1 and 1/4 cups granulated sugar
1/4 cup dark brown sugar, packed
1/2 cup pineapple juice
2 teaspoons rum (or pure vanilla extract)
1 and 1/2 cups all purpose flour
2 and 1/4 teaspoons baking powder
1/2 teaspoon cinnamon
1/4 teaspoon salt
2 tablespoons cornstarch
6 tablespoons unsalted butter
1 and 1/2 cups dark brown sugar (packed)
1 teaspoon rum (or vanilla extract)
1/8 teaspoon salt
12 pineapple rings
12 maraschino cherries

Steps:

  • Preheat oven to 350 degrees (F). Generously spray a 12-mold JUMBO muffin tin with non-stick cooking spray; set aside.
  • Crack the eggs into a large mixing bowl; whisk smooth. Add in the granulated sugar, brown sugar, and rum (or vanilla), and beat smooth. Stir in pineapple juice and set aside. In a separate bowl, sift together the flour, baking powder, cinnamon, salt, and cornstarch. Gradually add the dry ingredients into the wet ingredients and whisk until just combined. Be sure not to over mix here! Set mixture aside while you make the topping.

It is so yummy and no yellow cake mix. Note: This was edited from when it was first posted, I accidently added all the butter with the brown sugar for top coating.

1/2 cup butter (1 stick divided)
1 cup brown sugar
1 (20 ounce) can pineapple slices (save juice)
3 eggs
1 cup sugar
1/4 cup milk
1/4 cup pineapple juice (or can use 1/2 cup pineapple juice-omit milk)
1 teaspoon vanilla
1 1/2 cups flour
2 teaspoons baking powder
1/4 teaspoon salt

Steps:

  • Use a 9 or 10 inch cast iron skillet or pan.
  • Melt 1/4 cup of the butter over low heat in skillet, add brown sugar make sure evenly coats bottom.
  • Take pan off of the heat, arrange pineapple slices on top of brown sugar.
  • In a large bowl, cream other 1/4 cup of butter with the sugar. Add eggs, one at a time, mix until blended. Add juice, milk if using, and vanilla. Beat until sugar is well dissolved.
  • Sift flour, baking powder and salt and mix with the egg mixture until well blended.
  • Pour batter into the skillet/pan.
  • Bake at 350 degrees for 35 minutes.
  • Let cool for 10 minutes and then put plate over skillet/pan and flip over.

  • Preheat oven to 350.
  • Spread the softened butter in the bottom of an 8 x 8 baking dish. Put a layer of pineapple on top of the butter. Mix together the 1/4 cup sweetener and the pineapple extract in a small bowl. Sprinkle that on top of the pineapple.
  • Add the cake ingredient to a food processor. Process until smooth. Drop by spoonfuls on top of the pineapple. Gently spread to cover all the pineapple.
  • Bake for 30 minutes until golden brown and slightly firm to the touch. Cool for 20 minutes and then invert onto a serving platter. Store leftovers in the fridge.

  • Preheat oven to 325 degrees F (165 degrees C).
  • In a 10-inch heavy skillet with a heat-resistant handle (I use a cast iron skillet), melt 1/2 cup butter over very low heat. Remove from heat, and sprinkle brown sugar evenly over pan. Arrange pineapple slices to cover bottom of skillet. Distribute cherries around pineapple; set aside.
  • Sift together flour, baking powder, and salt.
  • Separate the eggs into two bowls. In a large bowl, beat egg whites just until soft peaks form. Add granulated sugar gradually, beating well after each addition. Beat until medium-stiff peaks form. In a small bowl, beat egg yolks at high speed until very thick and yellow. With a wire whisk or rubber scraper, using an over-and-under motion, gently fold egg yolks and flour mixture into whites until blended. Fold in 1 tablespoon melted butter or margarine and almond extract. Spread batter evenly over pineapple in skillet.
  • Bake until surface springs back when gently pressed with fingertip and a toothpick inserted in the center comes out clean, about 30 to 35 minutes. Loosen the edges of the cake with table knife. Cool the cake for 5 minutes before inverting onto serving plate.

7 pineapple rings in syrup, drained and syrup reserved
7 glacé cherries
100g softened butter
100g golden caster sugar
100g self-raising flour
1 tsp baking powder

Steps:

  • Heat oven to 180C/160C fan/gas 4.
  • For the topping, beat 50g softened butter and 50g light soft brown sugar together until creamy. Spread over the base and a quarter of the way up the sides of a 20cm round cake tin. Arrange 7 pineapple rings on top (reserving the syrup for later), then place 7 glacé cherries in the centres of the rings.
  • Place 100g softened butter, 100g golden caster sugar, 100g self-raising flour, 1 tsp baking powder, 1 tsp vanilla extract and 2 eggs in a bowl along with 2 tbsp of the reserved pineapple syrup. Using an electric whisk, beat to a soft consistency.
  • Spoon into the tin on top of the pineapple and smooth it out so it's level. Bake for 35 mins. Leave to stand for 5 mins, then turn out onto a plate. Serve warm with a scoop of ice cream.

I've made this cake for years and it's always a hit, it's even good cold for breakfast. It's simple and uses cake mix. It signify's good old fashioned farm house cooking to me.

1 box yellow cake mix
1 stick real salted butter
1 can(s) pineapple slices drained (reserve juice)
1 c dark brown sugar
3 large eggs
1/3 c vegetable oil

Steps:

  • 1. Melt butter in 9"X 11" baking dish
  • 2. Sprinkle brown sugar evenly over entire bottom of dish
  • 3. Reserve pineapple juice and place drained pineapples to cover bottom of dish
  • 4. Mix cake mix with eggs, oil and substitute pineapple juice to replace water called for in directions
  • 5. Pour cake batter over pineapples
  • 6. Place in 350 degree oven until browned and top springs back (aproximately 55 minutes. If top is browning too fast cover for last 10 minutes with foil.

Updated in 2020, this is my favorite recipe for traditional pineapple upside down cake. For best success, read the recipe and recipe notes before beginning.

1/4 cup (60g) unsalted butter, melted
1/2 cup (100g) packed light or dark brown sugar
8-10 pineapple slices (see note)*
15-20 maraschino cherries (see note)*
1 and 1/2 cups (177g) cake flour (spoon & leveled)
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
6 Tablespoons (85g) unsalted butter, softened to room temperature
3/4 cup (150g) granulated sugar
2 large egg whites, at room temperature
1/3 cup (80g) sour cream, at room temperature
1 teaspoon pure vanilla extract
1/4 cup (60ml) pineapple juice, at room temperature (use leftover from can)
2 Tablespoons (30ml) milk, at room temperature

Steps:

  • Preheat oven to 350°F (177°C).
  • Pour 1/4 cup melted butter into an ungreased 9×2 inch pie dish or round cake pan. (Make sure the pan is 2 inches deep. I recommend this pie dish, which is 1.8 inches deep but I never have an overflow issue.) Sprinkle brown sugar evenly over butter. Blot any excess liquid off the fruit with a clean towel or paper towel. (The wetter the fruit, the more likely the cake could overflow or the topping could seep over the sides when inverted.) Arrange about 6-7 blotted pineapple slices and all the cherries on top of the brown sugar. I like to halve 3 pineapple rings and arrange them around the sides of the pan, too. See my photo and video above for a visual of the arranged topping. Place pan in the refrigerator for a few minutes as you prepare the cake batter. This helps solidify or "set" the topping's arrangement.
  • Whisk the cake flour, baking powder, baking soda, and salt together. Set aside.
  • Using a handheld or stand mixer fitted with a paddle or whisk attachment, beat the butter on high speed until smooth and creamy, about 1 minute. Add the sugar and beat on high speed until creamed together, about 1 minute. Scrape down the sides and up the bottom of the bowl with a rubber spatula as needed. On high speed, beat in the egg whites until combined, then beat in the sour cream and vanilla extract. Scrape down the sides and up the bottom of the bowl as needed. Pour the dry ingredients into the wet ingredients. Turn the mixer onto low speed and as the mixer runs, slowly pour in the pineapple juice and milk. Beat on low speed just until all of the ingredients are combined. Do not over-mix. You may need to whisk it all by hand to make sure there are no lumps at the bottom of the bowl. The batter will be slightly thick.
  • Remove topping from the refrigerator. Pour and spread cake batter evenly over topping.
  • Bake for 43-48 minutes, tenting foil on top of the cake halfway through bake time to prevent the top from over-browning before the center has a chance to fully cook. The cake is done when a toothpick inserted into the center of the cake comes out mostly clean- a couple moist crumbs are OK. Don't be alarmed if your cake takes longer or if the cake rises up and sticks to the foil. (We serve the cake upside down anyway!)
  • Remove cake from the oven and cool on a wire rack for just 20 minutes. Invert the slightly cooled cake onto a cake stand or serving plate. Some of the juices from the topping will seep over the sides- that's ok. You can slice and serve the cake warm, but the slices will be messy. I find it's best to cool the cake completely at room temperature before slicing and serving. Do not refrigerate the cake to speed up the cooling process because it could end up tasting overly dense.
  • Cover leftover slices and store for up to 3 days in the refrigerator or 3 months in the freezer. Thaw at room temperature. I don't recommend freezing the cake as a whole because the topping arrangement doesn't thaw very nicely. See make ahead instructions below.

9 Tablespoons unsalted butter-melted
1 cup packed light brown sugar
3 (20 oz.) can sliced pineapple(8 ring for every layer) -drained and save the juice
40-50 maraschino cherries (if they are large use 20-25 and cut them in half)
2 1/4 cups (210g) sifted all-purpose flour, don't over measure
3 Tablespoon cornstarch
1 1/2 teaspoon baking powder
1/2 teaspoon salt
3/4 cup packed light brown sugar
3 Tablespoons granulated sugar
9 Tablespoons unsalted butter- melted
3 egg
1/2 cup plain Greek yogurt
3 Tablespoons milk
6 Tablespoons pineapple juice -reserved from the canned pineapple
1 Tablespoon vanilla extract
2 cups heavy whipping cream
1/4-1/2 cup powdered sugar (to taste)
2 tsp cinnamon
2 tsp vanilla extract

Steps:

  • Preheat oven to 350°F and prepare 3 9 inch round cake pans. If you don't have three pans you can repeat the process for each layer after one is done.
  • Spread 3 tablespoons melted butter into the bottom of each round cake pan. Sprinkle brown sugar onto the butter ( 1/3 cup brown sugar in each pan). Arange the pineapple slices to cover the bottom of the pan and arrange cherries between the pineapple slices. Set aside.
  • To make the cake in a medium bowl, sift together flour, corn starch baking powder and salt, set aside.
  • In a large microwave-safe bowl, melt butter in the microwave, whisk in the sugars - mixture will be gritty. Whisk in egg, yogurt, milk, pineapple juice, and vanilla extract until combined. Slowly whisk in dry ingredients until no lumps remain. Gently pour/spoon batter into prepared pans and smooth the top. Bake 30 minutes (until toothpick inserted in the center comes out clean). Invert first layer on a large serving plate and the other two on a parchment paper to cool completely.
  • To make the cinnamon whipped cream using a mixer whip the heavy whipping cream until soft peaks form, add cinnamon, powdered sugar and vanilla and continue beating until stiff peaks form. Reserve 1/2 cup of cinnamon whipped cream for garnish.
  • To assemble the cake spread 1/2 of remaining whipped cream onto bottom cake layer. Using really large spatula transfer second cake layer onto whipped cream layer (be careful the cake layer could fall apart really easy), spread remaining whipped cream and top with the third cake layer.
  • Cover the cake and store in the refrigerator for up to 3 days.

115 g (1 stick) unsalted butter (cubed)
200 g (1 cup) light soft brown sugar
12-14 pineapple rings (from a tin, drained )
350 g ( 2¾ cups) plain flour ((all purpose flour))
330 g (1 ⅔ cups) sugar
1 tbsp baking powder
½ tbsp bicarbonate of soda
200 g (7/8 cup) softened butter (or margarine such as Stork)
4 medium eggs
120 ml (½ cup) whole or semi skimmed milk (room temperature)
1 tsp vanilla extract (or vanilla paste)
1 lemon (zest only)
3 tbsp smooth apricot jam
2 tbsp pineapple or lime juice
maraschino or glacé cherries (optional)

Steps:

  • Line a 9x13inch rectangular cake tin with baking paper or a reusable cake liner.
  • Heat butter and sugar in a saucepan over medium low heat. Stir until butter melts and sugar dissolves. Turn off heat when the caramel comes to a simmer.
  • Spread the caramel over the bottom of the tin, edge to edge, and top with the pineapple slices, cutting them in half to fit if needed.
  • Preheat the oven to 170C (340F). Mist a rectangular tin with cake release and line with baking paper (preferably a strong cake liner) letting the edges hang over the sides.
  • Put the flour, sugar, baking powder and bicarbonade of soda in a large mixing bowl and mix together to combine.
  • Add the softened butter, eggs, milk, vanilla and lemon zest.
  • Start beating at lowest speed setting until ingredients come together. Increase the speed to maximum and beat until the batter is completely smooth - about 30 seconds to one minute. Stop the mixer and scrape the bottom and sides of the bowl halfway through.
  • Gently spread batter over the pineapple slices and level using a spatula.
  • Bake for 45-50 minutes or until the cake is golden and feels springy to the touch. A skewer or knife inserted in the centre should come out clean - if not cook for a further 5 minutes.
  • Leave cake to cool in tin for 20 minutes. Lift the cake out of the tin using the overhanging paper and transfer to a wire rack to cool.
  • Heat the jam and juice in a saucepan until bubbles appear. If the jam is not smooth then pass it through a sieve.
  • Brush the cake with the warm jam to cover.
  • Add the cherries if using, slice and serve.
