8 ounces fresh green beans (about 2 cups), washed and cut in half
1/4 cup sherry vinegar
2 teaspoons Dijon mustard
1 tablespoon honey
1/2 cup extra-virgin olive oil
One 15-ounce can cannellini beans, rinsed and drained
One 15-ounce can red kidney beans, rinsed and drained
1/4 cup fresh basil leaves, chopped
1/4 cup fresh flat-leaf parsley leaves, chopped
1 shallot, minced
Freshly ground black pepper

Steps:

  • Bring a pot of salted water to a boil. Set up a large bowl of ice water. Add the green beans to the pot and cook until crisp-tender, 2 to 3 minutes. Drain and plunge the green beans into the ice water to stop the cooking. Drain the green beans.
  • Whisk the vinegar, mustard and honey in a large bowl. Whisk in the oil until emulsified. Add the green beans, cannellinis, kidneys, basil, parsley and shallots to the bowl and toss to coat. Sprinkle with salt and pepper and serve.

1/2 pound green beans, trimmed, cut in half crosswise
1/2 pound wax beans, trimmed cut in half crosswise
One 15-ounce can kidney beans, rinsed, and drained
1/2 small red onion, minced, soaked in cold water for 5 minutes and drained
1/4 cup sugar
1/3 cup cider vinegar
1/4 cup vegetable oil
1/2 teaspoon kosher salt plus more to taste
Freshly ground black pepper
1 tablespoon minced flat-leaf parsley

Steps:

  • Bring a pot of salted water to a boil. Set up a large bowl of ice water. Add the fresh beans to the boiling water, and cook until crisp-tender, about 4 to 5 minutes. Drain and plunge the beans into the ice water to stop the cooking and set their color. Drain.
  • In a medium bowl, combine the beans and the onion. In a small saucepan, bring the sugar, vinegar, oil, and salt to a simmer. Pour the liquid over the beans. Marinate the beans at room temperature for 1 hour, tossing several times. Just before serving, season with salt and pepper to taste, add the parsley. Serve.

One 15-ounce can chickpeas
One 15-ounce can black beans
One 15-ounce can butter beans
1 clove garlic
1 teaspoon honey
1 tablespoon Dijon mustard
1 tablespoon white wine vinegar
1/4 cup olive oil
1 teaspoon zaatar
Kosher salt and freshly ground black pepper
Juice of 1 lemon
3 tablespoons fresh mint leaves, chopped
3 tablespoons fresh parsley leaves, chopped
3 tablespoons fresh tarragon, chopped
4 stalks celery, finely diced
1/2 red onion or 1 shallot, small dice

Steps:

  • Drain and rinse all the beans in a colander. Set aside and allow to fully dry.
  • Grate the garlic on a rasp over a large bowl. Whisk in the honey, Dijon, vinegar, olive oil, zaatar, salt, pepper, lemon juice, 1 tablespoon mint, 1 tablespoon parsley and 1 tablespoon tarragon. Add the celery, diced onion and the beans, then 1 more tablespoon of each herb, and toss to coat. Garnish with the remaining tablespoon of each herb. Serve immediately or store in the fridge until ready to serve, for up to 3 days.

NICOISE BEAN SALAD

1 pound green beans, ends trimmed
1 pound yellow wax beans, ends trimmed
12 cloves Roasted Garlic, recipe follows
20 grape or cherry tomatoes, halved
1/4 cup Sun-Dried Tomato and Basil Vinaigrette, recipe follows
1 1/2 teaspoons sea salt
Freshly ground black pepper
2 whole heads garlic
2 tablespoons extra-virgin olive oil
1/2 cup sun-dried tomato halves, coarsely chopped (see note)
1 cup boiling water
1/2 cup basil leaves (packed)
1 garlic clove
2 tablespoons plus 1 teaspoon red wine vinegar or balsamic vinegar
1 cup extra-virgin olive oil
1/2 teaspoon sea salt
Freshly ground black pepper

Steps:

  • Make an ice-water bath.
  • Bring a large pot of salted water to a boil. Add both kinds of beans, reduce the heat to medium, and cook for 3 to 4 minutes, until the beans are just tender. Drain and place in the bowl of ice water for a few minutes.
  • When the beans are cool, drain immediately and place them in a large bowl. Add the garlic, tomatoes, and vinaigrette and toss until mixed. Season with the salt and pepper.
  • Preheat the oven to 400 degrees F.
  • Cut off the top 1/3 of the garlic heads crosswise to expose the cloves. Drizzle each head with 1 tablespoon of the oil and wrap in aluminum foil. Place the garlic on a baking sheet and roast in the oven for about 40 minutes, or until soft. Allow to cool, then squeeze garlic cloves out of their skins.
  • Store the garlic in plastic wrap or covered with olive oil in a glass jar. The roasted garlic will keep for about 2 weeks in the refrigerator.
  • Place the sun-dried tomatoes in a small bowl. Pour the boiling water over the dried tomatoes to soften, 10 to 15 minutes. Remove the tomatoes, reserving the tomato water.
  • In a blender or food processor, combine the tomatoes, basil, garlic, vinegar, and 6 tablespoons of the tomato water or plain water and pulse until smooth. With the motor on low, slowly add the oil and blend until the dressing is well blended. Season with the salt and pepper.

1 (16 ounce) can cut wax beans
1 (15 ounce) can kidney beans
1 small onion, sliced thin
1/2 green pepper, sliced thin
1/2 red pepper, sliced thin
3/4 cup sugar
1/3 cup Crisco cooking oil
salt
2/3 cup cider vinegar

Steps:

  • Rinse kidney beans with warm water, drain.
  • Drain remaining beans and place them in a large bowl.
  • Add kidney beans.
  • Add onion and peppers.
  • Place remaining ingredients in a small saucepan.
  • Heat over low heat until sugar is dissolved.
  • Pour over veggies.
  • Let marinade overnight.
  • Serve with a slotted spoon.
  • This keeps well.

My husband finds this humiliating. It's the same concept here: people will devour this dish, exclaiming how delicious it is, and you won't be able to stop yourself from telling them how little work it was. You really should just smile and accept the compliments: there's something incredibly satisfying about a dish that sings without your even trying. I think the key is the raw garlic and rosemary: they give an unexpected kick to familiar flavors.

1 15oz can of kidney beans rinsed and drained
1 15oz can of garbanzo beans rinsed and drained
2 celery sticks finely chopped
1 red onion finely chopped
2 spring onions finely chopped
1 sprig chopped parsley
2 sprigs chopped rosemary
1 jar Opies cocktail onions
2 cloves of garlic
100ml olive oil
50ml white wine vinegar
1teaspoon English mustard powder
Salt and pepper to taste

Steps:

  • Mix all the ingredients in a large mixing bowl and season to taste
  • Pour vinaigrette over all ingredients
  • Chill for several hours before serving
  • For the Vinaigrette, Crush garlic and add to olive oil and white wine vinegar
  • Add mustard powder and mix well
  • Season to taste

500 g fresh green beans, cut into 2 cm long pieces
500 g fresh yellow wax beans, cut into 2 cm long pieces
salt and pepper, to taste
500 g lima beans (fresh or frozen,thawed)
2 small red onions, slivered
sugar, to taste
1 -2 clove fresh garlic, minced
6 tablespoons fresh lemon juice
125 ml olive oil
1 bunch fresh parsley, finely chopped

Steps:

  • Boil green and yellow beans together in salted water for about 10-12 miutes.
  • Add the lima beans and cook another 2 minutes.
  • Drain and set in a serving bowl.
  • Whisk together salt, pepper, a pinch of sugar, olive oil, onions,garlic, lemon juice, and parsley.
  • Combine dressing and beans and let sit for 10 minutes.
  • Season again with salt& pepper if needed and serve.
