3 tablespoons paprika
2 tablespoons plus 1 teaspoon salt
2 tablespoons plus 1 teaspoon garlic powder
2 tablespoons cayenne pepper
4 teaspoons onion powder
4 teaspoons dried oregano
4 teaspoons dried thyme
4 teaspoons pepper
10 pounds pork baby back ribs

Steps:

  • In a small bowl, combine the seasonings; rub over ribs. , Prepare grill for indirect heat, using a drip pan. Grill ribs, covered, over indirect medium heat for 1 hour or until meat is tender, turning occasionally.

TEQUILA BBQ SPARE RIBS

Two 4-pound slabs pork spare ribs, St. Louis style-cut
2 tablespoons ground cumin
2 tablespoons granulated garlic
2 tablespoons onion powder
2 tablespoons paprika
2 tablespoons kosher salt
2 teaspoons ground black pepper
1 teaspoon ancho chile powder
Tequila BBQ sauce, for serving, recipe follows
1 small California/New Mexico dried chile
One 6-ounce can tomato paste
1 cup packed light brown sugar
1/2 cup white tequila
1/4 cup lime juice
1 tablespoon minced fresh garlic
1 tablespoon molasses
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 275 degrees F.
  • Begin by trimming the ribs of any excess fat or sinew. Remove the thin membrane from the back side of the ribs and discard. Make the rub by combining the cumin, garlic, onion powder, paprika, salt, pepper and ancho chile powder together in a mixing bowl.
  • Set a few large sheets of foil out (one set for each slab). Place 1 rack on each sheet and divide the dry rub between each slab. Rub the mixture into the ribs on both sides, and then fold the foil over to form a sealed pouch around each rack. At this stage make sure the racks are meat-side down. Place each pouch on a roasting tray and bake in the oven for 2 hours. After 2 hours, open up the foil and peel back so the ribs are exposed. Carefully turn the meat over so the meat side is on top, and then cook for 1 1/2 more hours with the open foil. When done, the ribs will be tender and the meat will have shrunk back from the bones. Finish under the broiler to add more color, 1 to 2 minutes.
  • Serve the ribs with Tequila BBQ Sauce.
  • Begin by placing the dried chile in a bowl with 1/4 cup hot water to rehydrate. In a medium saucepan, add the tomato paste, light brown sugar, tequila, lime juice, garlic and molasses. Stir well and bring to a gentle simmer. Add in the chile and soaking water, season with salt and pepper and simmer until the flavors meld together, 2 to 3 minutes. Process with a blender until smooth and serve with the ribs as a dipping sauce.

Spicy Pork Ribs With Garlic and Tomatoes image

Boy do we love ribs!! This recipe is one of my favorites. Tons of flavor and sure to please everyone! Note: St. Louis-style ribs, cut from the spare rib and trimmed so there is less waste, are particularly meaty and succulent. The racks are pretty large, so you'll need a big roasting pan for this recipe.

2 (3 lb) st. louis-cut pork rib racks, see Note
coarse sea salt or kosher salt
fresh ground black pepper
2 (28 ounce) cans plum tomatoes
1/4 cup fresh basil leaf, plus additional chopped basil for garnish
1/2 lb bacon, diced
10 garlic cloves, coarsely chopped
3 red onions, sliced
2 1/2 cups dry white wine
1/4 cup extra virgin olive oil
1/4 cup sherry wine vinegar
4 teaspoons crushed red pepper flakes

Steps:

  • Preheat oven to 350 degrees.
  • Season ribs with salt and pepper and place in large, flame-proof roasting pan. Pour tomatoes over ribs and scatter basil on top.
  • In skillet over medium-high heat, saute bacon until slightly crisp, about 4 minutes.
  • Add half the garlic and all the onions and cook until browned, about 7 minutes.
  • Pour in wine and let mixture simmer until reduced by half, about 10 minutes.
  • Pour onion mixture over ribs, cover pan tightly with foil, and bake until meat is literally falling off the bone, 2 1/2 to 3 hours. Transfer ribs but not sauce to a plate.
  • Just before serving, in skillet over high heat, warm oil. Add remaining garlic and saute until fragrant and lightly golden, about 2 minutes.
  • Add vinegar and red pepper flakes and bring back to simmer. Pour garlic mixture into pan with sauce from the ribs, place it over high heat, and let it reduce by about a third, about 10 minutes.
  • Add ribs to pan and toss them around to coat them in sauce and reheat them. Serve them hot, garnished with more basil, if desired.

2 teaspoons light brown sugar
2 teaspoons kosher salt
2 teaspoons pure chile powder
2 teaspoons paprika
2 teaspoons dried oregano
2 baby back rib racks, 1 1/2 to 2 pounds each
1 tablespoon extra virgin olive oil
1 tablespoon minced garlic
1/4 cup tequila
1/2 cup tomato sauce
1/4 cup fresh orange juice
2 tablespoons fresh lime juice
2 teaspoons soy sauce

Steps:

  • Make the rub: in a bowl, combine the rub ingredients; mix with your fingertips.
  • Remove the thin membrane from the back of each rack of ribs; let ribs stand at room temperature for 20-30 minutes before grilling.
  • Use about half of the rub to season the ribs on both sides.
  • Grill, meat side down, over Indirect Low heat (grill temperature should be about 300°) for 30 minutes.
  • Meanwhile make the sauce: in a saucepan over med-high heat, warm the oil.
  • Add in the garlic; cook until it begins to brown, about 30 seconds, stirring occasionally.
  • Add in the tequila and stand back (it might flame up).
  • Add in the remaining sauce ingredients and the remaining rub.
  • Stir the mixture, and then simmer until it reaches a thin sauce consistency, 8-10 minutes.
  • After the ribs have cooked for 30 minutes, turn them over.
  • Continue to grill for another 30 minutes, and then start basting with the sauce every 15 minutes for the last 30-60 minutes of grilling.
  • Grill until the meat is very tender and has shrunk back from the ends of the bones.
  • The total cooking time should be 1 ½ to 2 hours.
  • Transfer the ribs to a baking sheet; cover tightly with foil.
  • Let rest for 30 minutes before slicing into individual ribs; serve warm.

  • In a small bowl, combine the brown sugar, salt, mustard, fennel, black pepper, cayenne and paprika. On 2 large rimmed baking sheets, sprinkle the spice mix all over the ribs, pressing and patting it. Cover with foil and refrigerate overnight.
  • Preheat the oven to 250°. Pour off any liquid on the baking sheets, cover the ribs with foil and roast for about 3 hours, until the meat is tender but not falling off the bone. Pour off any liquid on the baking sheets.
  • Meanwhile, in a saucepan, melt the butter. Add the onion, garlic and thyme and cook over moderate heat until the onion is softened, about 5 minutes. Add the ketchup, vinegar, beef broth, hot sauce, Worcestershire sauce and molasses and bring to a boil. Simmer over low heat, stirring occasionally, until thickened, about 30 minutes.
  • Preheat the broiler and position a rack 10 inches from the heat. Brush the ribs liberally with the barbecue sauce and broil for about 10 minutes, turning and brushing occasionally with the sauce, until well-browned and crispy in spots. Transfer the ribs to a work surface and let rest for 5 minutes. Cut in between the bones and mound the ribs on a platter. Pass any extra barbecue sauce on the side.
