1 pkg. (8 oz.) PHILADELPHIA Cream Cheese
1 cup BREAKSTONE'S or KNUDSEN Sour Cream
1 env. (0.7 oz.) GOOD SEASONS Italian Dressing Mix
5 green onions
1/3 cup KRAFT Finely Shredded Sharp Cheddar Cheese
round buttery crackers

Steps:

  • Place cream cheese, sour cream and dressing mix in food processor; set aside. Finely chop enough of the onions to measure 1 tsp.; reserve for garnish. Coarsely chop remaining onions. Add to food processor; process until well blended. Transfer to medium serving bowl; stir in cheese. Sprinkle with reserved onions. Cover.
  • Refrigerate several hours or until chilled.
  • Serve with the crackers.

3 oz sour cream

PREHEAT OVEN 375°F AND GREASE CASSEROLE DISH

  • 1. Get all your ingredients together to make it easy on yourself...and "maybe" you won't leave anything out.
  • 2. ooop's, see there I almost forgot one of my "main ingredients" anyway...here's the Sour Cream.
  • 3. Place your cubed cream cheese in a microwave safe bowl and nuke until just soft...in 30 second intervals.
  • 4. Add into the soft cream cheese: the diced onions, shredded cheddar & mozzarella. Also the sour cream and mayo. Just add everyone into the pot!!!!
  • 5. Fold together well, making sure all ingredients are incorporated. Smooth level into a greased casserole dish, and then place the casserole dish in your preheated oven.
  • 6. Bake for about 30 to 35 minutes, (I baked it 35), until it is bubbly and browned on top.
  • 7. When finished baking, take out of the oven and plate to serve with tortilla chips, corn chips, potato chips OR your favorite crackers.
  • 8. You are really going to enjoy the flavors in this dip...especially if you love onions & cheeses like we do =;D. BTW...next time I am thinking of using a bag of the 4-Cheese Mexican Blend of cheeses (instead of the cheddar) along with all the rest of these ingredients. CinStraw

French onion soup meets tangy sour cream in this homemade version of America's favorite chip dip. According to American culinary legend, an unknown Los Angeles chef devised onion dip back in the fifties by mixing Lipton soup mix with sour cream. Maybe, maybe not. What we know is that the folks at Lipton's picked up the ball and ran with it to the point that more of their dehydrated onion soup mix was going into the dip bowl than the soup bowl. I have nothing against using manufactured mixes, but look, after the zombie apocalypse strikes, and the megamart shelves are stripped bare...what do we do then? Those of us with this recipe in our go-bags will survive to dip another day. Food for thought people, food for thought. This dip is even better when made a day ahead. Just make sure that you cover it well with plastic wrap because fats (like sour cream) take in flavors and aromas hanging around the refrigerator like crazy old grandmas collect leftover gift wrapping.This recipe first appeared in Season 6 of Good Eats.

4 large yellow onions, peeled ((about 3 1/2 pounds))
1/4 teaspoon plus a pinch baking soda
1 tablespoon kosher salt
1 tablespoon dark brown sugar
1/4 cup olive oil
Sherry vinegar, for deglazing
1 1/2 cups sour cream
3/4 cup mayonnaise
1/4 teaspoon garlic powder
1/4 teaspoon freshly ground white pepper

Steps:

  • Using a mandoline or sharp knife, thinly slice the onions and place in a large pot. Sprinkle with the baking soda, salt, and dark brown sugar, and gently toss with tongs. Cover the pot and let the onions rest for 10 minutes.
  • After 10 minutes, uncover the pot, and place over high heat. Drizzle in the olive oil and cook, stirring often, until the onions are reduced by 75 percent and are a light gold color. Reduce heat to medium and continue cooking for approximately 15 minutes, stirring often.
  • Deglaze the pan with a few shakes of sherry vinegar and water. Reduce heat to low and continue stirring, scraping all the brown bits off the bottom of the pot. The onions should be dark golden brown and reduced to about 1 1/2 cups in volume. Remove from heat and let cool.
  • Once cool, put 1/2 cup of the caramelized onions in a medium mixing bowl. Add the sour cream, mayonnaise, garlic powder, and white pepper, and stir to combine.
  • Cover tightly with plastic wrap and refrigerate for at least 1 hour before serving. Overnight would be even better.

1 garlic clove, minced
1/4 cup mayonnaise (Best Foods, Hellmann's, or Vegenaise)
1/4 cup plain yogurt or 1/4 cup sour cream
1/2 cup grated sharp cheddar cheese
Tabasco sauce, to taste
1/8 teaspoon curry powder, to taste (optional, but oh so good!)
1/3 cup grated parmesan cheese
1/8 teaspoon dried ancho chile powder or 1/8 teaspoon sweet paprika
1 tablespoon chopped green onion, for garnish

Steps:

  • Preheat oven to 350 degrees F.
  • In a bowl, mix together the onions, garlic, mayonnaise, yogurt or sour cream, cheddar, and Tabasco (and curry powder, if using).
  • Spread into a lightly pan sprayed small-ish baking dish.
  • Top with Parmesan and sprinkle with paprika to taste. (Ground ancho chile powder can be substituted for the paprika, for a little more kick. I prefer the ancho.).
  • Bake in preheated 350 degree F oven for 25 to 30 minutes. Garnish with chopped green onion (scallion).
  • Serve hot or warm with crackers, bread, or raw veggie dippers.
  • Makes about 6 servings. I usually make a double batch! :).

My mom, Irma, passed away 2 years ago, and this was one of my favorite "treats" that she made. She never liked sour cream dips, but she loved cream cheese. She found/made up this recipe before I was born. Christmas, Easter etc., a family party just wasn't a party without this dip and lots of potato chips! When I brought my boyfriend(now husband) to the first family party, he wasn't too impressed with the dip, as he was used to the saltier, stronger tasting sour cream onion soup mix dip. But now he loves it! He uses it on everything when I make it! He likes it on potato chips, of course, but also on hamburgers, hotdogs, bagels, crackers and even veggies. It has a smooth, creamy texture that enhances other foods instead of overpowering them. One of my sisters uses the basic recipe and then adds a can of drained baby shrimp-if you like shrimp, you'll love that. Other family members add garlic or other spices. I'm submitting the basic recipe that Mom used, with my addition of Bon Appetit, as that is my favorite way to do it. I hope you enjoy this as much as our family does! P.S. you can use low/no fat or Neufchatel cream cheese for fewer calories, and it still tastes good.

1/4-1/2 cup evaporated milk (you can use regular milk too)
10 -15 green onions

1 (6 ounce) can baby shrimp, drained (optional)
onion powder (optional) or salt (optional)

Steps:

  • Put cream cheese in mixer bowl to soften.
  • Clean and remove roots, then slice green onions thinly. Use all the white tips, most of the light green parts, and slice two or three using the dark green tops for some color. It should be 1/4-1/2 c of onion bits, to your taste. Set aside.
  • Start beating cream cheese with mixer, adding milk slowly, until the mixture is smooth and creamy. You may need more or less milk to get the consistency you want.
  • Add Bon Appetit using more or less, to your taste and/or any other spices or herbs you want to use.
  • Add green onions and mix until they're evenly distributed. Taste and add more seasoning or more milk, as needed.
  • If you add shrimp, do it last, so they don't get too broken up.
  • Chill for 1-2 hrs or overnight to let the flavors blend-that never happens at our house, lol, but it does taste better the next day if you can wait!
  • In a pinch, I have used regular onions, chopped fine. I have even used dehydrated onion flakes, soaked in the milk. This is a very versatile and forgiving recipe. Have fun with it!

  • Remove the cover, and increase the heat slightly. Continue to cook for another 10 minutes, stirring occasionally to make sure the onions are not sticking. Sprinkle the sugar overtop and cook for an additional 10 to 15 minutes, stirring more frequently now, until the onions have turned a nice deep brown. Pour in the vinegar, turn off the heat, and scrape the bottom of the pan with a wooden spoon or spatula to remove any browned bits. Take pan off the heat and transfer onions to a large bowl to cool.
  • This mixture should yield about 1 heaping cup of onions. When the onions have cooled, stir 1/2 cup of them into the sour cream. Taste. Season with salt and pepper to taste. Fold in scallions or chives. Add the lemon juice. Taste and adjust seasoning with more salt, pepper, lemon juice or more caramelized onions if desired. Save any remaining caramelized onions to add to omelets or pasta or more sour cream-and-onion dip.
