1 cup chunky applesauce
3/4 cup firmly packed brown sugar
2/3 cup fat-free milk
2 Tbsp. oil
1-1/2 cups wheat bran flake cereal
1/4 cup chopped walnuts

Steps:

  • Mix flour, baking powder, cinnamon and salt in large bowl. Beat egg in small bowl; stir in applesauce, sugar, milk and oil. Add to flour mixture; stir just until moistened. (Batter will be lumpy.) Stir in cereal and walnuts.
  • Pour into 9x5-inch loaf pan sprayed with cooking spray.
  • Bake at 350°F for 55 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan. Cool completely on wire rack.

1/2 cup sugar
1-1/2 teaspoons ground cinnamon, divided

2 large eggs, room temperature
1-1/4 cups unsweetened applesauce
1/4 cup canola oil
3 tablespoons 2% milk
1/4 cup packed brown sugar

Steps:

  • Preheat oven to 350°. In a large bowl, combine the flours, sugar, 1 teaspoon cinnamon, baking soda, salt, baking powder and nutmeg. In a small bowl, whisk the eggs, applesauce, oil and milk. Stir into dry ingredients just until moistened. , Transfer to a greased 9x5-in. loaf pan. 1/2 cup oil ((vegetable oil, canola oil, melted coconut oil, or melted butter))
3/4 cup granulated sugar
1/4 cup light brown sugar (packed)
2 large eggs
1 cup unsweetened applesauce
1/4 cup Greek yogurt
1 teaspoon vanilla extract
1 cup all-purpose flour
3/4 cup whole wheat flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 Tablespoon ground cinnamon
1 teaspoon ground nutmeg
pinch salt (optional and to taste)

Steps:

  • Preheat the oven to 350 degrees F. Line the bottom of a 9X5-inch loaf pan with parchment paper. Lightly grease the insides of the pan with cooking spray.
  • In a large bowl, whisk together oil, granulated sugar and brown sugar. Add the eggs, whisking until smooth. Add the applesauce, vanilla, and Greek yogurt and mix until well-combined
