CREAMY ESCAROLE AND WHITE BEAN DIP

Creamy Escarole and White Bean Dip image

Provided by Food Network

Categories     appetizer

Time 25m

Yield 4 to 6 servings

Number Of Ingredients 9

1/4 cup extra-virgin olive oil, plus more for drizzling
3 cloves garlic, very thinly sliced
1 medium head escarole (about 12 ounces), hand-torn into large pieces
1/4 cup dry white wine
1 15-ounce can cannellini beans (do not drain)
Kosher salt
1/2 teaspoon finely chopped fresh rosemary
Fresh lemon juice, to taste
Crackers and/or crudites, for serving

Steps:

  • Heat the olive oil in a large high-sided saute pan over low heat. Add the garlic and cook until just starting to soften, about 1 minute. Increase the heat to medium; add the escarole and cook until just wilted, 3 to 5 minutes. Stir in the white wine, 1/2 cup water, the cannellini beans (with the liquid from the can) and a large pinch of salt. Bring to a strong boil over medium-high heat and cook for 5 minutes, stirring occasionally. Stir in the rosemary and cook until there is only a light coating of liquid at the bottom of the pan, about 5 more minutes. Turn off the heat and let cool at least 15 minutes.
  • Transfer the mixture to a food processor and blend until smooth, stopping to scrape down the sides of the bowl as needed (the mixture should look similar to the texture of spinach dip). Spoon into a medium bowl, cover with plastic wrap and refrigerate until completely chilled, about 2 hours.
  • Before serving, season the dip with lemon juice and more salt to taste. Drizzle with olive oil. Serve with crackers and/or crudites.

CREAMY BUTTER BEAN DIP

Creamy Butter Bean Dip image

A lovely creamy, tasty healthy dip. Use simply as a dip or goes really well on bruschetta or in hot pitta bread with grated carrot. Delicious & healthy.

Provided by scimietta99

Categories     Spreads

Time 10m

Yield 10-12 serving(s)

Number Of Ingredients 8

410 g butter beans, drained
1 garlic clove
10 ml tahini
30 ml Greek yogurt
30 ml fresh lemon juice
30 ml olive oil
5 ml cumin powder
seasoning

Steps:

  • Put all the ingredients into your blender and puree until smooth. The finished result is smooth and creamy and, like this, is ideal as a dip. Once put in the fridge for a couple of hours it becomes a bit 'firmer' and is better for spreading (I also think it tastes better). The butter beans can be substituted for chick peas but I find the texture is creamer when using the butter beans. I always double up on this as it freezes very well with virtually no loss of flavor. Served as a dip it looks nice drizzled with good quality olive oil and sprinkled with cayenne pepper and a little parsley.

CREAMY BLACK BEAN DIP

Creamy Black Bean Dip image

I made this with regular cream cheese and a sharp cheddar, but I'll post it with the reduced-fat ingredients. My personal preference is to add a little more cayenne pepper for heat, but this is also a great mild dip. Recipe from 2007 Taste of Home Annual Recipes courtesy of Ashley Donovan in Glasgow, Kentucky. Thank you Ashley! Cook time excludes chilling time.
