1/2 pound cherries, halved and pitted
2 tablespoons sugar, plus more to taste
2 tablespoons balsamic vinegar
1 pound peaches, sliced

Steps:

  • In a small saucepan, stir together the cherries, sugar and balsamic vinegar, and place over a medium heat. Bring to a boil and continue to cook for 5 minutes, stirring occasionally.
  • In a medium bowl toss the warm cherries and syrup with the sliced peaches, add more sugar to taste and serve.

6 peaches, halved, pit removed, cut into wedges
1 1/2 pints blueberries
1 to 2 teaspoons orange flower water
2 tablespoons cane sugar, optional
2 cups plain yogurt, optional

Steps:

  • In a large bowl, with a large spoon, gently combine peaches and blueberries. Add the orange flower water and continue to combine, serve cold or pour fruit into a 12 by 8 baking dish. Sprinkle with cane sugar and bake in a preheated 325 degree F oven for 20 minutes, until sugar caramelizes. Remove from oven, top with yogurt, if desired, and enjoy.

3 cups blueberries, about 1 pound (divided)
1 lb peach, sliced (can sub nectarines)
1/2 teaspoon black pepper (optional)

Steps:

  • In a 1 to 1 1/2 quart heavy saucepan, bring 3 Tablespoons sugar with vinegar and 1 cup of the blueberries to a boil while stirring constantly.
  • Boil 1 minute.
  • Remove from heat.
  • Combine remaining 2 cups of blueberries with peach slices in a large bowl.
  • Toss with hot blueberry syrup and black pepper.
  • Add additional sugar, if desired.
  • Let stand 30 minutes, tossing occasionally.

Sweet and juicy grilled peaches are paired with ripe blueberries and a quick homemade balsamic vinaigrette in this easy loaded healthy salad!

Number Of Ingredients 14

2 fresh peaches, cut into thick slices
Canola oil to brush on peaches
7-9 oz bag fresh spinach
1.5 cups cooked quinoa (½ cup dry)
1 avocado, diced
1 container (6 oz.) fresh blueberries
¼ each red onion, thinly sliced
¼ cup crumbled feta cheese
Optional: ½ cup chopped pecans
Optional: white beans, grilled chicken, grilled shrimp
¼ cup extra virgin olive oil
2 Tbsp balsamic vinegar
¼ tsp sea salt
Dash of black pepper

Steps:

  • Heat a grill pan or grill over high heat.
  • Brush peach slices with canola oil and place on grill, turning once, until grill marks form (~1-2 min per side).
  • Remove peaches from heat and place on a separate plate until ready to use.
  • In a large bowl, add spinach, cooked quinoa, avocado, blueberries and red onion. Toss with dressing.
  • Top with feta and grilled peach slices.

4 large apples
2 large pears
1 teaspoon fresh rosemary, finely chopped
2 bay leaves
5 tablespoons fresh lemon juice, divided
1/3 cup balsamic vinegar
1/3 cup brown sugar
3 tablespoons butter

Steps:

  • Preheat oven to 250 degrees.
  • Peel and core apples and pears, cut each into 8 wedges. Place in large bowl and toss with 2 T. lemon juice.
  • Melt butter over medium heat in skillet until it stops foaming and is slightly brown.
  • Add rosemary, bay leaves, remaining 3 T. lemon juice, balsamic vinegar, and brown sugar.
  • Heat to boiling and reduce slightly.
  • Pour over fruit and toss to coat.
  • Pour into roasting pan or onto a cookie sheet WITH SIDES.
  • Bake for 3-8 hours, turning each hour.
  • Fruit should be slightly dried, but not dried to the extent of fruit leather.
  • Store tightly covered in refrigerator for up to one week.
