8 ounces bacon
Salt
5 cups small broccoli florets
1 cup mayonnaise
1 tablespoon cider vinegar
1/3 cup chopped onion
1/4 cup sugar
3/4 cup raisins
1/2 cup sunflower kernels

Steps:

  • Cut the bacon into small pieces and cook over medium heat just until crisp; drain on paper towels.
  • Bring a large saucepan of salted water to a boil. Add the broccoli and blanch until bright green and slightly softened, about 3 minutes. Drain well, run under cold water to stop the cooking, and drain again.
  • In a mixing bowl, combine the mayonnaise, vinegar, onion, sugar and raisins. Add the broccoli and toss the coat with the dressing. Refrigerate for 1 hour.
  • Just before servings, fold in the sunflower kernels and the bacon pieces. Serve immediately.

Loaded with salami, scallion and broccoli, this pasta salad gets a hit of spice from a quick red pepper and garlic oil dressing.

1/3 cup olive oil
3 cloves garlic, thinly sliced
Pinch of crushed red pepper flakes
1 tablespoon fresh lemon juice
Kosher salt and freshly ground black pepper
2 cups bite-sized broccoli florets
8 ounces dried radiatore
4 ounces thickly sliced salami, cut into thin strips
1/4 cup thinly sliced scallions

Steps:

  • Heat 1/3 cup of the oil in a medium skillet over medium heat. Add the garlic and red pepper flakes and cook, stirring, until the garlic is golden, about 3 minutes. Transfer to a large bowl and cool to room temperature. Stir in the lemon juice and season with 1/2 teaspoon salt and a few grinds of pepper.
  • Meanwhile, bring a large pot of salted water to a boil.
  • Cook the broccoli in the boiling water until crisp-tender, about 3 minutes. Transfer the broccoli to a colander with a slotted spoon and run under cold water to stop the cooking process. Add to the bowl with the garlic oil.
  • Add the pasta to the boiling water and cook according to the package directions. Drain and rinse under cold water to cool; add to the bowl.
  • Add the salami and scallions to the bowl and toss to combine. Season with salt and pepper. The pasta salad is best if served right away.

3 cups fresh or frozen broccoli florets
3/4 cup dried sweetened cranberries
1/2 small sweet onion, sliced into rings
1 small jicama, peeled and shredded (about 3 cups)
1/2 cup lemon yogurt
1/2 cup mayonnaise
1 tablespoon white vinegar

Steps:

  • Cook the broccoli with a small amount of water in a steamer or in the microwave until crisp-tender, about 5 minutes.
  • Rinse in cold water to cool and drain.
  • Meanwhile, place cranberries in a small bowl; add boiling water to cover.
  • Let stand 1 minute.
  • Drain.
  • In a medium bowl, combine the broccoli, cranberries, onion and jicama.
  • In another bowl, combine yogurt, mayonnaise and vinegar.
  • Mix well.
  • Add to broccoli mixture and toss to coat.
  • Cover and refrigerate for 20 minutes or until chilled.

75g ground almonds
1 tsp garam masala
1 head broccoli , stalk removed, cut into quarters, then halved again to make 8 wedges
1 egg , beaten
1 red onion , peeled and finely sliced
1 lemon , juiced
75g natural yogurt
250g mixed grain pouch, heated following pack instructions
½ bag rocket
½ small pack mint , leaves picked

Steps:

  • Heat oven to 200C/180C fan/gas 6. Mix the ground almonds and garam masala together with some seasoning. Stir the broccoli pieces with the egg to coat, then in the almond mix. Tip onto a lined baking tray and put into the oven to roast for 15 mins.
  • Mix the onion with half the lemon juice and a splash of water, then set aside to lightly pickle. Mix the remaining lemon juice with the yogurt, season and set aside.
  • In a large mixing bowl, mix the cooked mixed grains with the rocket and most of the red onion. Drizzle in half the dressing, toss, then tip onto a serving plate and top with the crispy broccoli. Drizzle with the remaining dressing, mint leaves and a final scattering of red onion slices.

8 large eggs
1½ lb. broccoli (about 3 small heads), cut into florets
2 Tbsp. extra-virgin olive oil
2 tsp. Diamond Crystal or 1 tsp. Morton kosher salt, divided, plus more
1 tsp. freshly ground black pepper, divided, plus more
2 pickles, finely chopped
2 scallions, thinly sliced
½ cup mayonnaise
1 Tbsp. chopped dill
2 tsp. Dijon mustard
1-2 Tbsp. chili crisp (such as Fly by Jing, Lao Gan Ma, or homemade)
1 Tbsp. toasted sesame seeds
Country-style bread, sourdough, or flatbread (for serving)

Steps:

  • Bring a medium pot of water to a boil. Carefully lower eggs into water with a slotted spoon and cook 8 minutes for medium-cooked or 9 minutes for hard-cooked. Transfer eggs with slotted spoon to a large bowl of ice water and let cool.
  • Prepare a grill for high heat. (Or, heat a grill pan over high.) Place broccoli in a large bowl, drizzle with oil, and sprinkle 1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt and ½ tsp. freshly ground black pepper over; toss to coat. Grill, undisturbed, until grill marks appear, about 2 minutes. Turn and cook on opposite side until charred in spots and broccoli is just tender, about 2 minutes.
  • Peel eggs and coarsely chop; transfer to a medium bowl. Add pickles, scallions, mayonnaise, dill, mustard, 1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt, and ½ tsp. freshly ground black pepper and mix well. Taste and season with more salt and pepper if needed.
  • To serve, spoon egg salad on a platter and arrange broccoli on top. Drizzle with chili crisp as desired, then sprinkle with sesame seeds. Serve with bread.
