and easy chicken dish with a brightly-flavored sauce of Mandarin orange juice, lemon juice, soy sauce, and honey. The chicken is then served with the oranges and topped with slivered almonds and chow mein noodles on a bed of rice. The whole thing takes about 15 minutes to prepare and about 30 minutes to cook, so long as you defrosted the chicken ahead of time. Enjoy!

Steps:
- Make the sauce by combining reserved orange juice with honey, soy sauce, lemon juice,, and ginger in a small bowl.
- Blend well and set aside.
- Combine flour with salt and pepper in a shallow pie pan.
- Set aside.
- Trim off any fat and white veins from chicken breasts and slice each breast into about three strips.
- Dry between double layers of paper towels.
- Heat butter and oil in large skillet or wok over medium-high heat.
- Coat all sides of chicken strips in seasoned flour and brown lightly in skillet.
- Reserve browned pieces on a plate lined with paper towels.
- When all chicken is browned, pour sauce into wok or skillet.
- Place chicken in the sauce and turn to coat.
- Reduce heat to medium-low, cover, and simmer for 20 to 30 minutes, or until chicken is tender and white throughout and sauce begins to caramelize on the chicken.
- Turn several times during cooking to coat evenly with sauce.
- Meanwhile, prepare rice.
- When chicken is done, remove from heat and quickly stir in the Mandarin oranges.
- Sprinkle with your chosen garnish and serve over rice.

- Preheat the oven to 325°F.
- Lightly spray an 8x8-inch baking dish (metal or glass is fine).
- In a small bowl combine the 1¾ cups of crushed graham crackers, 8 tablespoons of melted butter, and 1 tablespoon of sugar.
- Press the graham cracker mixture in the bottom of the baking dish.
- Bake for 10 minutes. Allow the crust to completely cool.
- Using either a stand mixer or a handheld mixer, cream together the softened butter, cream cheese, and vanilla. Carefully add the powdered sugar a ½ cup at a time. Mix until the cream cheese mixture is smooth.
- Evenly spread the cream cheese filling over the completely cooled crust.
- Using the same bowl as the one used for the filling, gently fold the pineapple into the whipped topping.
- Gently spread the whipped topping over the cream cheese layer.
- Add the additional 1 tablespoon of crushed graham crackers to the top as garnish.
- Place the baking dish in the refrigerator for 4 hours to ensure the dessert is properly set.
- Keep refrigerated until serving.

This was a holiday tradition for many many years in my family. My dad's mother; Mammy first made this that I ever knew of as a kid. My mother fancied it up over the years adding maraschino cherries, coconut and at times mandarin oranges together to the base recipe. I give you the original recipe in it's original version. This is light yet rich and yummy at the same time! The marshmallows just begin to melt slightly and mix with the cream. I can remember huge bowls of this consumed after Thanksgiving dinners as a child and then always having it at holiday time year after year including now.

- Combine pineapple, a bit of it's juice; approximately 1/4 cup and marshmallows in a large bowl.
- Refrigerate overnight or at least 8 hours. Overnight is the best.
- About 2-6 hours prior to serving, drain any excessive liquid though some should remain. Whip the cream and fold into marshmallow mixture.
- Refrigerate before serving. This holds up very well in the fridge for days without the cream separating. The cook time is the refrigeration time.
