Made a chicken chili recipe, and it was bland. So I took the ingredients and added my own flair. My family loves it when it gets cold out, because they know this will be on the menu. It's very flavorful. Serve with tortilla chips and sliced avocado for something different. Serve with sour cream and cheese.

1 (16 ounce) jar green salsa (salsa verde)
1 (16 ounce) can diced tomatoes with green chile peppers
2 (15 ounce) cans white beans, drained
1 (14.5 ounce) can chicken broth
1 (14 ounce) can corn, drained
1 onion, chopped
½ teaspoon dried oregano
¼ teaspoon ground cumin
salt and ground black pepper to taste
3 skinless, boneless chicken breasts

Steps:

  • Mix green salsa, diced tomatoes with green chile peppers, white beans, chicken broth, corn, onion, oregano, cumin, salt, and black pepper together in a slow cooker. Lay chicken breasts atop the mixture.
  • Cook on Low until the chicken shreds easily with 2 forks, 6 to 8 hours.
  • Remove chicken to a cutting board and shred completely; return to chili in slow cooker and stir.

1 medium sweet potato (about 10 ounces), peeled and shredded
1 (15-ounce) can low-sodium chicken broth
1/4 cup instant tapioca (recommended: Minute tapioca)
1 to 2 chipotle chiles in adobo sauce with seeds, chopped
2 tablespoons soy sauce
1 tablespoon kosher salt

Steps:

  • Put the chicken in the slow cooker. Add 3 tablespoons of the chili powder and all the rest of the ingredients, except the beer. Stir everything together, cover, and cook on LOW for 6 to 8 hours.
  • Just before serving, stir in the remaining 2 teaspoons of chili powder, the beer, if using, and season with more salt and pepper, to taste, if desired. Divide the chili among warm bowls. Serve with the topping of your choice.

64 oz Great Northern beans ((4-16 oz cans) drained and rinsed)

2 cups shredded Monterey Jack cheese (divided)

Steps:

  • Put all of your ingredients, except for your cheese, in your crock pot and give it a good stir
  • Cover and cook on high for 4-6 hours
  • For the last hour, turn your heat down to low
  • Once your chili is done, stir in 1.5 cups of your cheese and let stand until cheese is completely melted

4 stalks celery, chopped
4 cloves garlic, minced
2 cans green chiles, chopped
2 medium onions, diced

4 cups chicken broth
1 cup whole milk
1/4 cup masa
1 1/2 cups frozen sweet corn
Juice of 1 lime
1/2 cup grated Monterey Jack cheese, plus more for serving

Steps:

  • Add the chicken breasts to a slow cooker. In a bowl, mix the cumin, coriander, oregano, paprika, red pepper flakes and some salt and pepper, then sprinkle over the chicken. Add the beans, celery, garlic, canned chiles, onions, bell peppers and jalapeno. Pour in the chicken broth, put the lid on and cook on low until the beans are cooked, the vegetables are soft and the flavors are combined, about 7 1/2 hours.
  • Mix the milk with the masa and add to the slow cooker. Add the frozen corn straight from the freezer and continue to cook until the sauce has thickened, another 30 minutes.
  • Remove the chicken to a board and shred using 2 forks. Return to the slow cooker, then add the lime juice, sprinkle over the Monterey Jack cheese and stir to melt.
  • To serve: Ladle the chili into bowls and garnish with a dollop of sour cream, extra cheese and cilantro. Roll up warm corn tortillas and serve on the side of the bowl.

1 yellow onion (chopped)
3 garlic cloves (minced)

Steps:

  • Soak the beans in water overnight.
  • Place drained beans, chicken, salsa verde, and chicken broth into crock-pot.
  • Dice the onion and mince the garlic cloves. Place into crock-pot along with 2 teaspoons cumin, 1 teaspoon pepper and a bay leaf. I also like to add a sprig of rosemary when I have it on hand.
  • Cook on low 8-10 hours.
  • Remove the rosemary sprig and bay leaf.
  • Remove the chicken breasts, shred, and return to crock-pot.
  • Mash some of the beans on the side the crock-pot with your ladle or spoon to thicken up the soup to your preference.
  • Serve with your favorite toppings like sour cream, fresh cilantro and tortilla strips.

48 oz jar great northern beans (drained)
16 oz pepper jack cheese (shredded)
2 tablespoons olive oil
1/2 cup white onion
1/2 red bell pepper
3 garlic cloves (+/- depending on affinity or aversion to vampires)
1 cup heavy cream or half & half
6 to 8 oz. salsa verde
2 to 4 oz can chopped green chili peppers
2 to 4 oz. can chopped jalapenos
1 tablespoon ground cumin
1 tablespoon oregano
1 tablespoon kosher salt
1/2 bunch fresh cilantro
fresh ginger root
fresh crushed black peppercorn to taste
1 tablespoon flour

Steps:

  • Add beans, cream, pepper jack cheese, salsa verde, chili peppers, jalapenos, and cumin to slow cooker, or crock pot, with initial temperature set to high.
  • Warm 10 inch skillet on medium heat and add olive oil.
  • Cube white onion in small pieces, slice and dice red pepper and garlic, saute all three until tender and translucent. Transfer this combination to crock pot.
  • Dice chicken breasts or thighs into 1/2 inch pieces, then saute chicken in skillet
  • Add oregano.
  • Add cooked sauteed chicken to crock pot.
  • Peel and shred about 1.5 sq. inch of fresh ginger, add to crock pot.
  • Add salt, and pepper, to taste.
  • Stir well and cook covered, from one to several hours, reducing temperature to low or medium, once the mixture is hot.
  • If chili is thin, stir in flour to desired consistency.
  • Finely chop cilantro and add to crockpot just before serving.

1/8 teaspoon pepper
14 oz. low sodium pinto beans, drained and rinsed
juice of 1 lime
1/3 cup fresh cilantro, chopped

Steps:

  • To a crock add whole chicken breasts, frozen corn, sweet onion, garlic cloves, red pepper, chicken stock, salsa verde, cumin, smoked paprika and black pepper.
  • Using a spoon gently stir to mix everything together.
  • Cook soup on HIGH for 3 hours.
  • Remove chicken from the crock pot. Using two forks shred the chicken and place back in the crock pot along with pinto beans, lime juice and fresh cilantro. Cover and cook on HIGH an additional 30 minutes.
  • Optional: garnish with greek yogurt and fresh cilantro.

Black pepper, to taste
2 15-ounce cans cannellini beans, drained and rinsed
2 4-ounce cans chopped green chiles
2 garlic cloves, minced
2 c. low-sodium chicken broth
1/2 c. heavy cream
2 tbsp. masa harina
1 10-ounce bag frozen corn
Grated Monterey Jack cheese and chopped avocado, for topping
Lime wedges, for serving

Steps:

  • Put the chicken breasts in a 6- to 8-quart slow cooker. Mix the cumin, coriander, oregano, paprika, red pepper flakes, salt and a few grinds of pepper in a small bowl. Sprinkle the spices over the chicken.
  • Add the beans, green chiles, garlic and chicken broth to the slow cooker and stir it all around. Cover and cook on low until the chicken is cooked through and easy to shred, 7 to 8 hours.
  • Remove the chicken to a medium bowl and shred with two forks.
  • Combine the heavy cream and masa harina in a small bowl. Mix until smooth.
  • Return the chicken to the slow cooker along with the masa mixture and corn. Cover and cook until the chili is thickened and the corn is warmed through, about 30 minutes. Ladle the chili into bowls and top with cheese and avocado. Serve with lime wedges.
