CREAMY ITALIAN DRESSING

1/4 cup mayonnaise
2 tablespoons sour cream
2 tablespoons white wine vinegar
2 tablespoons extra-virgin olive oil
1 small clove garlic, minced
1/2 teaspoon dried oregano
Pinch of sugar
Kosher salt and freshly ground pepper
1 tablespoon chopped fresh parsley
1 tablespoon grated parmesan cheese
1 tablespoon grated pecorino romano cheese

Steps:

  • Whisk the mayonnaise, sour cream, vinegar, olive oil, garlic, oregano, sugar, 1/4 teaspoon salt and a few grinds of pepper in a medium bowl. Stir in the parsley, parmesan and pecorino. Season with more salt and pepper. (The dressing will keep, refrigerated, up to 1 week.)

¼ cup sour cream

Steps:

  • Whisk together the oil, vinegar, sour cream, salt, mustard, sugar, parsley, garlic and pepper. Refrigerate at least 6 hours before serving.

  • Mix first four ingredients; add vinegar and water and cook in a double boiler until thickened, stirring constantly.
  • Pour over egg yolk and butter, return to heat and cook a few minutes longer.
  • Cool in refrigerator; fold in sour cream.
