Steps:
- Place the butter in a small saucepan and bring to a boil over medium-high heat. Boil for 1 minute.
- Set the saucepan aside and let the butter settle, undisturbed. The milk solids will come to the top of the butter and the watery whey will collect on the bottom. Skim off the milk solids with a spoon and pour the drawn butter into a serving bowl or several small ramekins, taking care not include the watery liquid in the bottom of the pan. Serve.

Steps:
- Melt butter in a small saucepan over low heat until butter foams and solids sink to bottom, about 15 minutes. Remove from heat. Let cool.
- Carefully skim foam from top, and discard. Pour clear butter into a bowl, leaving any solids in pan; discard solids. (Drawn butter can be refrigerated for up to 1 month.) Serve warm.
DRAWN BUTTER
Best made a day ahead, this is a great complement to steamed king crab or broiled lobster tails. Any leftover butter can be frozen for future use.

Steps:
- Melt the butter in the top of a double boiler over just-barely simmering water, 5 to 7 minutes. Set the melted butter aside to cool slightly, then skim the foam off the top and discard. Allow the butter to solidify overnight. Drain off any liquid that collects at the bottom. Melt the butter in a microwave-safe glass or ceramic bowl, and pour into individual bowls before serving.

DRAWN BUTTER
Found this treasure in an OLD Maine cookbook. I always asssumed when I heard Seafood was served with 'freshly drawn butter', it was plain melted butter. This is much less rich than butter. Lobster and clams are rich enough! I adore lobster and clams, but when it's dipped in butter, it adds to much richness for my stomach. This I did not have any problems with. No idea how many this serves

FISH AND BREWIS
This is my Favorite Traditional Newfoundland meal. The ingredients may be hard to find unless you have a "Newfie Shop" close by but if you can find them, this is a treat. In the past, the hard bread and salt cod were meant to last the long winters that are present in Newfoundland and also the long time at sea for most fisherman (Newfoundland was once a prosperous fishing province and many people today still rely on the ocean for their livelyhood). You can either mash the potatoes, fish and hard bread together with the scrunchins or you can just serve each seperate either with the Scrunchins or Drawn Butter. Enjoy!!!

- Jiggs Dinner. Jiggs Dinner, the most quintessential of Newfoundland foods, is a one pot meal of salt beef boiled with cabbage, potatoes, carrots, turnip (rutabaga) and sometimes turnip greens.
- Fries w/ Dressing & Gravy. Newfoundland “dressing” is decidedly not “stuffing”. It is a mixture of breadcrumbs, butter, onion and summer savoury that is sprinkled onto roast turkey.
- Cod. Cod Fish Stew at The Sailor’s Galley Restaurant in Bay Bulls Cod is the most historically important of all Newfoundland foods. Salt cod was the backbone of Newfoundland settlement, and continues to be eaten there today.
- Fish ‘n Brewis. Fish ‘n Brewis came about from the need to feed people on long sea voyages with imperishable foods. Brewis (pronounced “brews”) is thought to be a Middle English term for bread soaked in fat.
- Moose. Photo Courtesy of Mi’kmaq Momma Moose are not native to Newfoundland (that would be official provincial animal, caribou) but were introduced in 1878 and, more successfully, in 1904.
- Toutons. Toutons are fried bread dough, traditionally eaten for breakfast with molasses. Alternatively, they can be used to make breakfast sandwiches.
- Bakeapple. It’s not a baked apple, it’s a bakeapple! It is thought to be have evolved from baie qu’appelle which means “what is this berry called?” in some form of archaic French, likely the old Norman/Breton dialects of Western Newfoundland, a.k.a “Newfoundland French” (as opposed to Quebecois or Acadian French).
- Pea Soup. Newfoundland-style Pea Soup is made from yellow split peas and leftover salt beef, with chunks of potatoes, turnips, carrots, and doughboys (dumplings).

- Bakeapple. So I’m in a kitchen in Newfoundland, and the by’s are complimenting the host on her bakeapple tarts. Being quite a fan of apple-related items, I took a bite of one.
- Fish ‘n’ Brewis. This one is simple. Take some really hard inedible bread, soak it in water until it’s sorta soggy, and then throw in some salt cod and fried pork fat tidbits.
- Fries with Dressing and Gravy. So my friends in Newfoundland suggested we go for a “dirty feed”, which, apparently, is when you go out and eat raunchy unhealthy food.
- Pease Pudding. To explain pease pudding, I would have to explain Jiggs Dinner. Okay. So. On the north-east coast of things, descendants of Irish-type-people sometimes eat what is called a “boiled dinner”.
- Cod Tongues. And what would a trip to Newfoundland be without some fried cod tongues? Anyone who knows Newfoundland knows how they love their cod! I saw this dish everywhere I went.
