TANGY ROASTED PORK WITH DUCK SAUCE

- Preheat oven to 400 degrees F.
- Coat a large roasting pan with cooking spray.
- Season pork all over with salt and black pepper and place in prepared pan. In a small bowl, whisk together soy sauce, molasses, hot mustard, and garlic powder. Brush soy sauce mixture all over pork. Roast for 30 minutes, or until an instant-read thermometer registers at least 160 degrees F. Remove from oven and let pork rest for 10 minutes. Cut crosswise into 1/4-inch thick slices.;
- While the pork is roasting, in a small saucepan, combine plum preserves, chutney, vinegar, sugar, and ginger. Set pan over medium heat and bring to a simmer for about 10 to 15 minutes. Remove from heat.
- Toss somen noodles with scallions and peanut oil.
- Remove pork from the oven. Serve 2/3 of the pork with all of the plum sauce and somen noodles. Reserve remaining pork, about 12 to 16 thin slices, for paninis.

HOISIN-GLAZED PORK BOWL WITH VEGETABLES
Inspired by Chinese char siu pork, this weeknight recipe uses an easy cooking method that yields a tasty sauce with a subtle sweetness. The tangy hoisin marinade for the pork can do its job in just 24 seconds or 24 hours. It coats the tenderloin as it cooks, leaving behind caramelized bits in the bottom of pan, which then get deglazed to create a dressing that flavors the rice. As for the garnishes, use as many crisp-tender vegetables as you like, and change them up as you please. Sugar snap peas would be good here, as would shredded napa cabbage, or just about anything fresh and crunchy.

- In a medium bowl, combine hoisin, ketchup, honey, ginger, Sriracha, garlic and five-spice powder.
- Season pork with 3/4 teaspoon salt and 1/2 teaspoon pepper, then add to the marinade. Toss to evenly coat, cover, and set aside. You can let the pork marinate, covered and refrigerated for up to 24 hours, or you can cook it right away.
- Heat oven to 375 degrees. Heat oil in a large (12-inch) nonstick, oven-proof skillet over medium-high. Remove pork from marinade, letting excess drip back into the bowl. (Reserve marinade.) Sear pork for 2 to 3 minutes on the first side and about 2 minutes on the other, until nicely browned and caramelized.
- Remove from heat and pour remaining marinade over the pork, turning to coat evenly. Transfer pan to the oven and cook, turning in the sauce occasionally, for 10 to 20 minutes, or until an instant-read thermometer reads 145 degrees. (The smallest piece of pork, from the thin end of the tenderloin will be done first, so begin checking temperature at 10 minutes and remove pieces from the oven as they are done.)
- Meanwhile, prepare the vegetables: Use a peeler to shave the carrots lengthwise into strips. Slice the radishes paper-thin using a mandoline. Thinly slice the scallions on an angle.
- Transfer pork to a plate and set aside to rest. Add rice wine vinegar and 2 tablespoons of water to the skillet and cook over medium-high, stirring constantly until you have a smooth sauce, adding more water if needed. It should be the consistency of heavy cream. Transfer to a small bowl, stirring in any juices that accumulated from the plate with the pork.
- Distribute rice among 4 bowls. Thinly slice the pork and divide among the bowls. Drizzle the sauce over the pork and rice and garnish each bowl with the carrots, radishes, scallions, snow peas and pickled ginger, if using. Serve immediately.
SLOW COOKER (CROCK POT) PORK LOIN ROAST & KRAUT
Simple but tasty slow cooked pork roast recipe. The pork comes out very moist & tender with great flavor. This is a great recipe that you can cook in half the time on high, but mostly I cook it on low when I'm out of the house longer than 6-8 hours. You can also add additional seasonings to fit your tastes, sometimes I add Rosemary or Thyme or Basil or Oregano or Garlic or Onion Powder... etc... This also works well with thick cut pork chops too instead of loin roast.

- Coat bottom of crock pot with olive oil then add the 3 thick slices of onion.
- Place roast on top of the onion slices (onion makes a little shelf for roast so it does not stick to bottom of crock). Season pork as desired, insert garlic cloves randomly into meat then coat entire roast with "Saucy Susan" (if you absolutely cannot find "Saucy Susan", substitute with equal parts peach & apricot jelly).
- Add the can of sauerkraut (undrained) and the broth to crock trying not to wash seasonings & sauce off of roast while adding.
- Cover with lid & cook on high 4-6 hours or on low 8-10 hours.
SUSAN'S PORK ENCHILADAS
I make many versions of enchiladas depending on what is in the fridge. This one I especially liked, so I wrote it down. It's a great way to use up leftover pork! You can spice it up more with additional jalapenos or a dash of hot sauce mixed in with the enchilada sauce. Feel free to adjust the garlic to your taste. You may need to add more oil as you fry the tortillas to keep them from sticking to the pan.

- Saute pork, peppers, onion, and garlic until pork is browned and onions are translucent. Add 1/2 can enchilada sauce to the pork mixture. Cook over medium heat until most of the sauce has evaporated. Remove from heat. Cool a few minutes, so the cilantro does not cook when added. Stir in cilantro until well mixed. Set aside.
- Heat oil in a frying pan and briefly fry on each side corn tortillas, one at a time. (You just want them to be softened, not crisped.) After frying, put them on several layers of paper towels to drain.
- Pour 1/2 can enchilada sauce in the bottom of a 13 x 9 inch glass baking dish (or similar pan.) Divide the pork mixture into the same number of portions as you have tortillas. Do the same with the Monterey Jack cheese. Roll up a portion of pork mixture and Jack cheese into each tortilla and place the roll seam-side down in the pan. Lining up the rolls side by side in the pan. It's OK if the sauce gets smeared on the tortillas and doesn't cover the bottom evenly. Pour the second can of enchilada sauce over the rolls and sprinkle with the cheddar cheese.
- Bake 20-30 minutes at 350F or until bubbly. Top each serving with a dollop of sour cream and a sprig of cilantro.
- You could easily use leftover pork, chopped fine, in place of the ground pork and get the same results.
ROAST PORK LOIN WITH SAUCY SAUCE
There is really no other way to describe the sauce other than SAUCY !!! This is a meal for 2 but you can always double up for a larger roast.

- Add all other ingredients (except the meat) to the onions and simmer together for 15 mins to combine all the flavours.

I got this recipe out of a cookbook that uses 5 ingredients or less. It's the simplest way to make tender, tasty pork chops. I always hated pork chops growing up, only ever eating a dried out, fried, and breaded chop. I refuse to make them this way. These are delicious and the sauce is very good over the rice.

- Add half of the ketchup and Worcestershire sauce in a ziplock bag with the pork chops.
- Set in refridgerator for 15-45 minutes.
- Mix remaining ingredients in bowl.
