This easy recipe for Cowboy Caviar is fun, fresh, colorful, and endlessly adaptable. It makes a great dip, salad, side dish, or even a topping for grilled meats. Always a potluck favorite!

1/2 cup olive oil
1/4 cup granulated sugar (or to taste (see note 1))
1/4 cup white wine vinegar ((see note 2))
1 teaspoon chili powder
Salt
1 pound Roma tomatoes (seeded and diced)
1 (15 ounce) can black-eyed peas (drained and rinsed)
1 (15 ounce) can black beans (drained and rinsed)
1 (11 ounce) can sweet corn (drained (see note 3))
1 red onion (diced)
1 green bell pepper (diced)
1 red bell pepper (diced)
1 cup fresh cilantro (or fresh parsley, chopped, from 1 bunch)

Steps:

  • To make the dressing, in a small bowl whisk together the olive oil, sugar, white wine vinegar, chili powder, and salt to taste (I like 1 teaspoon).
  • In a large bowl, add tomatoes, black-eyed peas, black beans, corn, red onion, bell peppers, and cilantro. Drizzle with the dressing and stir to combine. Cover and chill until serving time.

This healthy and hearty appetizer is always a hit at gatherings. It's the perfect blend of beans, veggies, avocado, and TexMex spices. Plus, it's super easy to modify based on what ingredients you have on hand - just blend as many of the ingredients in as you have (the avocado is a must!). Tastes best if made the night before so that the flavors have time to blend. If you prefer to use canned beans and veggies, just use one can each of the corn and beans, and make sure to drain well before mixing. It also works great with frozen veggies too (like the Trader Joe's Soycatash blend!). If there's any left the next day, it's delicious over scrambled eggs. Enjoy!

2 avocados, diced
1 cup corn kernel
1 cup shelled edamame
1 cup black beans
1 cup kidney bean
1 large tomatoes, diced
1 red bell pepper, diced
1 onion, diced
1 tablespoon agave nectar or 1 tablespoon honey
3 tablespoons olive oil
1/4 cup vinegar (balsamic or red wine work well)
1 tablespoon cumin
1 tablespoon garlic powder (or chopped fresh garlic!)
1 tablespoon chili powder
1 -2 teaspoon black pepper
1 dash salt
1 -2 teaspoon hot sauce (to taste)

Steps:

  • Mix all of the ingredients together.
  • Serve with tortilla chips.

3 16-oz cans black-eyed peas, drained and rinsed of all juice
1 small jar chopped pimentos, juice included
1 bunch scallions, thinly sliced, green part only
1 tablespoon fresh oregano
1 tablespoon Tabasco sauce
1 tablespoon Worchestershire sauce
1 teaspoon black pepper
1/2 bunch parsley, chopped
3 canned or fresh jalapeño chiles, chopped
1 firm, ripe, chopped tomato
2 cups vinaigrette
1 green bell pepper, finely chopped
3 cloves fresh garlic, pressed or minced

Steps:

  • In a large bowl, stir all ingredients very well. Refrigerate for at least 4-6 hours, preferably overnight, in a sealed or covered container. Remember the longer it sits, the better it gets!
  • Serve with old-fashioned saltine crackers or with corn tortilla chips.

1 (15.5 ounce) can black-eyed peas, drained
1 (14.5 ounce) can diced tomatoes, drained
2 cups frozen corn kernels, thawed
½ medium onion, chopped
¼ green bell pepper, finely chopped
½ cup chopped pickled jalapeno peppers
½ teaspoon garlic salt
1 cup Italian salad dressing
¾ cup chopped cilantro

Steps:

  • Mix beans, peas, tomatoes, corn, onion, bell pepper, and jalapeno peppers in a large bowl. Season with garlic salt. Add dressing and cilantro; toss to coat. Refrigerate for 20 minutes or until ready to serve.

WILD MUSHROOM CAVIAR

Have no fear - there's really nothing fishy about this recipe. I got it from my Russian Culture teacher after a food-sharing day. It's a wonderful and intriguing appetizer, great with small squares of dark bread. The small amount of garlic remains raw to give it a subtle bite. I substitute the mayo for a store-bought vegan version, but any creamy mayo will work for a more traditional recipe.

Number Of Ingredients 8

1 1/2 lbs portabella mushrooms or 1 1/2 lbs cremini mushrooms
4 tablespoons light olive oil
1 medium onion, chopped
3 garlic cloves
3 tablespoons mayonnaise
2 teaspoons fresh lemon juice
2 tablespoons chopped fresh dill (optional)
salt & pepper

Steps:

  • Wipe mushrooms clean.
  • Seperate stems from caps and coarsely chop both parts.
  • Heat 3 tbsp of the oil in a large skillet over medium heat. When hot, add mushrooms and cook, stirring, until they begin to release their liquid.
  • Turn up the heat to medium-high and continue to cook and stir until the mushrooms reabsorb their liquid and begin to brown, about 10 minutes. Remove mushrooms from the pan and set aside.
  • Heat the remaining 1 tbsp oil in the same skillet. Saute the onion until just browned on the edges, then turn heat down to medium until onions are deep golden brown, about 10 minutes.
  • Combine the mushrooms, onions, and garlic in a food processor until minced but not pureed.
  • In a large bowl combine the mushroom mixture, mayo, lemon juice, dill (if using), salt, and pepper. Mix well.
  • Cover and let stand at room temperature for 1 hour to let flavors mingle.
