TERIYAKI MEATBALLS RECIPES

Steps:
- Preheat oven to 375 degrees then coat a baking sheet with cooking spray. In a large mixing bowl, gently mix ground beef or chicken and pork until well combined. In a separate small bowl, mix beaten egg, green onion, garlic, ginger, soy sauce and hot sauce until well combined.
- Add egg mixture and panko breadcrumbs to the meat and mix as gently and as little as possible to bring everything into a homogenous mixture. Form golf ball-sized meatballs using a cookie scoop then place on prepared baking sheet. Bake 15-18 minutes just until meatballs are barely cooked through.
- Meanwhile, place a large skillet over medium-high heat. Add soy sauce, water, ginger, garlic, brown sugar and honey then whisk until completely combined. In a separate small bowl or cup, stir together the cornstarch and ¼ cup of cold water.
- Bring liquid to a boil then remove from heat. Whisk cornstarch mixture into sauce then return to heat. Return liquid to a boil, whisking constantly to avoid lumps. Once liquid reaches a boil and has thickened nicely, reduce heat to low and let sauce simmer.
- Transfer meatballs from baking sheet into sauce, turning or stirring to coat in sauce. Allow meatballs to simmer in the sauce until they are heated through then garnish with sliced green onions or sesame seeds.

HAWAIIAN TERIYAKI MEATBALLS (VIDEO)

- Prepare the meatball mixture. Combine the ground meat, seasonings and spices, egg and chives in a large bowl. Use your hands to knead the ingredients together. Add the bread crumbs last and mix just until combined. Use a scoop to measure out the meatballs, then round the meat with your hands into balls.
- Preheat a large frying pan and add a drizzle of olive oil. Fry the meatballs over medium heat, turning every minute until browned on all sides. Turn heat down to a medium-low, cover the pan with a lid and cook for about 10 minutes, or until meatballs are cooked all the way through. Remove the meatballs from the pan and set aside.
- Into the same pan, add water first to deglaze the pan. Then add the remaining sauce ingredients: soy sauce, brown sugar, sesame seed oil, garlic, ginger and pineapple. Bring the mixture to a simmer over medium heat and cook about 7 to 8 minutes, until garlic and pineapple is tender. In a small bowl, combine the cornstarch with 2 tablespoons of water. Add to the sauce and cook until thickened, about 1 minute.
- Return the meatballs back into the pan and coat in the pineapple sauce. Sprinkle with sesame seeds and chopped cilantro. Prepare rice according to package instructions. Serve over hot rice or noodles.

- Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with foil.
- Mix ground beef, bread crumbs, soy sauce, brown sugar, garlic, and egg whites for meatballs together in a bowl until well combined. Form into 1-ounce balls. Transfer to the prepared baking sheet.
- Bake in the preheated oven for 25 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (71 degrees C).
- Meanwhile prepare sauce: Combine pineapple, soy sauce, brown sugar, and pepper in a saucepan over medium heat. Bring to a boil, then reduce to a simmer.
- Mix cold water and cornstarch together in a small bowl; add to the sauce. Stir and simmer until desired thickness, 3 to 5 minutes. Add meatballs and cook until heated through, about 5 minutes.

- In a large mixing bowl, combine ground beef with breadcrumbs, Shaoxing wine, soy sauce, ginger, garlic powder, green onions, egg, salt, and pepper. Mix well until evenly combined. Set aside to marinate for at least 20 minutes.
- Take 2 spoonfuls of the beef mixture at a time and roll into meatballs.
- Cook the meatballs in the air fryer or in the oven: Cook in the air fryer: Place the meatballs in a single layer into the air fryer basket and lightly coat with some cooking oil spray to keep them from sticking. Air fry the meatballs at 350F for 13-15 minutes until browned nicely and fully cooked through, shaking the basket halfway during cooking to brown evenly. The internal temperature for the beef should reach 165F as read on a meat thermometer.
- Cook in the oven: Preheat oven to 400F. Transfer meatballs onto a parchment-lined half sheet baking pan and lightly coat with some cooking oil spray to keep them from sticking. Bake for 15 minutes until fully cooked through
- While cooking the meatballs, prepare the teriyaki sauce (if cooking from scratch). I made a batch of my homemade teriyaki sauce for this. If using storebought, heat it over medium heat for 1-2 minutes until warmed through.
- Add cooked meatballs to the pan and toss well to coat.

- Grate the onion and garlic into a medium size bowl; then add the panko breadcrumbs and stir to combine. Set aside.
- In a large bowl, add the ground beef and ground sausage. Break up the meat with a fork. Add the remaining ingredients and the reserved breadcrumb mixture. Use your hands to blend the mixture together. Do not over mix or the meatballs will be tough.
- Scoop the meat mixture into 2-inch size meatballs, rolling them in the palm of your hand to create a smooth meatball. Transfer the rolled meatballs to a plate as you roll each one. Alternatively, scoop the meat and place on a sheet of parchment, then roll each one.
- When all the meatballs are rolled, heat 2 tablespoons of oil in a large skillet set over medium-high heat, add the meatballs and brown, rolling them with tongs or a tablespoon to brown all areas. Brown the meatballs in 2 batches, transferring them to a paper towel-lined plate as they brown.
- In a large skillet, heat your favorite jar of marinara sauce, or make a homemade marinara sauce; then add the meatballs to the sauce.
- Reduce the heat to low and simmer while cooking 16 oz. of spaghetti.
- Place a portion of cooked, drained spaghetti into individual bowls and scoop sauce and several meatballs on each portion. Garnish with chopped parsley and serve with a dish of grated Parmesan cheese. Enjoy!

- Preheat oven to 400F degrees. Line a baking sheet with foil or parchment paper for easy cleanup. Top with a baking rack and spray with cooking spray; set aside.
- Add all of the meatball ingredients to a large bow EXCEPT the ground beef. Whisk together with a fork until thoroughly combined. Add the ground beef and gently combine with your hands (don't over-mix or your meatballs won't be as tender).
- Use a small cookie scoop (1 ½ tablespoon capacity) to roll into meatballs. Place meatballs onto prepared baking sheet without touching. Bake at 400 degrees F for 16-20 minutes or until cooked through.

- Combine breadcrumbs and milk in a large bowl and let sit for 5 minutes.
- Add beef, egg, onion, garlic, ginger, soy sauce, and pepper. Mix with hands until combined. Form into meatballs using about 2-3 tablespoons of meat for each. I made approximate 20 meatballs. Arrange meatballs in a single layer in baking dish*. If you are not searing meatballs, skip next step.
