4 large granny smith apples or 4 large other tart apples
6 tablespoons butter
1/4 cup sugar
2 cups milk
5 egg yolks
1/4 cup sugar
1 teaspoon vanilla extract
cinnamon

Steps:

  • For the sauce: Scald the milk in a heavy-bottomed saucepan.
  • Blend the yolks and sugar thoroughly in a bowl with a wooden spoon and gradually stir in the hot milk.
  • Return the mixture to the saucepan and stir over low heat until it thickens to the consistency of heavy cream.
  • Do not boil or it will curdle.
  • At once, strain the mixture into a bowl and stir in the vanilla.
  • Place a piece of plastic wrap directly on the surface of the sauce and refrigerate for 30 minutes or until cold.
  • Pare the apples, quarter them, and remove the stems and cores.
  • Halve the quarters to make 32 apple wedges.
  • Melt the butter in a large skillet and when it is foaming, add the apple wedges.
  • Cook over a high heat for half a minute, then turn them over and sprinkle with the sugar.
  • Cook another few minutes or until the sugar begins to caramelize, then remove the pan from the heat.
  • Coat 6 dessert plates with some of the custard sauce and arrange 5 or 6 apple wedges, like the spokes of a wheel, on the sauce.
  • Sprinkle delicately with cinnamon and serve immediately.

To me, this is the purest and most intensely flavored apple pie recipe there is. The interesting thing about this recipe is the way the caramel sauce is poured over the apples and the lattice crust. You know how with a traditional apple pie some of the apple juices will caramelize as it bakes and bubble out of the pie and bake into and onto the flaky crust? That's how this whole pie is.

6 tablespoons unsalted butter
½ cup white sugar
½ cup brown sugar
¼ cup water
¼ teaspoon cinnamon
1 pinch salt
5 apples - peeled, cored and sliced
1 pastry for double-crust pie (see footnote for recipe link)

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Combine butter, white sugar, brown sugar, water, cinnamon, and salt in a saucepan over medium heat. Bring to a boil, remove from heat and set aside.
  • Roll out half the pastry to fit a 9-inch pie plate. Place bottom crust in pie plate; pour in apple slices.
  • Roll out top crust into a 10-inch circle. Cut into 8 (1-inch) wide strips with a sharp paring knife or pastry wheel. Weave the pastry strips, one at a time, into a lattice pattern. Fold the ends of the lattice strips under the edge of the bottom crust and crimp to seal.
  • Pour butter-sugar mixture over top of pie, coating the lattice, and allowing any remaining sauce to drizzle through the crust.
  • Bake in the preheated oven for 15 minutes. Reduce heat to 350 degrees F (175 degrees C), and bake until the crust is golden brown, the caramel on the top crust is set, and the apple filling is bubbling, 35 to 40 more minutes. Allow to cool completely before slicing.

6 large eggs
3 cups whole milk
2 teaspoons vanilla extract

Steps:

  • In a large heavy saucepan, cook and stir 3/4 cup sugar over low heat until sugar is melted and golden. Pour into eight 6-oz. custard cups, tilting to coat bottom of cup; let stand for 10 minutes. , In a large bowl, beat the eggs, milk, vanilla and remaining sugar until blended but not foamy. Pour over caramelized sugar. , Place the cups in two 8-in. square baking pans. Pour very hot water in pans to a depth of 1 in. Bake at 350° until a knife inserted in the center comes out clean, 40-45 minutes. Remove from pans to cool on wire racks. , To unmold, run a knife around rim of cup and invert onto dessert place. Serve warm or chilled.

¼ cup white sugar
1 tablespoon hot water, or as needed
1 cup milk
5 tablespoons white sugar
2 eggs, beaten

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix 1 tablespoon water into 1/4 cup sugar in a heavy saucepan over medium heat until sugar is completely moistened. Bring to a boil, reduce heat to medium-low, and cook until the sugar and water form a golden brown syrup, about 5 minutes. Do not stir. Remove from heat and let boiling subside. Carefully stir 1 tablespoon hot water into caramel syrup.
  • Whisk milk and 5 tablespoons sugar together in a saucepan over low heat; heat just until warmed and sugar has dissolved. Remove from heat and whisk eggs into milk mixture. Pour caramel syrup into an 8x8-inch baking dish. Pour egg-milk mixture over syrup. 6 tablespoons caramel ice cream topping
1/4 cup sugar plus 4 tablespoons sugar, divided

2 cups heavy whipping cream
5 large egg yolks, beaten
1 teaspoon vanilla extract

Steps:

  • Place apples in a microwave-safe dish; cover with water. Cover and microwave on high for 3-4 minutes or until tender. Drain apples and pat dry on paper towel. Arrange apples in the bottoms of six 6-oz. ramekins or custard cups. Top with caramel topping; set aside., In a small saucepan, combine 1/4 cup sugar, 1/4 cup brown sugar and cinnamon; stir in cream. Heat over medium heat until bubbles form around sides of pan. Remove from the heat; stir a small amount of hot mixture into the egg yolks. Return all to the pan, stirring constantly. 375g block dessert pastry (we used Saxby's)
140g golden caster sugar
8 eating apples , peeled, cored and cut into wedges
splash apple brandy (optional)
248ml carton double cream
4 egg yolks, beaten

Steps:

  • Heat oven to 220C/fan 200C/gas 6. Roll the pastry on a lightly floured surface until just thicker than a £1 coin. Use to line a 23cm deep tart tin, allowing the spare pastry to hang over the edges. Line the tart with greaseproof paper and baking beans, then bake for 15 min until golden around the edges. Remove the beans and continue to cook for 5 mins until the base in golden brown. Remove the tart from the oven and leave to cool. Reduce the oven temperature to 160C/ fan 14C/gas 3.
  • Meanwhile, tip the sugar into a large frying pan over a high heat. Cook the sugar until it dissolves, bubbles and caramelises. Carefully tip the apple wedges into the caramel and toss until coated. Splash in the brandy, if using, then cook the apples for 2-3 mins until just starting soften and the caramel has dissolved in the apple juices.
  • Turn off the heat and remove the apples to a bowl. Pour the cream into the pan then, holding a sieve over the pan, strain in any juices from the apples. Gradually whisk the caramel sauce into the beaten yolks. Arrange the apples over the base of the tart, pour over the custard, then bake for 40 mins until the custard is just set. Leave the tart to cool, then use a knife to cut away the spare pastry and neaten the edges.

2 tablespoons butter or 2 tablespoons margarine
1 -2 apple, peeled,cored and cut into 24 crescent shaped pieces
4 eggs
1/3 cup sugar
1 pinch salt
2 cups milk (or for richer custard use half and half)
1 teaspoon vanilla
nutmeg

Steps:

  • Melt butter (or margarine) in a large skillet over medium-high heat. Add apple slices and saute for 1 minute.
  • Reduce heat to medium-low, cover and cook 1 minute longer.
  • Reduce heat to low, uncover and let apples cook until light brown (3-5 minutes). Set aside.
  • Preheat oven to 325-degrees F.
  • Butter 6 custard cups (or butter a 1 1/2 quart casserole dish).
  • In a bowl, whisk eggs until thick. Add sugar and salt and beat well.
  • Blend in milk (or half and half) and vanilla.
  • Pour custard into prepared custard cups.
  • Set custard cups into large shallow baking pan.
  • Add enough boiling water to pan so water comes up halfway up sides of cups.
  • Bake for 1 hour or until a knife inserted in center of custard comes clean. (If using the casserole dish bake for 1 1/2 hours).
  • Remove cups from water and let cool to room temperature.
  • Top each custard with 4 (reserved) overlapping apple slices.
  • Refrigerate until cold or overnight.
  • Sprinkle with nutmeg before serving.

3 ounces frozen kataifi (shredded phyllo), thawed (1 cup packed)
3 tablespoons unsalted butter, melted
1 tablespoon unsalted butter
5 baking apples, such as Pink Lady, peeled, cored, and sliced into 1/2-inch wedges
1/4 cup sugar
3/4 cup sugar
1 cup heavy cream
1 large egg, plus 1 large egg yolk
2 cups whole milk
1/2 cup sugar
Salt
1/2 cup semolina flour

Steps:

  • Make the crust: Preheat oven to 325 degrees. Arrange a 1/2-inch-thick layer of kataifi into the bottom and up and over the sides of a 9-inch pie plate (it will shrink during baking); brush all over with melted butter. Bake until golden, about 25 minutes.
  • Meanwhile, make the caramelized apples: Melt butter in a large high-sided skillet over medium-high heat. Add apple wedges and sugar. Cook, stirring occasionally, until apples are soft and caramelized, about 40 minutes. Transfer apples to a medium bowl.
  • Make the caramel: Add sugar to skillet. Cook over high heat until sugar dissolves and turns medium amber. Remove skillet from heat. Slowly and carefully stir in cream (it will bubble and steam as you add it).
  • Cover bottom of crust with 3/4 cup caramelized apples. Drizzle apples with 2 tablespoons caramel.
  • Make the custard: Whisk to gether egg and yolk in a medium bowl. Bring milk, sugar, and 1/4 teaspoon salt to a simmer in a medium saucepan over medium heat. Gradually add semolina flour, whisking constantly, until mixture starts to bubble, about 30 seconds. Remove from heat, and slowly whisk one third of the semolina mixture into egg mixture. Return entire mixture to saucepan. Cook, whisking constantly, until thick, about 30 seconds.
  • Pour custard over caramelized apples into crust. Let stand until set, about 1 hour. Top with remaining caramelized apples just before serving. Drizzle top of pie with some caramel (reheat if needed). Serve immediately.

  • Prepare your apples: Using a vegetable peeler, remove all of the peel, then stand apples upright and slice down along core, working all the way around to remove big lobes of flesh. Cut lobes lengthwise into 1"-thick slices. Discard peel and cores; set aside slices.
  • Combine 5 Tbsp. butter, remaining ⅓ cup brown sugar, and 3 Tbsp. water in a large heatproof skillet (cast iron is ideal, but you can use any stainless steel skillet that can go in the oven—no plastic handles!). Heat over medium, stirring, until butter is melted and sugar is dissolved. Increase heat to medium-high and bring mixture to a boil. Cook, without stirring but occasionally swirling skillet, until toffee is thickened and bubbles are slightly slower to pop, about 2 minutes.
