This was my dad's recipe. A yummy moist bread loaded with raisins and cinnamon. The best raisin cinnamon bread I've ever had! Great plain, toasted, or with a light glaze of buttercream frosting!

1 ½ cups milk
1 cup warm water (110 degrees F/45 degrees C)
2 (.25 ounce) packages active dry yeast
3 eggs
½ cup white sugar
1 teaspoon salt
½ cup margarine, softened
1 cup raisins
8 cups all-purpose flour
2 tablespoons milk
¾ cup white sugar
2 tablespoons ground cinnamon
2 tablespoons butter, melted

Steps:

  • Warm the milk in a small saucepan until it bubbles, then remove from heat. Let cool until lukewarm.
  • Dissolve yeast in warm water, and set aside until yeast is frothy. Mix in eggs, sugar, butter or margarine, salt, and raisins. Stir in cooled milk. Add the flour gradually to make a stiff dough.
  • Knead dough on a lightly floured surface for a few minutes. Place in a large, greased, mixing bowl, and turn to grease the surface of the dough. Cover with a damp cloth. Allow to rise until doubled.
  • Roll out on a lightly floured surface into a large rectangle 1/2 inch thick. Moisten dough with 2 tablespoons milk. Mix together 3/4 cup sugar and 2 tablespoons cinnamon, and sprinkle mixture on top of the moistened dough. Roll up tightly; the roll should be about 3 inches in diameter. Cut into thirds, and tuck under ends. Place loaves into well greased 9 x 5 inch pans. Lightly grease tops of loaves. Let rise again for 1 hour.
  • Bake at 350 degrees F (175 degrees C) for 45 minutes, or until loaves are lightly browned and sound hollow when knocked. Remove loaves from pans, and brush with melted butter or margarine. Let cool before slicing.

2 cups bread flour, plus more for dusting
2 cups whole-wheat flour
1/4 cup nonfat dry milk
1 large egg
2 tablespoons canola oil, plus more for brushing
3 tablespoons honey
2 teaspoons salt
1 1/2 teaspoons instant dry yeast
Nonstick cooking spray
2/3 cup raisins
1 tablespoon plus 1 teaspoon ground cinnamon
1/3 cup packed dark brown sugar

Steps:

  • Make the dough.
  • Measure out 1 1/4 cups very warm water and check the temperature; it should be 120 degrees F to 130 degrees F. Combine both flours, the dry milk, egg, canola oil, honey, salt, yeast and warm water in the bowl of a stand mixer fitted with the dough hook. Mix 3 minutes on the lowest setting, then increase to the next highest setting and mix 5 more minutes. The dough should be soft and sticky.
  • Let it rise.
  • Transfer the dough to a large bowl coated with cooking spray. Cover tightly with plastic wrap and let rise at room temperature until the dough has nearly doubled in size, about 1 hour, 30 minutes.
  • Soak the raisins.
  • Dry raisins will rob moisture from the bread, so soak them first in boiling water until plump, about 30 minutes. Drain and pat dry.
  • Fold the dough.
  • Transfer the dough to a floured work surface. Picture it as a loose square. Lift up one side of the dough and fold about one-third of it across; press down on the dough with spread fingers to remove any air bubbles. Repeat with the remaining 3 sides of the dough.
  • Add the filling.
  • Mist two 9-by-5-inch loaf pans with cooking spray. Divide the dough in half; roll out each half into an 8-inch square. Brush each square with canola oil, then sprinkle with the cinnamon (it's high in antioxidants!), brown sugar and raisins.
  • Form the loaves.
  • Roll up each square of dough into a tight cylinder; place seam-side down in the prepared pans. Cover tightly with plastic wrap and let rise at room temperature until the dough fills the pans and springs back when touched, about 1 hour, 30 minutes.
  • Bake the bread.
  • Preheat the oven to 375 degrees F. Brush the loaves with canola oil and bake until golden brown, 25 to 30 minutes. Remove from the pans and transfer to a rack to cool completely.

2 1/4 cups bread flour
1 cup brown rice flour*
2 tablespoons ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon fine sea salt
1/2 cup warm water (100 to 110 degrees F)
3 teaspoons active dry yeast
6 tablespoons unsalted butter, at room temperature
1/2 cup sugar
3 eggs, at room temperature
1 cup chopped walnuts
1 1/4 cups raisins
Butter, for greasing the loaf pan
Flour, for dusting the loaf pan

Steps:

  • In a medium bowl, whisk together the bread flour, rice flour, cinnamon, nutmeg, and salt. Set aside.
  • In a small bowl, combine the warm water and yeast. Let the mixture rest for 5 minutes until foamy.
  • In a stand mixer fitted with a paddle attachment, beat the butter and sugar at medium speed until creamy, about 2 minutes. Beat in the eggs, 1 at a time. Beat in the yeast mixture. With the machine running on low speed, gradually add the flour mixture until a ball of dough forms. Remove the paddle attachment and attach a dough hook. (If a dough hook attachment isn't available, the dough can also be kneaded by hand for 15 minutes on a lightly floured work surface.) Mix on medium-low speed for 10 minutes (scraping the sides of the bowl, if necessary). Add the walnuts and raisins and continue to mix until the dough is smooth and springs back when pushed with a finger, about 5 minutes longer. Transfer the dough to an oiled bowl and cover with plastic wrap. Place in a draft-free area at room temperature (about 85 degrees F) until the dough has puffed slightly, about 2 hours.
  • Butter and flour the inside and outer rim of an 8 1/4 by 4 1/2-inch nonstick loaf pan. Punch the center of the dough to deflate it. Place the dough on a lightly floured work surface and knead for 3 minutes. Form the dough into an 8 by 4-inch rectangle and place in the prepared loaf pan. Cover with plastic wrap and allow the dough to rise in a draft-free area at room temperature until the dough rises about 2 inches above the top of the pan, about 2 hours.
  • Place an oven rack in the center of the oven. Preheat the oven to 350 degrees F.
  • Remove the plastic wrap and bake the loaf until golden brown, 30 to 35 minutes. Cool for 10 minutes. Remove the loaf from the pan and transfer to a wire rack to cool completely, about 1 1/2 hours.
  • Wrap well in plastic and store at room temperature for 2 days or freeze for up to 1 month.

1 package (1/4 ounce) active dry yeast
1/4 cup warm water (110° to 115°)

2 cups raisins

Steps:

  • In a large bowl, dissolve yeast in warm water. Add milk, 1/3 cup sugar, oil, salt and 2 cups flour. Beat until smooth. Add raisins and enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1-1/4 hours. , Punch dough down. On a lightly floured surface, divide in half. Roll each into a 15x7-in. rectangle. Combine cinnamon and remaining sugar; sprinkle over dough. Sprinkle with water. Starting with a short side, roll up tightly, jelly-roll style. Pinch seams and ends to seal. The title says it all. This is so good. This is a sweet bread, great for breakfast or snack. I must warn you, it touched the top of my breadmaker. It is too good not to share. I changed another recipe and added some things. My additions were the raisins and cinnamon. It origially was suppose to make a 1 1/2 lb. loaf. I didn't think the raisons and cinnamon would have add that much, but I guess it did. You might want to adjust to make a 1 1/2lb. loaf because I will list this as a 2 lb. loaf. It is so good! It knead the heck out of the raisins so there is little bits all through the bread. Chewy, sweet and moist. I used sugar free syrup to cut down on sugar. Beautifully swirled cinnamon bread with raisins begins with your bread recipe of choice. Her are the instructions for turning your bread recipe into a yummy cinnamon raisin bread.

300 grams starter-freshly fed and active
650 grams warm water
50 grams honey
40 grams avocado oil
1000 grams White bread flour (high protein)
20 grams Salt
2 Tablespoons cinnamon
1/2 Cup sugar- (either brown sugar or cane sugar works)
150 grams dried raisins
150 grams water

Steps:

  • Begin with a very active recently fed starter. It should pass the float test.
  • Set a large bowl on a digital food scale set to grams and press the tare button. The scale should read zero.
  • Pour in the water to weight of 650 g. Press tare.
  • Pour in 300 grams of starter. Press tare. The starter should form a floating mass on the water.
  • Add the oil. Press tare
  • Add the honey. Press tare.
  • Whisk together the starter, oil, honey and water until they are mixed.
  • Add the 1000 grams of flour.
  • Mix the flour into the water/starter with a dough hook, spatula and your wet hands until you have a shaggy ball of dough.
  • autolyse 1 hour.
  • Sprinkle salt across dough.
  • spritz with water bottle and work in the salt with wet hands.
  • Rest 30 mins
  • PREPARE RAISINS: Put the raisins in water and set aside. They will plump as they absorb water for a better finished baking result.
  • Begin Stretch and Folds. You need 4 rounds of stretch and folds 30 mins apart. See video for technique.
  • BEFORE the second stretch and fold cut the dough in half if you only want ONE loaf for cinnamon raisin bread. The other make as plain.
  • Incorporate the plumped raisins into the dough in the second and third stretch and folds. Half in one then half in the other.
  • Fourth stretch and fold all the raisin will be blended evenly throughout the dough.
  • Refrigerate overnight.
  • Remove from fridge and warm to room temperature. (ABOUT TWO HOURS)
  • ( If you have not yet divided the dough for loaves) Divide the dough into two equal dough balls by weight.
  • Bench rest an hour until dough is elastic.
  • De-gass dough with rolling pin and shape for pans as shown in post.
  • Spray the dough with water and evenly sprinkle with Half the cinnamon sugar.
  • Fold the outside edges of the dough to the center and close the seam. Sprinkle remaining cinnamon sugar on the top.
  • Fold the FRONT corners of the rectangle to the center seam.
  • Roll the dough up tucking it as you roll to keep the roll tight.
  • Flatten the seam and pinch the ends.
  • Place the formed dough loaf into your oiled bread pans.
  • let dough do a final rise in bread pans covered loosely with plastic until they reach the top of the loaf pans.
  • Do an egg wash(optional) on top of the dough before baking.
  • Score the dough with a sharp wet blade. Make one deep slash down the length of the loaf for best rise.
  • Preheat oven with a pizza stone(or baking sheet) and broiler pan on oven shelf below at 400°.
  • Loaf pans go on top of a sheet pan onto the stone(If you have one).
  • Spritz loaves very liberally with water bottle just before going into oven.
  • Pour water about 1/2 inch deep in the broiler pan. This creates steam.
  • Keep steamy for first 15 mins. Spray hot oven with water as you begin baking the loaves.
  • After 15 mins turn oven down to 375°.
  • Bake an additional 30-35 mins.
  • Turn loaves for even browning.
  • Using a digital thermometer check internal Temp of loaf. It is done at 200°. If you don't have a thermometer pop loaves out to test for hollow on bottom. Or thump the loaf. Does is have a hollow sound?
  • Remove from oven and cool on racks to room temperature before cutting the bread.

2 cups plus 1 1/2 teaspoons warm water (100 degrees to 110 degrees)
2 1/2 teaspoons active dry yeast
5 3/4 cups bread flour, plus more for dusting
2 tablespoons nonfat powdered milk
4 teaspoons sugar, plus more for sprinkling
1 tablespoon salt
3 tablespoons unsalted butter, melted and cooled
2 cups dark raisins
Canola oil, for bowl and plastic wrap
3/4 cup sugar
7 teaspoons cinnamon
1 large egg, beaten
4 tablespoons unsalted butter, melted and cooled
1 large egg white, beaten

Steps:

  • In the bowl of an electric mixer, combine 1/4 cup warm water and yeast. Let sit until yeast is foamy, about 10 minutes. Add flour, powdered milk, sugar, salt, 3 tablespoons melted butter, and 1 3/4 cups warm water. Mix, using the paddle attachment, on low speed for 1 minute. Change to dough hook, and mix on medium-low speed for 7 minutes. Or knead by hand, 15 or 20 minutes. Add raisins, and mix on medium-low speed until dough is firm but not dry, 3 minutes.
  • Transfer to a lightly floured surface, and knead by hand into a ball. Place dough, smooth side up, in a large, lightly oiled bowl. Cover with plastic wrap; let rise in a warm place until doubled in bulk, about 1 1/2 hours.
  • Butter two 9-by-5-inch loaf pans generously, and set aside. In a small bowl, combine sugar and cinnamon, and set aside. Transfer dough to a lightly floured surface, and cut in half. Cover one piece of dough loosely with lightly oiled plastic wrap.
  • Press the other piece of dough into a 10-by-12-inch rectangle. Brush with half of the beaten egg, sprinkle with half the cinnamon sugar, and drizzle with half the melted butter. Rub the surface with the back of a spoon to blend butter and cinnamon sugar. Starting at a short end, roll up dough tightly, and pinch together along crease. Roll the dough back and forth to make it cylindrical, and pinch the ends together. Transfer to a loaf pan, seam side down, and cover loosely with lightly oiled plastic wrap. Repeat process with second piece of dough. Let loaves rise in a warm place, 45 minutes to 1 hour. Thirty minutes before this final rise is completed, place a baking stone, if using, in the lower third of oven. Heat oven to 425 degrees.
  • Brush tops of loaves with egg white, and sprinkle each loaf with 1 1/2 teaspoons sugar. Bake 15 minutes; lower oven to 400 degrees, and bake 15 minutes more. Remove from oven; cool on a wire rack for at least 30 minutes before slicing.

This is the best Cinnamon Raisin Bread I've ever had! It really has a great consistency and smells WONDERFUL while baking. I made this for the first time about a year ago and since it makes 3 loaves, I gave one to my neighbor. Now she asks for it constantly and since it is so fun to make, I oblige her, plus I get to keep the other 2 loaves!

1 1/2 cups milk
1 cup warm water (must be between 110-115 degrees)
2 (1/4 ounce) packages active dry yeast
3 eggs
1/2 cup white sugar
1 teaspoon salt
1/2 cup unsalted butter, softened
1 cup raisins
8 cups all-purpose flour
2 tablespoons milk
1 cup white sugar
3 tablespoons ground cinnamon
2 tablespoons butter, melted (approx.)

Steps:

  • Warm the milk in a small sauce pan on the stove until it just starts to bubble, stirring occasionally.
  • Remove from heat.
  • Let cool until lukewarm, about 120-125 degrees.
  • Dissolve yeast in warm water and set aside until yeast is frothy, about 10 minutes or so (make sure your water is at the correct temperature or the yeast won't activate.) Then mix in eggs, sugar, butter salt and raisins (stir in the cooled milk slowly so you don't cook the eggs.) Add the flour gradually to make a stiff dough.
  • Knead the dough on a lightly floured surface for a few minutes until smooth.
  • Place in a large, buttered, mixing bowl and turn to grease the surface of the dough.
  • Cover with a warm, damp cloth and let rise (I like to let my bread rise in the oven with the light on. It has just the right amount of heat and keeps the bread out of drafts.) Allow to rise until doubled, usually about 1 1/2 hours.
  • Roll out on a lightly floured surface into a large rectangle 1/2 inch thick.
  • Moisten the dough with 2 tablespoons milk and rub all over the dough with your hands.
  • Mix together 1 cup of sugar and 3 tablespoons cinnamon and sprinkle mixture evenly on top of the moistened dough.
  • Roll up tightly (the long way).
  • The roll should be about 3 inches in diameter.
  • Cut into thirds, and tuck under ends and pinch bottom together.
  • Place loaves into well greased (you can use Crisco or butter for this) 9 x 5 inch pans and lightly grease tops of loaves.
  • Let rise in warm place, uncovered, again for about an hour.
  • Bake at 350 degrees for 45 minutes or until loaves are lightly browned and sound hollow when tapped.
  • Remove from oven and let cool on rack.
  • Take melted butter and spread over tops of loaves.
  • After about 20 minutes, lay loaves on their sides and remove from pans.
  • Allow to cool before slicing.

1 1/2 cups bread flour
1/2 teaspoon salt
2 tablespoons unsalted butter, melted and cooled

1/4 cup packed light brown sugar

2 tablespoons light corn syrup
1 1/4 cups confectioners' sugar
Pinch of salt
2 tablespoons unsalted butter, melted
3 to 5 tablespoons milk

Steps:

  • Make the dough: Combine the warm water, yeast and a pinch of granulated sugar in a small bowl and let sit until foamy, 5 to 8 minutes. Meanwhile, whisk the bread flour, remaining 1 tablespoon granulated sugar and salt in a stand mixer.
  • Add the yeast mixture and melted butter to the flour mixture. Knead with the dough hook on medium speed until the dough is smooth and elastic, about 8 minutes. Transfer to a bowl coated with cooking spray. Cover tightly with plastic wrap and let rise in a warm place until doubled in size, about 1 1/2 hours.
  • Lightly spray a baking sheet with cooking spray. Punch down the dough and transfer to a work surface; knead a few times. Cut in half and gently shape into two 3-by-6-inch loaves (do not overwork the dough). Place the loaves 3 inches apart on the prepared pan. Lightly spray the loaves with cooking spray and cover with plastic wrap. Let rise in a warm place until puffy, 30 minutes to 1 hour.
  • Make the topping: Whisk the granulated sugar, brown sugar and cinnamon in a small baking dish. Whisk the melted butter and corn syrup in another small baking dish.
  • Preheat the oven to 350 degrees F. Line two 9-by-5-inch loaf pans with parchment paper, leaving a 2-inch overhang on all sides. Cut 4 deep slashes across the top of each loaf (the loaves will look deflated). Dip each loaf in the butter-corn syrup mixture, turning to coat, then coat with the cinnamon sugar, making sure to get the sugar in the crevices. Place the loaves in the prepared pans. Drizzle with any remaining butter mixture and sprinkle with any remaining cinnamon sugar. Bake until light brown, 25 to 30 minutes. Lift the bread out of the loaf pans using the parchment overhang and transfer to a rack. Let cool in the paper, about 15 minutes.
  • Meanwhile, make the glaze: Whisk the confectioners' sugar, salt, melted butter and 3 tablespoons milk in a bowl until smooth. Whisk in up to 2 more tablespoons milk as needed to loosen. Drizzle on the warm loaves or serve on the side for dipping.

1 cup raisins
1 cup warm water
1 tbs active dry yeast
1 cup whole milk (warmed)
1/4 cup unsalted butter (melted)
2 teaspoons salt
1 1/2 tsp ground cinnamon
5 1/2 cups all-purpose flour
little more flour for the surface
1/2 cup white granulated sugar
1 1/2 tbsp cinnamon
1 egg (whisked)

Steps:

  • Put the raisins in a small bowl filled with hot water. Let the raisins plump up, about 10 minutes. Strain them through a fine mesh strainer but save the raisin water.
  • Pour a cup of warm raising water into the bowl of a standing mixer or large mixing bowl. (Note: if the water cooled down, warm it up a little more. Water should be a little warmer than room temperature but not hot. Make sure there is 1 cup of water.)
  • Add yeast to water and stir gently. Give it a about 10 minutes for the yeast to bloom and then stir.
  • Stir warmed milk, melted butter, and salt into the water.
  • Add 5 1/2 cups of the flour and cinnamon and mix on low to form a shaggy dough.
  • Switch to a dough hook and knead in your mixer on low speed with the dough hook (or knead by hand for 8-10 minutes to form a smooth, slightly tacky dough). If the dough is too sticky, add a little more flour.
  • With the mixer on low, gradually add raisins to the dough and continue kneading until they are evenly distributed.
  • Cover bowl with a plastic wrap or a towel and place in the warm dry place. Let rise for about an hour.
  • Divide the dough into two even pieces. Roll the dough out on the counter. Make sure that the dough is a little less wide that your loaf pan. Try to make the dough about 1/6th to 1/8th of an inch think.
  • Brush the entire surface of the dough with egg.
  • Combine cinnamon and sugar in a small bowl and mix completely. Sprinkle the dough generously with cinnamon and sugar mixture.
  • Roll up the dough and place it in the greased loaf pan, seam side down.
  • Repeat with the other half of the dough.
  • Cover the pans with a towel and let the loaves rise until mounded over the top, about 30 minutes. Sprinkle with some cinnamon and sugar over the top.
  • Preheat the oven to 375° while the dough is rising.
  • Bake for 40-45 minutes until golden brown. You can check internal temperature of the dough in the center. Bread is ready when it reaches 190° internal temperature. (Note, bread baked in smaller pans will take a few minutes longer than wider pans.)
  • Take the loaves out of the oven and let it cool to room temperature before taking out and slicing.

1 cup whole milk
4 tbsp unsalted butter (melted)
3 tbsp honey
2.25 tsp instant or quick rise yeast ((you may also use active dry))
17.5 ounces by weight all-purpose flour ((3.5 cups, measured)*)
1 tsp salt
2 eggs
1/2 cup raisins**
butter (for greasing the pan)
1/4 cup brown sugar
2 tbsp ground cinnamon***
2 tbsp unsalted butter (melted)
1/8 tsp salt

Steps:

  • Combine the milk, melted butter, and honey in a microwave safe glass.
  • Heat the liquid in the microwave**** to 110 to 115 degrees F, then stir in the yeast. Let this mixture sit for 10 minutes, until foamy.
  • Pour the yeast liquid into the bowl of a stand mixer, and add the flour, salt, eggs, and raisins.
  • Stir it around with a wooden spoon or the dough hook of the mixer until roughly combined.
  • Fit the stand mixer with the dough hook, and knead for 10 minutes on medium low speed.
  • Cover the dough bowl with plastic wrap and let the dough rise for one to two hours, until doubled in size.
  • Lightly flour your countertop and spread the dough into a rectangle that is the length of your loaf pan (I use a standard 9x5inch pan). It doesn't have to be perfect.
  • Make the cinnamon filling by stirring together the brown sugar, cinnamon, butter, and salt.
  • Spread this mixture all over the top of the dough rectangle, then roll the dough up like a cinnamon roll, and pinch the seam shut.
  • Grease a 9x5 loaf pan with butter, and place the bread roll seam side down into the pan.
  • Cover the loaf with plastic wrap and let it rise for 60 minutes, until the dough has risen past the top of the loaf pan.
  • Preheat the oven to 375 degrees F, and place a sheet pan on the lowest shelf of the oven. Add enough boiling water to cover the bottom of the sheet pan, then bake the bread on the shelf above the water for 40-50 minutes until the inside registers 190 to 200 degrees on an instant read thermometer.
  • Let the bread cool completely on a wire rack before slicing it. Enjoy!
  • Storing: since there are no preservatives, the bread will only keep for a few days at room temperature. I recommend freezing any unused bread.

3/4 cup warm water
3/4 cup warm milk
10 g (2tsp) instant yeast
2/3 cup sugar
3-4 cups flour ((any white flour can be used: Cake, all purpose or bread) )
1 tsp salt
1 tsp cinnamon
1/8 tsp nutmeg
½ tsp ground ginger
1/3 cup butter / oil ((room temperature butter) )
1 cup raisins
1 egg (beaten (for egg wash) (optional))

Steps:

  • Whisk water, milk, sugar and yeast together. Allow to stand for 10 minutes until foamy.
  • In the bowl of a stand mixer fitted with the dough hook attachment, combine the flour, spiced and salt.
  • With the mixer running, add the yeast mixture and allow to knead in.
  • Add the butter or oil, allow to knead in then add more flour, one third cup at a time until the dough is smooth. Add the raisins.
  • Knead for another minuted until the dough comes away from the sides of the bowl.
  • If the dough is still very sticky, add more flour and knead in.
  • The dough should be smooth and soft and only a slight bit sticky.
  • Cover with plastic wrap or a damp tea towel and allow to rise for 1 hour.
  • Once the dough has proofed, press it into rectangle on a lightly floured surface. Press any raisins that have fallen out of the dough into the center. Roll onto its self into a log, pinch the seam then transfer to a loaf pan that has been lightly greased.
  • Cover again and allow to rise for 30 minutes while you preheat the oven to 180°C/350°F.
  • Brush with beaten egg and place in the oven and allow to bake for 30-45 minutes until golden brown and risen. If the bread browns too quickly, loosely cover with a piece of foil and continue baking. Once baked the bread will sound hollow when tapped on the bottom.
  • Remove from the oven, brush with melted butter (optional) and allow to cool before slicing.

FOR THE DOUGH:
1 c. Milk, Almond Milk, Or Soy Milk, At 110ºF
2 tbsp. Brown Sugar (See Note)
2 1/4 tsp. Instant Rise Yeast
6 tbsp. Neutral Oil (See Note) Or Melted Unsalted Butter
2 Eggs
3 1/2 c. All-purpose Flour (17 1/2 Ounces By Weight), Plus More For Dusting
1 tsp. Salt
1/2 c. Raisins
FOR THE CINNAMON FILLING:
1/3 c. Brown Sugar
2 tbsp. Ground Cinnamon
3 tbsp. Melted Butter (or Oil)

Steps:

  • Combine milk, brown sugar, and yeast in a bowl or measuring cup. Let sit for 10 minutes, until foamy. This indicates that the yeast is alive and well. Pour the yeast liquid into the bowl of a stand mixer, and add oil and eggs. Whisk to combine the wet ingredients, then add flour and salt. Use the dough hook or a spatula to roughly combine the wet and dry ingredients into a shaggy dough. Add the raisins, then fit the bowl and dough hook to the stand mixer. Knead on medium low speed for 10 minutes. Remove the dough hook, cover the bowl with plastic wrap, and let the dough rise for 1 hour, until doubled in size.Flour your countertop as lightly as possible, then spread and stretch the dough into a rectangle that is the length of your loaf pan, about 9 inches by 18 inches. I prefer to use a 9x5 loaf pan.Make the cinnamon filling by stirring together brown sugar, cinnamon, and butter. Spread this mixture all over the top of the dough rectangle, then roll the dough up as tightly as you can, rolling the long way. Place the roll seam-side down into a greased loaf pan, then cover with plastic wrap to let rise for 30 minutes. 2 cups all purpose flour (plus 1-2 tablespoons if necessary)
1 cup whole wheat flour
3/4 cup raisins
1/2 teaspoon active dry yeast
1 1/2 teaspoons sea salt
2 teaspoons ground cinnamon
3 tablespoons brown sugar
1 1/2 cup room temperature water (plus 1-2 tablespoons if necessary)
a few tablespoons extra flour for shaping the loaf

Steps:

  • Add the flours, raisins, yeast, salt, cinnamon, and brown sugar to a large bowl. Be sure to add the yeast and the salt to separate sides of the bowl.
  • Stir the dry ingredients together well.
  • Add the water and stir until a thick, rough dough forms. Add 1-2 more tablespoons of water or flour if needed.
  • Flour your hands and shape the dough into a ball, placing it into the bottom of the bowl and covering the bowl with plastic wrap.
  • Place in a warm spot in your kitchen and let rise for 12-18 hours. When I make this bread, I prepare the dough in the evening and bake the next morning. For quick rise instructions, see the Recipe Notes below.
  • After the rising time, preheat your oven to 450 degrees Fahrenheit.
  • Place an oven-safe Dutch Oven pot in the cold oven and let it preheat with the oven.
  • Flour your hands well and shape the dough into a round ball and set it on a piece of parchment paper on the counter dusted with flour.
  • Dust the top of the dough ball with flour and cover with a clean kitchen towel, letting it rise for 25 minutes.
  • After the dough has risen remove the Dutch Oven pot from the oven and using the parchment paper, pick up the dough and place it carefully in the bottom of the Dutch Oven. Make two very shallow slices in the top of the risen loaf in the shape of an X.
  • Replace the lid of the Dutch Oven, place it back into the hot oven, and bake for 30 minutes.
  • After 30 minutes of baking time, remove the lid from the Dutch Oven and continue baking for an additional 10 minutes uncovered.
  • After the baking time, remove the pot from the oven and transfer the loaf to a cooling rack using the parchment paper.
  • Cool completely before slicing.

1 cup sugar, divided
1/4 cup canola oil

Additional canola oil
3 teaspoons ground cinnamon

Steps:

  • In a large bowl, dissolve yeast in warm water. Add 1/2 cup sugar, oil, salt, eggs and 4 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place or until doubled, about 1 hour. , Punch dough down. Turn onto a lightly floured surface; divide in half. Knead 1/2 cup raisins into each; roll each portion into a 15x9-in. rectangle. Brush with additional oil. Combine cinnamon and remaining sugar; sprinkle to within 1/2 in. of edges. , Tightly roll up, jelly-roll style, starting with a short side; pinch seam to seal. 1 cup raisins (6 ounces )
1 cup warm water*
1 tablespoon active dry yeast
1 cup buttermilk
1/4 cup unsalted butter, melted
2 teaspoons salt
5 1/2 - 6 cups all-purpose flour
1/2 cup granulated white sugar
1 1/2 tablespoons cinnamon
1 large egg, beaten with 2 teaspoons water

Steps:

  • Put the raisins in a small bowl and cover them with 1 cup hot water. Let the raisins plump for at least 10 minutes. Drain, reserving the water and set aside. Allow the reserved water to cool to 110 to 115 degrees.
  • Pour 1 cup of the reserved soaking water into the bowl of a standing mixer or large mixing bowl. Add the yeast and stir to combine. Let stand for 5 to 10 minutes until foamy.
  • Stir the milk, melted butter, and salt into the water. Add 5 1/2 cups of the flour and stir to form a shaggy dough.
  • Knead in your mixer on low speed with a dough hook or knead by hand for 8-10 minutes to form a smooth, slightly tacky dough. Check the dough halfway through; if it's very sticky, add a little more flour. The dough is ready when it forms a ball without sagging and quickly springs back when poked.
  • Toss the raisins with 2 tablespoons of flour to absorb any residual moisture from when they were plumped. With the mixer on gradually add them to the bowl and continue kneading until they are evenly distributed.
  • If kneading by hand, turn the dough out onto your work surface and pat it into an oval. Sprinkled about half the raisins over the top and fold the dough like a letter. Pat it into an oval again, sprinkle the remaining raisins, and fold it again. Knead the dough by hand for a few minutes to distribute the raisins through the dough.
  • Place the dough in a greased bowl, turn over once and cover. Let the dough rise in a warm place until doubled in bulk, about an hour. Meanwhile, combine the sugar and cinnamon in a small bowl and beat together the egg and water in a second bowl.
  • Divide the dough into two pieces. Working with one piece at a time, roll the dough out on the counter. It should be slightly less wide than your baking pan and as long as you can make it. The thinner the dough, the more layers cinnamon swirl you'll end up with. If the dough starts to shrink back on you, let it rest for a few minutes and then try again.
  • Beat the egg with 2 teaspoons of water. Brush the entire surface of the dough with egg wash, leaving about two inches clear at the top. (Refrigerate the remaining egg wash for use later.) Sprinkle generously with cinnamon and sugar. Starting at the end closest to you, roll up the dough. When you get to the top, pinch the seam closed. Transfer the loaf to your loaf pan seam-side down. Repeat with the other half of the dough.
  • Let the loaves rise until mounded over the top of the pan and fluffy, 30-40 minutes. Halfway through rising, preheat the oven to 375° F.
  • Brush the top with some of the remaining egg wash.
  • Bake for 40-45 minutes until golden brown. Let cool in the pans for at least 10 minutes.
  • Remove the loaves from the pans and allow them to cool completely before slicing. If you can! Baked loaves can also be frozen for up to three months.

  • Transfer dough: Place dough on lightly floured surface and form into ball again (keep lightly flouring your hands to prevent sticking). Lay dough on parchment paper, lightly dust paper to prevent sticking, and lift edges of paper to transfer dough into dutch oven.
  • Bake: Cover with lid and bake for 30 minutes, uncover and bake for 5-10 more minutes until golden brown.

Steps:

  • Preheat oven to 350 degrees. Prepare a 9x5 loaf pan with a non-stick baking spray. PRO TIP: Line the bottom with parchment paper and spray the paper for easier removal.
  • Add the raisins and vanilla extract to a small bowl. Fill with boiling water with 1/2 inch of water over the top of the raisins. Soak the raisins for 15 minutes, then drain them and set them on a towel to dry.
  • In another small bowl, mix together the light brown sugar and cinnamon. Take a spoonful of the brown sugar mixture and stir it together with the raisins. Set aside. The rest of the sugar mixture will be used in the bread.
  • In a medium sized bowl, sift together the flour, baking powder, baking soda and salt. Set aside.
  • In a large bowl (or bowl of a standing mixer), beat together the sugar and butter until it's light and fluffy.
  • Add in the egg and mix again, just until combined.
  • Slowly add in the flour mixture, alternating with the milk, and mix just until everything is combined, do not over mix.
  • Fold in the raisins.
  • Spread half of the batter along the bottom of the prepared loaf pan. Sprinkle half of the brown sugar mixture on top of the batter.
  • Spoon the remaining batter on top and spread to the edge. Sprinkle the remaining brown sugar mixture all over the top.
  • Bake for 60 minutes or until a toothpick comes out clean.
  • Cool for 10 minutes before moving the bread to a cooling rack. Cool for about an hour before icing and cutting.

Steps:

  • Preheat oven to 325 degrees and spray an 8x4 loaf pan with baking spray.
  • In a large bowl whisk together the buttermilk, 3/4 cup sugar, vegetable oil and egg until smooth.
  • Sift together flour, baking soda and salt.
  • Add the flour mixture to the wet mixture and whisk together until just combined.
  • Stir in the raisins.
  • In a small bowl stir together the remaining 1/4 cup sugar and 2 teaspoons cinnamon.
  • Pour half the batter into the loaf pan and sprinkle the sugar and cinnamon mixture over it.
  • Add the remaining batter evenly and swirl the internal cinnamon sugar mixture together with a butter knife.

Big Beautiful White Pan Loaf dough, 1 batch
1 1/2 teaspoons cinnamon
3 tablespoons sugar
1 1/2 cups, (7.5 ounces) dark raisins,
2 tablespoons unbleached all-purpose flour

Steps:

  • Mix one batch of the White Pan Loaf dough according to instructions given in recipe.
  • Place the just mixed dough in a clean bowl lightly dusted with flour. Cover the bowl with a towel and allow the dough to rise at room temperature (75 degrees to 77 degrees) for 2 to 2 1/2 hours, until it doubles in volume. (An indentation made by poking your finger deep into the dough should not spring back.)
  • While the dough is rising, place the raisins in a bowl or a plastic container and fill with warm water to come just below the top of the raisins. (If you use too much water, you will rinse away the natural sweetness of the raisins.)
  • Place the dough on a very lightly floured surface. Gently deflate the dough and pat it into a rectangle that is about 3/4 of an inch thick, and about 6 inches by 12 inches in size. The short sides should be the top and bottom edges.
  • Mix the cinnamon and sugar together, and sprinkle it evenly over the dough.
  • Drain the raisins and toss them with the remaining 2 tablespoons flour. Spread the raisins evenly over the dough and gently press them into it.
  • Starting at a short side, roll the dough into a log. Roll the dough tightly, keeping the skin of the dough slightly taut, and tucking in any raisins that fall out, but don't stretch the dough so tight that the skin tears. Seal the seam of the log gently but tightly using the heel of your hand against the surface of the table, or pinch it shut with your fingers.
  • Place the loaf in an oiled or buttered 9 by 5 inch loaf pan, and cover with oiled plastic wrap. Let the dough rise at room temperature for 1 1/2 to 2 1/2 hours, or until the loaf has risen almost 1 inch above the sides of the pans.
  • Meanwhile, preheat the oven to 450 degrees.
  • Place the loaf pan on the center oven rack. Using a plant sprayer, mist the loaf 8 to 10 times, then quickly shut the oven door. Spray the bread again after 2 minutes.
  • Bake for 15 minutes, then reduce the oven temperature to 375 degrees and bake for 20 to 30 minutes longer, until the crust is deep brown and the loaf sounds hollow when tapped on the bottom. The crust may color quickly because of the cinnamon and raisins in the dough; watch carefully and cover the top of the loaf loosely with foil if it is browning too fast. Let cool in the pan for 5 minutes, then remove the bread from the pan and place the loaf on a rack to cool. Let cool completely before slicing, or the bread will fall apart. This bread keeps well for at least 2 days.
