Eggplant Pilaf With Pine Nuts and Cumin image

A great recipe using eggplant and spices. Adapted from Gourmet magazine. A Russian recipe! The ingredients are also typically African/Middle Eastern.

1 small eggplant, cut into 1/2-inch cubes (1/2 lb)
2 tablespoons salt
1/4 cup extra virgin olive oil
2 medium onions, finely chopped
1 cup white basmati rice
1 1/2 cups water
1/4 cup raisins or 1/4 cup dried currant
1/4-1/2 teaspoon cumin (to taste)
3/4 teaspoon cinnamon
1 large tomatoes, peeled seeded, and finely chopped
1/4 cup chopped fresh dill
1/4 cup shelled pine nuts, coarsely chopped (or pistachios)

Steps:

  • Cover the eggplant with water in a bowl and add about 1 1/2 tablespoons salt. Soak 30 minutes. Drain eggplant and squeeze by handfuls to remove excess moisture, then pat dry.
  • Heat 2 tablespoons oil in a 12" nonstick skillet over medium high heat until hot but not smoking, and sauté eggplant, stirring occasionally, until tender and browned, about 7 minutes. Cool eggplant.
  • Cook onions in remaining 2 tablespoons oil in a 3-4 quart heavy saucepan over medium heat, stirring, until softened. Add rice and cook, stirring, 2 minutes. Add 1 1/2 cups water, raisins, remaining 1/2 tablespoon salt, cumin and cinnamon and bring to a boil. Reduce heat to low and cook, covered and undisturbed, until rice is tender, about 12 minutes.
  • Fluff rice with a fork and gently stir in tomato and eggplant. Let stand, covered, 5 minutes. Uncover and cool 10 minutes. Stir in dill, then transfer pilaf to a serving bowl or platter and sprinkle with pine nuts(or pistachios).
  • The pilaf can be made 1 day ahead and chilled, covered. Reheat in the microwave.

Steps:

QUINOA PILAF WITH PINE NUTS

This is hands down my favorite basic way of preparing quinoa. The Incas called quinoa "the mother of all grains" and I think it is such a nutritious and under used grain. Since it contains a balanced set of amino acids it is a complete protein source and best of all, it is gluten free. I use it instead oatmeal in the morning oftentimes (that recipe will be coming up)! This recipe is from Ellie Krieger and it's just a wonderful side dish or leftover snack.

2 cups low sodium chicken broth
1 cup quinoa, rinsed
1/4 cup pine nuts
1 tablespoon olive oil
1/2 large onion, chopped
1/3 cup chopped fresh parsley leaves
salt and pepper

Steps:

  • Rinse quinoa gently.
  • Bring chicken broth and quinoa to a boil in a medium saucepan.
  • Reduce heat to a simmer and cover, cooking for 15 - 20 minutes, until liquid is absorbed and the quinoa is tender.
  • While the quinoa is cooking, toast pine nuts in a dry hot pan until brown and fragrant.
  • Add oil to the same pan used to toast the pine nuts and saute the onions. Cook onions until soft and golden, about 10 minutes.
  • When quinoa is done, fluff with fork and transfer to serving bowl. Add caramelized onions, pine nuts and chopped parsley to the quinoa. Season with salt, pepper and extra virgin olive oil to taste.

6 (5- to 6-inch long) bambino (also called Baby Bell) eggplants (about 6 ounces each)
1/2 cup long-grain or jasmine rice
1/4 cup olive oil
3 tablespoons pine nuts
1 large onion, finely chopped
2 garlic cloves, finely chopped
2 cups chicken stock or reduced-sodium chicken broth
1 (14 1/2-ounce) can diced tomatoes in juice
3/4 pound ground lamb or beef chuck (not lean)
1 teaspoon ground allspice
1/2 lemon
3 tablespoons chopped flat-leaf parsley

Steps:

  • Hollow out each eggplant with a melon-ball cutter, working from bottom end and leaving about 1/3 inch eggplant flesh along interior walls.
  • Rinse rice in a sieve under cold water until water runs clear. Drain well.
  • Heat oil in a 12-inch heavy skillet over medium-high heat until it shimmers. Fry pine nuts, stirring frequently, until golden, about 3 minutes, then transfer with a slotted spoon to a bowl. Sauté onion and garlic, stirring occasionally, until golden, 6 to 8 minutes. Transfer 1/2 cup onion mixture to bowl with pine nuts. Add stock, tomatoes, 3/4 teaspoon salt, and 1/4 teaspoon pepper to skillet and simmer, uncovered, while stuffing eggplant.
  • Add rice, meat, allspice, 1 teaspoon salt, and 1/2 teaspoon pepper to bowl with onion mixture and mix well with your hands.
  • Stuff eggplant with meat mixture, being careful not to pack tightly (rice will expand during cooking). Transfer stuffed eggplants to skillet with tomato sauce and simmer, covered, carefully turning once, until rice is cooked through, 50 minutes to 1 hour (cut 1 in half to test).
  • If sauce is watery, transfer eggplant to a plate and boil sauce, stirring occasionally, until thickened slightly, 3 to 5 minutes, then adjust seasoning if necessary. Return stuffed eggplant to sauce. Squeeze lemon over dish and sprinkle with parsley before serving.

2 minced garlic cloves
1 stalk minced celery
1/4 cup sunflower seeds

Steps:

  • Heat oven to 350°F.

  • While eggplant bakes: Heat olive oil in medium saucepan, saute onion, garlic, celery and sunflower seeds. Saute until onions are soft and transparent.
  • combine remaining ingredients in medium bowl and add onion mixture.
  • Remove eggplant from oven and scoop out a hole from each half. Add insides to rice mixture.
  • Scoop mixture into hole in eggplant halves and serve.

BROILED EGGPLANT SALAD WITH SUMAC CHICKEN AND PINE NUTS



Broiled Eggplant Salad with Sumac Chicken and Pine Nuts image

This dressed eggplant is wonderful as an appetizer or a full meal on its own.

2¼ lb. eggplants, about 4 medium or 2 large
4 Tbsp. fresh lemon juice
4 Tbsp. extra-virgin olive oil
2 large cloves garlic, finely chopped
1 tsp. salt
Pinch of sugar (optional)
2 Tbsp. olive oil
9 oz. (250 g) ground chicken, or chicken breasts/thighs cut into very small chunks
1 tsp. salt
½ tsp. ground cumin
¼ tsp. freshly ground black pepper, or more to taste
1 Tbsp. sumac
2 medium tomatoes, finely chopped
1 green or red chili, finely chopped (optional; omit for non-spicy version)
1 small bunch of parsley, finely chopped
1 small bunch of cilantro, finely chopped
1 small shallot, thinly sliced
4 Tbsp. pine nuts, lightly toasted

Steps:

  • Adjust a rack to 6-8 inches below the broiler element and preheat the broiler to high. Line a baking sheet with aluminum foil.
  • Pierce the eggplants a few times with a fork all over to avoid them exploding in the oven. Place the eggplants on the lined baking sheet and broil, turning occasionally, until charred on all sides and tender on the inside, 30 minutes to 1 hour, depending on the size. The eggplants are ready when they are collapsing and the outside feels crisp and easily breaks when touched. Remove from the oven and close the foil around the eggplants to hold in the steam. This will make the eggplants easy to peel. Allow the eggplants to rest for 15-30 minutes.
  • In a small bowl, mix together the lemon juice, olive oil, garlic, salt, and sugar (if using). Set aside. Open the foil package of eggplants and with your fingers, carefully peel away the skin, trying to keep the eggplants intact as much as possible. Transfer to a sieve set in a large bowl and let sit for 10-15 minutes to allow the liquid to drain.
  • In a non-stick or heavy-bottomed frying pan, heat the olive oil until shimmering but not smoking. Add the chicken, salt, cumin, and pepper and fry, stirring regularly, until the chicken is cooked through and starting to brown around the edges, 6-8 minutes. Add the sumac, give one final toss, and remove from the heat.
  • Arrange the eggplants on serving platter and drizzle with half of the dressing. Arrange the chicken mixture over the eggplants. Top with the tomatoes, chili (if using), parsley, cilantro, and shallot. Drizzle the remaining dressing on top, sprinkle with the pine nuts, and serve.

1 lb ground lean lamb
1 medium yellow onion, peeled and chopped
2 garlic cloves, crushed
4 tablespoons olive oil
salt and pepper, to taste
1/2 cup tomato sauce, canned
1/4 cup red wine
1/2 teaspoon cinnamon
1/2 teaspoon allspice
3 tablespoons pine nuts (you might want to add more for personal taste)
1 large eggplant

Steps:

  • Brown the lamb, onion and garlic in the oil, in a large skillet over medium-high heat. Once the meat is browned, add the salt, pepper, tomato sauce, red wine, cinnamon, allspice and pine nuts. Cook for about 15 minutes while the sauce reduces a little.
  • Cut the eggplant into 1/2 inch slices. Lightly brown them in a separate skillet with just a touch of olive oil. Turn and brown the other sides. Do not overcook, just brown them.
  • Place the eggplant slices on a baking sheet and spread some of the filling on each.
  • Bake in a 375 degree F. oven for about 15-20 minutes, or until it is all hot and the eggplant is tender.
