CURRIED CRAB WITH COCONUT AND CHILI



Curried Crab with Coconut and Chili image

2 1/4 pounds live crab
1/4 cup coriander seeds
1 1/2 tablespoons cumin seeds
1 tablespoon whole black peppercorns
Sea salt
5 1/2 ounces white wine vinegar
2 ounces desiccated coconut
1 tablespoon finely grated fresh ginger
5 garlic cloves
1 large green chile, chopped
1 white onion, chopped
1 tablespoon canola oil
1 medium ripe tomato, diced
10 fresh curry leaves
1/2 ounce fresh turmeric, peeled and finely grated
1 tablespoon chile powder
9 ounces unsweetened coconut milk

Steps:

  • Place the crab in the freezer for 2 hours or until it stops moving. Remove the legs and crack them with a rolling pin. Remove the top of the shell and clean out the insides with your fingers. Chop the crab and top shells in half.
  • Heat a medium saute pan over medium heat. Add the coriander seeds, cumin seeds and peppercorns and stir constantly until the seeds become toasted and fragrant, 3 to 4 minutes. Cool completely.
  • To make the paste, grind the coriander seeds, cumin seeds and peppercorns with a pinch of salt using a mortar and pestle or a spice grinder. Transfer the spice mixture to a food processor and add the vinegar, coconut, ginger, garlic, chile and onions and blend to form a paste.
  • Heat the oil in a heavy, large, wide pot over low heat. Add the paste and saute until fragrant and some of the juices evaporate, 5 to 10 minutes. Add the tomato, curry leaves, turmeric, chili powder and a pinch of salt and cook until the tomato pieces are tender and melting into the sauce, 5 minutes. Add the crab and 4 1/2 ounces water, increase the heat to medium and bring to a boil. Reduce the heat to low and simmer or until the crab pieces are cooked through, 10 minutes. Mix in the coconut milk and simmer for 2 to 3 minutes to allow the flavors to blend.
  • Divide the crab pieces and sauce among shallow wide soup plates and serve immediately.

Steps:

  • In a bowl, combine the crabmeat, mayonnaise, celery, onion, mustard and seasonings. Spread 1/2 cup crab mixture on the bottom of each roll. Sprinkle with cheese. Spread butter on cut side of roll tops. Broil both halves of sandwiches 4 in. from the heat for 3-4 minutes or until cheese is melted and crab mixture is bubbly.

2 teaspoons curry powder
3/4 cup mayonnaise
1/4 cup sour cream
2 hard-boiled eggs
3 drops fresh lemon juice

Steps:

  • Toss crab and rice together.
  • Add curry powder to mayonnaise and sour cream.
  • Blend well.
  • Stir into crab mixture.
  • Sprinkle chopped eggs with lemon juice, salt and chives.

1 lb fresh cooked crabmeat, picked clean of the shell
2 avocados, diced
1 roasted poblano pepper, chopped
1 roasted red pepper, chopped
3 scallions, chopped
1 tablespoon minced garlic
1 tablespoon olive oil
1/4 bunch fresh cilantro, sprigged and chopped
1 lime, juice of
salt
cayenne pepper

Steps:

  • Combine all ingredients in a bowl, taking care not to break up the crab meat too much. Refrigerate until serving time.
  • If you wanted to make this easier, you could use canned crab meat, roasted red bell pepper from a jar, etc.
  • I usually remove the seeds from any hot pepper I'm using, as that is where the heat really lies, and I don't want it too hot for my kiddos.
  • Cook time is chill time. I had to estimate on prep time because it depends on if you roast your own peppers or not.

2 tablespoons granny smith apples, finely chopped
1 tablespoon onion, finely chopped
1 1/2 teaspoons mild curry powder
1 pinch saffron thread, crumbled
1 teaspoon water
1/2 cup mayonnaise
1 tablespoon finely chopped cilantro
1 tablespoon finely chopped mint
salt & freshly ground black pepper
1 lb lump crabmeat, picked over
4 slices watermelon, half inch thick, rind removed
2 tablespoons fresh lime juice
1 teaspoon fresh lime juice
1 bunch arugula, washed and dried

Steps:

  • In a small saucepan, heat 1 tablespoon of the olive oil until shimmering. Add the apple, onion, curry and saffron and cook over moderate heat until the onion is softened, about 5 minutes. Remove from the heat and stir in the water; let cool.
  • Scrape the onion-curry mixture into a food processor. Add the mayonnaise and process until smooth. Transfer the curried mayonnaise to a medium bowl, add the cilantro and mint. Gently fold the crabmeat into the curried mayonnaise and season with salt and pepper.
  • Cut each slice of watermelon into triangles and transfer to plates. Season the watermelon with salt and pepper and sprinkle with 1 teaspoon lime juice. Mound the crab salad on top of the watermelon triangles.
  • In another bowl, toss the arugula with the remaining 1 tablespoon of lime juice and the remaining 2 tablespoons of olive oil and season with salt and pepper. Place on top of the crabmeat and serve.
