Made a chicken chili recipe, and it was bland. So I took the ingredients and added my own flair. My family loves it when it gets cold out, because they know this will be on the menu. It's very flavorful. Serve with tortilla chips and sliced avocado for something different. Serve with sour cream and cheese.

- Add the chicken breasts to a slow cooker. In a bowl, mix the cumin, coriander, oregano, paprika, red pepper flakes and some salt and pepper, then sprinkle over the chicken. Add the beans, celery, garlic, canned chiles, onions, bell peppers and jalapeno. Pour in the chicken broth, put the lid on and cook on low until the beans are cooked, the vegetables are soft and the flavors are combined, about 7 1/2 hours.
- Mix the milk with the masa and add to the slow cooker. Add the frozen corn straight from the freezer and continue to cook until the sauce has thickened, another 30 minutes.
- Remove the chicken to a board and shred using 2 forks. Return to the slow cooker, then add the lime juice, sprinkle over the Monterey Jack cheese and stir to melt.
- To serve: Ladle the chili into bowls and garnish with a dollop of sour cream, extra cheese and cilantro. Roll up warm corn tortillas and serve on the side of the bowl.

- Soak the beans in water overnight.
- Place drained beans, chicken, salsa verde, and chicken broth into crock-pot.
- Dice the onion and mince the garlic cloves. Place into crock-pot along with 2 teaspoons cumin, 1 teaspoon pepper and a bay leaf. I also like to add a sprig of rosemary when I have it on hand.
- Cook on low 8-10 hours.
- Remove the rosemary sprig and bay leaf.

- Add beans, cream, pepper jack cheese, salsa verde, chili peppers, jalapenos, and cumin to slow cooker, or crock pot, with initial temperature set to high.
- Warm 10 inch skillet on medium heat and add olive oil.
- Cube white onion in small pieces, slice and dice red pepper and garlic, saute all three until tender and translucent. Transfer this combination to crock pot.
- Dice chicken breasts or thighs into 1/2 inch pieces, then saute chicken in skillet
- Add oregano.
- Add cooked sauteed chicken to crock pot.
- Peel and shred about 1.5 sq. inch of fresh ginger, add to crock pot.
- Add salt, and pepper, to taste.
- Stir well and cook covered, from one to several hours, reducing temperature to low or medium, once the mixture is hot.
- If chili is thin, stir in flour to desired consistency.
- Finely chop cilantro and add to crockpot just before serving.
- This is complimented nicely by a dollop of sour cream, and hearty Italian or French bread.
