My children absolutely love these tender "mini" potatoes. Fingerling potatoes can be found at the farmers market and specialty grocery stores, though Yukon Gold would work, too.

1 pound fingerling potatoes
3 tablespoons grated Parmesan cheese
3 tablespoons minced fresh parsley
2 tablespoons olive oil
1 tablespoon minced fresh rosemary or 1 teaspoon dried rosemary, crushed
1 tablespoon butter, melted
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 425°. Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook 10 minutes. Drain. Transfer to a greased 15x10x1-in. baking pan. Combine the remaining ingredients; drizzle over potatoes and toss to coat., Bake, uncovered, 8-10 minutes or until tender, stirring once.

1 1/2 pounds fingerling potatoes
Kosher salt
1/4 cup olive oil
1 tablespoon grill seasoning
2 teaspoons paprika
Freshly ground black pepper

Steps:

  • Put the potatoes into a large pot and cover them with water. Add a big pinch of salt, then cover, and put over high heat. Bring to a boil, uncover, and cook just until the potatoes start to soften but are not cooked all the way through, about 10 minutes. Drain the potatoes and return them to the warm pot. Shake the potatoes around to roughen up the sides and to let them dry out. Put them into a bowl.
  • Preheat the oven to 425 degrees F. Put a baking sheet in the oven to preheat.
  • Add the olive oil, grill seasoning, paprika and pepper, to taste, to the potatoes and toss to coat. Spread the potatoes out onto the preheated baking sheet and roast them until they are cooked through and crispy, about 20 to 25 minutes, flipping the potatoes once halfway through the cooking time. Remove the potatoes from the oven to a serving bowl and serve.

What You'll Need to Make Instant Pot Roasted Fingerling Potatoes:
About 2 lbs. Fingerling Potatoes (can also use baby potatoes)
3 Tablespoons Olive Oil
1 Cup Chicken Stock
3 Fresh Garlic Cloves, Chopped
1/2 Teaspoon Italian Seasoning
1/2 Teaspoon Rosemary
1/2 Teaspoon Thyme
Salt and Pepper (to taste)
2 Tablespoons Butter (we used the Brummel and Brown Yogurt Butter)

Steps:

  • On your Instant Pot, push "Saute" to pre-heat your Instant Pot.
  • Once your Instant Pot says "Hot" on the screen it's time add your olive oil, garlic, and spices.
  • Stir the potatoes and ingredients around until the potatoes are browned on the outside evenly (about 8-10 minutes).
  • Take a knife and poke holes into the potatoes. This ensures the potatoes don't explode.
  • Add the butter and stir.
  • Pour the chicken stock into the Instant Pot and stir.
  • Close and lock the Instant Pot lid. Then, select "Pressure Cook" and then set the time to 11 minutes.
  • Once done, open the pressure cooker using the Quick Release.
  • Remove from Instant Pot. You can dash on some extra salt, pepper and seasoning if desired.
  • Serve and Enjoy!

500g fingerling potatoes (approximately 12-14 potatoes)
1 tablespoon olive oil
1/4 tsp salt
1/8 tsp pepper
Juice from 1/2 lemon
1 large garlic clove, minced
2 tablespoons finely chopped fresh parsley
1/4 cup mayonnaise
1 clove garlic, minced
1 tablespoon lemon juice
2 tablespoons fresh chopped parsley

Steps:

  • Wash the potatoes then pat dry with paper towel.
  • Cut fingerlings lengthwise into halves.
  • In a bowl toss them with the oil, salt, pepper, lemon juice, minced garlic, and chopped fresh parsley.
  • Pre-heat the air fryer at 400 degrees for 2-minutes, once pre-heated, lightly brush the air fryer basket with olive oil and arrange potatoes evenly in the basket - make sure they are not overlapping.
  • Cook at 400 degrees for 14 minutes, stopping at the 7 minute mark to remove the basket, shake to flip the potatoes, and arrange again so none are overlapping, then air fry for 7 more minutes.
  • Serve potatoes hot and crispy alongside the dip (if using). For the dip just mix all the ingredients together and chill for 10 minutes.

  • Preheat the oven to 375.

  • In another bowl, whisk together the worcestershire and olive oil.

1 1.5 lb bag of fingerling potatoes
3 tbsp olive oil
1 tbsp thyme ((see notes))
salt & pepper, to taste
1 cup plain Greek yogurt
1 clove garlic, minced
1 tbsp fresh dill, roughly chopped
1 tbsp lemon juice
1/2 tsp salt

Steps:

  • Preheat the oven to 425°F.
  • Wash the fingerling potatoes well to get rid of any dirt on the outsides.
  • Place the potatoes in a large pot, add a generous pinch of salt, and cover with at least 1 inch of water. Bring the pot to a boil on the stove over medium-high heat, and let the potatoes boil for about 15 minutes, until they can easily be pierced with a fork.
  • Use a slotted spoon to remove the potatoes to a large plate or cutting board lined with paper towels. Use a large spoon or spatula to gently press down on each potato, smashing them into little patties. Aim for about 1/2 - 3/4-inch - you don't want to smash them too thin or you won't get the fluffy insides.
  • Drizzle about 1 tablespoon of olive oil onto a large baking sheet and spread evenly to coat the pan. Place the potatoes in a single layer, giving them some room so they will evenly crisp up. Drizzle with the remaining olive oil, thyme, salt, and pepper.
