SPECTACULAR FINGERLING POTATOES
My children absolutely love these tender "mini" potatoes. Fingerling potatoes can be found at the farmers market and specialty grocery stores, though Yukon Gold would work, too.

- Preheat oven to 425°. Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook 10 minutes. Drain. Transfer to a greased 15x10x1-in. baking pan. Combine the remaining ingredients; drizzle over potatoes and toss to coat., Bake, uncovered, 8-10 minutes or until tender, stirring once.

CRISPY FINGERLING POTATOES
Steps:
- Put the potatoes into a large pot and cover them with water. Add a big pinch of salt, then cover, and put over high heat. Bring to a boil, uncover, and cook just until the potatoes start to soften but are not cooked all the way through, about 10 minutes. Drain the potatoes and return them to the warm pot. Shake the potatoes around to roughen up the sides and to let them dry out. Put them into a bowl.
- Preheat the oven to 425 degrees F. Put a baking sheet in the oven to preheat.
- Add the olive oil, grill seasoning, paprika and pepper, to taste, to the potatoes and toss to coat. Spread the potatoes out onto the preheated baking sheet and roast them until they are cooked through and crispy, about 20 to 25 minutes, flipping the potatoes once halfway through the cooking time. Remove the potatoes from the oven to a serving bowl and serve.
INSTANT POT ROASTED FINGERLING POTATOES

Steps:
- On your Instant Pot, push "Saute" to pre-heat your Instant Pot.
- Once your Instant Pot says "Hot" on the screen it's time add your olive oil, garlic, and spices.
- Stir the potatoes and ingredients around until the potatoes are browned on the outside evenly (about 8-10 minutes).
- Take a knife and poke holes into the potatoes. This ensures the potatoes don't explode.
- Add the butter and stir.
- Pour the chicken stock into the Instant Pot and stir.
- Close and lock the Instant Pot lid. Then, select "Pressure Cook" and then set the time to 11 minutes.
- Once done, open the pressure cooker using the Quick Release.
- Remove from Instant Pot. You can dash on some extra salt, pepper and seasoning if desired.
- Serve and Enjoy!

AIR FRYER FINGERLING POTATOES

- Wash the potatoes then pat dry with paper towel.
- Cut fingerlings lengthwise into halves.
- In a bowl toss them with the oil, salt, pepper, lemon juice, minced garlic, and chopped fresh parsley.
- Pre-heat the air fryer at 400 degrees for 2-minutes, once pre-heated, lightly brush the air fryer basket with olive oil and arrange potatoes evenly in the basket - make sure they are not overlapping.
- Cook at 400 degrees for 14 minutes, stopping at the 7 minute mark to remove the basket, shake to flip the potatoes, and arrange again so none are overlapping, then air fry for 7 more minutes.
- Serve potatoes hot and crispy alongside the dip (if using). For the dip just mix all the ingredients together and chill for 10 minutes.
PERFECT FINGERLING POTATOES
This recipe is from Alton Brown's Eat This Rock! You cook the potatoes in heavily salted water and the salt crystallizes on the outside of the potatoes. It seems like a lot of salt but it works. The reviews rave over it! I have slightly adapted it. They are even good cold!

- In a small bowl, do a quick mix of the rosemary, garlic, paprika, cayenne, salt and pepper then set aside.
- In another bowl, whisk together the worcestershire and olive oil.

- Preheat the oven to 425°F.
- Wash the fingerling potatoes well to get rid of any dirt on the outsides.
- Place the potatoes in a large pot, add a generous pinch of salt, and cover with at least 1 inch of water. Bring the pot to a boil on the stove over medium-high heat, and let the potatoes boil for about 15 minutes, until they can easily be pierced with a fork.
- Use a slotted spoon to remove the potatoes to a large plate or cutting board lined with paper towels. Use a large spoon or spatula to gently press down on each potato, smashing them into little patties. Aim for about 1/2 - 3/4-inch - you don't want to smash them too thin or you won't get the fluffy insides.
- Drizzle about 1 tablespoon of olive oil onto a large baking sheet and spread evenly to coat the pan. Place the potatoes in a single layer, giving them some room so they will evenly crisp up. Drizzle with the remaining olive oil, thyme, salt, and pepper.
