1 lb cooked, diced and drained OR bacon
1 lb cooked, cubed ham
1 medium diced onion
1 diced green bell pepper
1 1/2 cup shredded, or Monterey Jack cheese cheddar cheese
12 eggs
1 cup milk
1 tsp salt
1 tsp more or less to taste pepper

Steps:

  • Place a layer of frozen hash brown potatoes on the bottom of the slow cooker, followed by a layer of bacon then onions, green pepper and cheese.
  • Repeat the layering process two or three more times, ending with a layer of cheese.
  • Beat the eggs, milk and salt & pepper together.
  • Pour over the Crockpot mixture, cover and turn on low. Cook for 4-6 hours.
  • You can make this a day before and just reheat in the morning for a hearty breakfast meal.

1 medium Onion diced
1 medium Green Bell Pepper diced

Steps:

  • Place a layer of frozen potatoes on the bottom of the crock pot, followed by a layer of ham then onions, green pepper and cheese. This is an easy make ahead meal! Our family enjoys waking up to this after Christmas and Easter as a great way to use up some left over ham! This is EGG-CELLENT !!! *** This is not my photo, but one from the internet.

1 pkg (32 ounces) frozen hashbrown potatoes
1 large onion (diced)
1 lb lean ham (cubed about 1-inch)
2 c cheddar cheese (shredded)
12 large eggs (beaten well)
1/2 medium each: green and red bell peppers (diced)
1 1/4 c milk
1/2 tsp salt
1 tsp ground black pepper

Steps:

  • 1. Butter the crock of the inside of your slow cooker. Layer 1/3 of the potatoes, veggetables, ham and cheese in the slow cooker. Repeat to do three layers.
  • 2. Beat together the milk, spices and eggs very well. Pour this mixture over the layered items in the slow cooker. Put the lid on the slow cooker.
  • 3. Cook overnight on low heat (about 8 - 9 hours).
  • 4. *** Serve with toast, french toast, pancakes or waffles and fresh fruits for a lovely breakfast or brunch.
  • 5. *** This can also be made by layering into a large deep casserole pan. Cover, refrigerate overnight. Bake in a 350 degree oven covered for 35 minutes. Uncovered for 15 minutes.

This recipe comes from the Fix it and Forget It Cookbook. As written, it would not have turned out! For starters, 1hour on low did nothing to heat it. Second, it barely made 4 servings, so be warned. Third, you had way more biscuits than actual servings. But the flavor mix had potential, so that's why I'm posting it. I'd recommend playing with ingredient amounts and varied seasonings.

16 ounces whole corn, drained
16 ounces red kidney beans, drained
10 3/4 ounces condensed tomato soup

1 (10 count) package refrigerated biscuits
2 tablespoons margarine, melted
1/4 cup cornmeal

Steps:

  • Combine browned beef, corn, beans, soup, cheese, milk, onion, and chili powder in slow cooker.
  • Cover. Cook on Low 1 hour (Cook actually on High, check now and then).
  • While cooking, preheat oven according to biscuit directions.
  • Dip biscuits in margarine then roll in cormeal.
  • Bake up to 20 minutes, checking frequently, until browned slightly.

I'm always looking for great breakfast recipes and this one is delicious! Recipe is from Kraft. For a shortcut, you can use the ready to serve bacon or make the bacon in advance. I usually make it in the microwave the night before or use leftover bacon; then I omit cooking the bacon in this recipe.

1 lb russet potato, about 3, peeled, cubed
6 slices bacon
1/2 cup green pepper, chopped
1 tomatoes, chopped
3 green onions, sliced
6 eggs

Steps:

  • Place potatoes in large saucepan; cover with water.
  • Bring to boil; continue boiling 5 minutes.
  • Drain well and set aside.
  • Cook bacon in large skillet on medium-high heat until crisp, turning occasionally.
  • Remove bacon from skillet; drain on paper towels.
  • Discard bacon drippings.
  • Add peppers, tomatoes and onions to skillet.
  • Reduce heat to medium; cook and stir 3 minutes.

You can use other meats if you wish, use some leftover ham, or crispy fried bacon. cooked turkey sausage.
