EASY LAYERED TACO DIP WITH GROUND BEEF
This hot layered taco dip with ground beef is a tasteful, rich, meaty, and wholesome dip that is a perfect condiment to go with tortilla chips, nachos, etc. It's a great way to mix up Taco Tuesday! - Preheat oven to 350 degrees
- Brown ground beef over medium heat and drain excess grease
- Add about ½ cup water, two tablespoons of taco seasoning, and salsa.
- Cook until combined
- IN a separate medium bowl, combine refried beans with sour cream and 1 tablespoon taco seasoning
- Spread refried beans and sour cream mixture in bottom of the baking dish
- Next make a ground beef layer by evenly spreading the ground beef on top of the refried beans
- Top with cheddar cheese and bake for 20 minutes, broiling if necessary
- Remove from oven and top with roma tomatoes and green onion

This version of a game-day favorite, taco dip, is super simple to make. Even easier, make the beef-and-bean mixture a day ahead, then just reheat and top.

- Heat the oil in a large skillet over medium-high heat. Add the beef, and cook, stirring occasionally, until completely browned, 8 to 10 minutes. Pour off the excess grease, add the taco seasoning and stir until the beef is well coated. Add the tomato paste, and stir until it darkens to a dull brick red, about 30 seconds. Add 3/4 cup water, bring to a simmer and cook and until the mixture thickens, 2 to 3 minutes. Add the beans, and stir just to warm them through. Remove from the heat, and transfer to an 8-inch square baking dish.
- Top the beef-and-bean mixture with an even layer of sour cream, then a layer of Cheddar. Sprinkle the tomatoes, lettuce and black olives and jalapeno if using on top. Serve with tortilla chips.
TACO GRAVEYARD DIP
This taco dip is truly to die for! It's layered with seasoned ground beef, refried beans and all your favorite toppings. Use a variety of flavored tortillas for an array of colors and an assortment of small cookie cutters to create graveyard shapes and characters.

- Preheat the oven to 375 degrees F and line 2 baking sheets with parchment.
- Heat the oil in a large skillet over medium-high heat. Add the beef, and cook, stirring occasionally, until completely browned, 5 to 7 minutes. Pour off any excess oil. Add about half of the taco seasoning and 1/2 cup water and stir until the beef is well coated. Cook until slightly thickened, 1 to 2 minutes. Transfer to a 9-by-13-inch baking dish and spread out evenly.
- Return the skillet to the heat and add the refried beans. Cook until warmed through, about 5 minutes. Spread evenly over the ground beef mixture. Top the refried beans evenly with the shredded Cheddar.
- Whisk together the cream cheese and sour cream in a medium bowl until smooth and combined. Transfer 2 tablespoons of the mixture to a small piping bag (or small resealable plastic bag) and reserve. Add the remaining taco seasoning to the remaining cream cheese mixture and stir to combine. Spread the cream cheese mixture evenly over the shredded cheese layer. Top with the salsa and spread evenly. Refrigerate while you make the chips.
- Lay one tortilla on a cutting board and trim into a tree with a paring knife. Transfer to one of the prepared baking sheets. Cut tombstones (and other Halloween shapes if you like) out of the remaining tortillas with 2-inch cutters or by hand. Arrange on the prepared baking sheets. Bake, flipping the tortillas halfway through, until crisp and golden brown, about 10 minutes. Let cool.
- Pipe "RIP" on some of the tombstones with the reserved cream cheese mixture and press them into the taco dip. Press the tree and any remaining shapes into the taco dip.
- Cut the lettuce into several pieces, add to a food processor and pulse until finely chopped (you should have about 2 cups total). Spread the lettuce and cilantro around the tortilla chips. Spoon mounds of black olives in front of some of the tombstones. Serve with the remaining chips.

- Microwave ground beef, taco seasoning, and garlic in bowl, stirring occasionally, until beef is no longer pink, about 5 minutes.
- Break up any large pieces of beef with spoon, then drain off fat.
- Drain tomatoes, reserving ¼ cup juice.
- Using potato masher, mash half of beans with reserved tomato juice in large bowl until mostly smooth.
- Stir in beef mixture, remaining beans, tomatoes and 1 ½ c Monterey Jack cheese until well combined.
- 1 ½ -5 quart slow cooker: Transfer mixture to slow cooker, cover, and cook until heated through, 1-2 hours on LOW.

- Cover and continue to cook on LOW until cheese is melted, about 5 minutes.
- Sprinkle dip with scallions and serve; dip can be held on WARM or LOW setting for up to 2 hours.

- Place diced potato in a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 8 to 10 minutes. Drain.
- Heat oil in a large skillet over medium heat. Add cooked potato and brown on all sides for about 3 minutes. Remove from the skillet and set aside.
- Add ground beef to the skillet; cook and stir until browned, crumbly, and no longer pink in the center, 4 to 5 minutes. Stir in bell pepper, onion, and garlic; cook until softened, 3 to 4 minutes. Drain as much fat from the pan as possible.
- Stir in tomato sauce, water, olive brine, oregano, salt, and pepper until well combined. Add olives, raisins, and reserved potatoes; stir well. Reduce heat to low and simmer picadillo for 8 minutes, stirring occasionally.

- Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; season with 1 package taco seasoning mix. Drain and discard grease. Let beef cool completely.

- Brown lean ground beef over medium high heat.
- When cooked, add taco seasoning mix.
- Meanwhile, cream together sour cream and cream cheese.
- Spread cream cheese mixture in the bottom of a deep dish pie plate.
- Layer ground beef mixture over the cream cheese mixture.
- Add the salsa to the top of the ground beef.
- Top with sliced green onions.
- Sprinkle generously with mozzarella cheese.

Who doesn't like some version of a taco, there are so many. This is one of my family's favorites, as long as they get to pick their own toppings.

Steps:
- In a 2 quart sauce pan add ground beef, salt, chili powder, garlic, cumin, paprika, and enough water to cover meat.
- Bring to a boil.
- Simmer for about an hour.
- Add bell pepper and onion. Continue simmer for 20 to 30 minutes. (Until bell pepper and onion are fully cooked).
- Meat can be used at this time or cooled for later depending on your meal schedule. I like to make the meat mixture ahead of time.
- Full Corn Tortilla Shells just about 1/2 way full or desired amount.
- Put into a preheated oven (300) for about 10 minutes or until completed heated through.
- Ready to Serve!
